Pear & Fritillaria Soup 川贝雪梨汤【润肺清热、止咳化痰】


This Pear and Fritillaria Drink helps to soothe and nourish the lungs, relieve heat cough (with phlegm) / prolonged cough and reduce body heat. In traditional Chinese medicine, Fritillaria aka Chuan Bei Mu is known for its remarkable efficacy to eliminate and reduce the production of phlegm and mucus by moistening the lungs. 

雪梨味甘性寒,含苹果酸、柠檬酸、维生素B1、B2.C、胡萝卜素等,具生津润燥、清热化痰之功效。有润肺清燥、止咳化痰、养血生肌的作用。因此对急性气管炎和上呼吸道感染的患者出现的咽喉干、痒、痛、音哑、痰稠、便秘等均有良效。

川贝是中药-味苦、甘,食用的时候可以不吃。川贝入肺、心经,有化痰止咳,清热散结的作用。川贝不仅具有良好的止咳化痰功效,而且能养肺阴、润肺而清肺热,是治疗久咳痰喘的良药。

Ingredients:

8g Fritillaria aka Chuan Bei Mu 川贝/  川贝母
(wash and soak in water for 10 minutes. Discard water, lightly pounded)


2 Dried Fig


2 Pear


6 Seedless Red Date


Rock Sugar, add to taste


1L Hot Water

Method:

1. Place all ingredients (except rock sugar) into Song Cho Claypot Rice Cooker. Cover with double lids set <SOUP> mode, 2 hours. 




2. Add rock sugar after 1 hour of cooking. When the cooker beep, serve warm or chilled.

Chrysanthemum & Pear Nourishing Sweet Soup 菊花雪梨滋润清热糖水


A refreshing and nourishing sweet soup that helps to relieve dry throat, sore throat and reduce body heat. It also helps to soothe and nourish the lungs. 


功效: 清热泻火,平肝明目

雪梨味甘性寒,有生津润燥,清热化痰润肺的功效。菊花散风清热。两者配合,对咽喉干,痒,痛,音哑等均有疗效。

Ingredients:
材料

130g Rock Sugar 冰糖 130克

1.8 Litre Water 水 1.8 公升

2 Chinese Pear 雪梨 2粒

25g Chrysanthemum 菊花 25克

15g Wolfberries 枸杞 15克

Method: 步骤

1. Add chrysanthemum and water in a pot, bring to boil. Turn off heat and let it sit for 5 minutes. 
菊花和水煮滚,熄火,焖5分钟。





2. Meanwhile, peel and core the pears, cut into chunks.
雪梨去皮核,切块。





3. Add pears, rock sugar and wolfberries into chrysanthemum water. Bring to boil, reduce heat and simmer for 25 minutes. Serve warm or chilled.

Pandan Lemongrass Drink 班兰香茅茶


Pandan Lemongrass Drink is made using both the stalks of the lemongrass plant and the leaves of the pandan plant. This drink can improve a number of health conditions and help increase the level of wellness for almost everyone.

This drink is good for digestion, helps to regulate high blood pressure, boosts metabolism, heals colds and flu, and helps the body's system function better overall. 


功效: 
香茅气味芬芳而且有杀菌抗病毒的作用,从古至今受到医家的推崇,其有杀菌、调整血液循环的作用。经常饮用香茅茶,可以帮助改善贫血、调和肠胃、调节油脂分泌和降低血脂、缓解神经衰弱等。平日饮用,有效预防疾病,增强免疫力,抗感染和改善消化功能。而班兰叶有消暑,清凉去火,安神及舒筋活络的功效。这班兰香茅茶好喝又养生。

Ingredients: 材料

8 stalks Lemongrass 香茅 8枝

2 Pandan Leaves 班兰叶 2片

1.5 litre Water 水 1.5公升

Honey Rock Sugar, add to taste 石蜂糖 适量

Method: 步骤

1. Discard the outer layer of the lemongrass, cut off both ends. Pound the lemongrass with the back of a knife. Cut into 2 inches long.
香茅去外皮,前后两端切掉。拍扁,切段(大概两寸长)。

2. Wash pandan leaves and tie them into knots.
班兰叶洗净,打结。

3. In a pot, add water and lemongrass. Bring to a boil.
把香茅和水加入锅里,煮滚。




4. Cover with a lid (leave some gap at the side), lower to medium heat and simmer for 25 minutes.
盖上,旁边留空隙。转中火煮25分钟。


5. Add in pandan leaves and honey rock sugar, continue to simmer for 10 minutes. Turn off the heat and strain the drink. Serve warm or chilled.

Pear & Chrysanthemum Soup [Soup Maker Recipe] 雪梨菊花茶 -清热,化痰,泻火



Pear & Chrysanthemum Soup 雪梨菊花茶 - A simple home remedy that helps to relieve dry throat, sore throat and reduce body heat. It also helps to soothe and nourish the lungs. Can serve chilled as a refreshing drink. Recipe credit to my mom. :)



Song Cho Soup Maker

I received a Song Cho Soup Maker few weeks back and I have decided to try out this recipe using the STEW function. Well, cooking this soup using Song Cho Soup Maker is easy. 

Besides making western soup, there is a STEW function that is ideal to stew meat dishes and cooking soup/ dessert that does not need to be blended or pureed. It takes only 40 minutes to complete the cooking and the best thing is, I don't need to check the status of my soup. The soup maker will do all the cooking and when the cooking is over, the soup maker will alert me with a loud 'beep' music. Totally love it! :)




功效: 清热泻火,平肝明目

雪梨味甘性寒,有生津润燥,清热化痰润肺的功效。菊花散风清热。两者配合,对咽喉干,痒,痛,音哑等均有疗效。




Ingredients:
材料

100g Rock Sugar 冰糖 100克

1.2 Litre Water 水 1.2 公升

2 Chinese Pear 雪梨 2粒

25g Chrysanthemum 菊花 25克

12g Wolfberries 枸杞 12克

Method: 步骤

1. Prepare the syrup: In a saucepan, heat up rock sugar and water until the sugar is fully dissolve. Leave it to cool.
准备糖水:冰糖加入水小火煮至融化。待凉备用。




2. Meanwhile, peel and core the pears, cut into chunks.
雪梨去皮核,切块。




3. Add pears, chrysanthemum and wolfberries into Song Cho soup maker, pour in the syrup until it reaches 1500ml. 
将雪梨,菊花和枸杞放入松厨浓汤机,再加入糖水至1500毫升。





4. Cover with the lid. Press MENU, select STEW and press START. The soup will be ready in 40 minutes. The soup maker will alert you with the 'beep' sound when it is ready.

2 Ingredients Lemongrass Drink - helps to reduce body heat/ fever, fight flu and colds ~ Pressure Cooker Recipe


Lemongrass is widely use as a culinary herb in Asian Cuisine. It is commonly used in cooking savoury dishes, dessert and as a remedy to reduce body heat/ fever/ fight flu and colds.

I use lemongrass in many of my daily cooking and brewing drinks to cool down body heats.   One of our regular drink is the Refreshing Honey Lemon + Lemongrass Drink , that I usually cook once a week for my family.


The 2 ingredients recipe that I'm sharing here is actually a simplified version, cooked in a pressure cooker. This is a quick and easy-to-prepare remedy that I made for my son when he's having fever.

2 Ingredients Lemongrass Drink


Ingredients:


12 stalks Lemongrass 
(washed, peeled and discard the outer layer, pound/ smashed with the back of a knife and cut)

Honey Rock Sugar, add to taste

Hot Water

Method: if using conventional pot, click here to read the method.

1. Place lemongrass in the WMF Perfect Pro pressure cooker (I use 3L pot).

2. Add hot water to 1/3 (refer pic 1). 

3. Close with the cover and set the knob to 1. 



4. Use medium heat until the cooking indicator rises to the first orange ring.



5. Reduce heat to low and let it cook for 7 minutes. 

6. When the cooking is over, turn off heat. Turn the knob to 'unlock/lock', do not open the cover. Wait until the orange ring go back down. When there's no more pressure, open the cover,  add honey rock sugar to taste. Repeat step 3 to step 5, cook for 2 minutes. And, it's ready!

7. Discard the lemongrass, serve warm or chilled. It taste better when it's chilled.

Pear & Snow Fungus Sweet Soup ~Pressure Cooker Recipe 简易版~霜雪糖水 - 润燥滋阴, 养颜, 清心润肺



I love dessert especially this kind of nourishing dessert that is good for skin. However I hardly cook this because the cooking time is about 4 hours simmering in a slow cooker.

Seriously, it's quite time consuming and my problem is ... the slow cooker takes up so much space of my worktop for that half day of cooking. You will get what I mean if only you have a small kitchen with limited worktop space ;) 




It's been a long time I heard about pressure cooker can shorten cooking time but I doubt it will taste good. Until I get my WMF Perfect Pro pressure cooker, I tried, tasted and to my surprise, YES, it taste as good as the 3-4 hours slow cooked dessert. Just 15 minutes cooking time, I AM IMPRESSED! 

  


Ingredients: 



3 Asian Pear (peeled and cut into big chunks)

30g Snow Fungus, about 135g after soaked

8 Seedless Red Dates

16g Chinese Almond 南杏 (apricot kernel)

2 Dried Figs (US)

1 Litre Hot Water




Some rock sugar (add to taste)

Method:

2. Close with the cover and set the knob to 1. 



3. Use medium heat until the cooking indicator rises to the first orange ring.



4. Reduce heat to low and let it cook for 15 minutes. 

5. When the cooking is over, turn off heat. Wait till the indicator (orange ring) go down or until there's no more pressure, turn the knob to unlock. Add rock sugar. You can close the cover and let the remaining heat to dissolve the sugar or just bring to boil until the sugar dissolve.

The Best Heat Cough Remedy - Pear & Honey Dates Sweet Soup 蜜枣雪梨水 - 清热除痰, 润燥止咳,适合身体燥热, 喉干口渴, 咳嗽时痰多/ 痰黄



Hmm... let me simplified the Chinese explanation on the title. This is the remedy for:

~ cough with thick and yellow phlegm


~ Dry Throat ( When I had sore throat, I feel better after drinking this soup. It soothe my throat.)


~ Reduce body heat


~ Prevent/ helps to soothe cough. 


However, do not drink this for 'cold cough'. This remedy only works for 'heat cough'. If you are not sure what cough you've got, visit a doctor ;)


Well, all the above are based on my personal experience. No scientific proof. I had been taking care of my boy since day 1 he was born, so I know what is good for him. Every individual is different, do your own judgement or consult a doctor if you have cough. 


When my boy was younger, he didn't like this drink. Probably it's the taste of the honey dates. But now he's growing up and understand that when he cough, he needs to drink this to stop the cough. He never reject this drink anymore.

Ingredients:

6 Honey Dates (or 8 honey dates if omit figs) 
六粒蜜枣(如果没放无花果,就用八粒)

3 US Figs 三粒无花果

3 - 4 Asian Pears 三至四粒雪梨(似乎大小,自己衡量)

Handful of Chinese Almond (Nan Bei Xing) 少许南北杏仁

1.5 Litre Water 热水

Chrysanthemum, HoneySuckle & Wolfberry Drink - Reduce body heat/ fever, Anti-inflammatory 金银花菊花枸杞茶 - 能解毒明目,疏风清热,增强免疫力



This is another easy method to prepare cooling drink taught by my mom. I didn't know about  the usage of honeysuckle until my mom visited me in Singapore few years back. She cooked this for me. 

This is a very 'cooling' drink that I used as a remedy to reduce body heat when my boy fever or when I sense that he is about to fall sick...You may be curious about how I know he is about to fall sick? Hahaha.... certified doctor may need a thermometer to tell if the child is sick but as a SAHM, by looking at his face, I know :) 

For regular cooling drink, I omit the honeysuckle. Just chrysanthemum flower, wolfberry and rock sugar/ honey sugar is good enough. 

Bear in mind, do not add too much honeysuckle as this ingredient is very 'cooling' and the drink would turn out bitter if added too much in it. I just found out that the chinese tonic shop in Singapore - ZTP 正中平 is selling the pre-packed chrysanthemum and honeysuckle. But seriously, this is so easy to prepare that I don't see the NEED to get a pre-packed one. ;)


Ingredients: (Yield 2-3 servings)

1 Cup Chrysanthemum flower 菊花
(get the yellow one for boiling, not the white one or flower bud for tea.)

About 1 tbsp Honey Suckle 金银花

2 tbsp Wolfberry 枸杞



1/2 pc Licorice root 甘草 , use 1 pc if you like the taste of it. 1/2 pc is about 1 inch

Honey Rock Sugar to taste 石蜂糖(or rock sugar)

1 Honey Dates (optional, I only add this when my boy cough)

3.5 Cup Water (room temperature)



Method:

1. If using honey dates, add 1.5 cup of water and bring to boil. Simmer for 20 minutes. 

2. Add all ingredients in a saucepan/ pot (except sugar). Bring to boil.





3. Reduce heat, simmer for 5 minutes. Add sugar to taste. Simmer for 3-5 minutes. Strain and serve warm or chilled.
