Soft & Moist Basic Sponge Cake Recipe 原味海绵蛋糕


A super-soft, light, and spongy moist sponge cake recipe. This cake is not overly sweet, tastes good on its own, and also can be used as a base for fresh cream frosting. This was my test bake using the Ninja Foodi multi-cooker Bake/Roast function. I used a smaller cake pan because I wanted a small but tall cake to make a Mother's Day theme cake. 

This was my first time making a Mother's Day theme cake.

Ingredients:

40g Cooking Oil/ Coconut Oil 菜油或椰子油 40克

50g Cake Flour 低筋面粉 50克

Pinch of Salt 盐 少许

50g Fresh Milk 牛奶 50克

3 Egg Yolk 蛋黄 3粒

3 Egg White 蛋白 3粒

1 Whole Egg 全蛋 1粒

1/4 tsp Lemon Juice or 1/8 tsp Cream Of Tartar 柠檬汁 1/4小匙 或 1/8小匙塔塔粉

55g Castor Sugar 细砂糖 55克

Method:

1. Heat oil in a saucepan, when temperature reaches 80'C, remove from heat. Sift in flour and salt, mix well.
油加热至80度,熄火。加入已过筛的面粉和盐,拌均。

2. Add in milk, mix well.
加入牛奶,拌均。

3. Add in egg yolk and whole egg, mix well.
加入蛋黄和全蛋,拌均。

4. In a mixing bowl, beat egg white and lemon juice/ cream of tartar until foamy, beat in sugar gradually, beat until stiff and glossy.
把蛋白加入柠檬汁或塔塔粉,打至松发,慢慢加入糖,打至硬性发泡。


5. Fold the meringue into the yolk mixture in 3 batches. 
分次把蛋白加入蛋黄糊,用刮刀搅拌均匀。不能过度搅拌。


6. Pour the batter into a 6" baking pan. Spread the batter evenly. Gently tap 2-3 times on the worktop.  
倒入6寸烤盘。把烤盘轻轻在桌面敲2-3次。

Note: Place a damp cloth below the cake pan (optional). 
Use a bigger cake pan if you like a smooth cake surface/top.

7. Preheat Ninja Foodi Bake/ Roast mode 150'C 3mins. The Ninja Foodi that I'm using is a combination of a pressure cooker and air fryer in one appliance. Besides pressure cooking and air frying, there are other functions such as steam, slow cook, sear/ saute, bake/ roast, grill, dehydrate, sous vide, yoghurt, and keep warm. If you do not have an oven at home, you can consider getting this multi-function cooker that bakes as well as the oven. I've attached the details and links below for easy reference.

8. Bake in the Ninja Foodi 130'C 60mins. When it's ready, remove the cake from Ninja Foodi, gently tap 1-2 times on the worktop. Invert to cool completely. Un-mould the cake, slice and enjoy!
