A Simple Red Velvet Birthday Cake With Natural Colour 天然色素~ 红丝绒蛋糕



Every year, I ask my boy what birthday cake he'd like, and this little tradition has become one of my favourite parts of celebrating his special day. This year, he requested a red velvet cake. 

Instead of using the usual artificial red food colouring, I wanted to make a more natural version by using beetroot powder. While the cake didn't achieve the bright, vibrant red that we're all familiar with, it turned out with a lovely natural hue. Sometimes, nature gives us softer colours, but that also makes it beautifully unique. The taste and texture, however, were exactly what I had hoped for. The cake was soft, moist and tender, paired with a light cream cheese frosting that complemented it perfectly without being overly sweet.

Most importantly, my boy loved it, and that's all that mattered. Seeing him enjoy a cake made with love made every bit of effort worthwhile. Happy 17th Birthday, Louis! ❤️ Wishing you a year filled with good health, happiness, exciting adventures and beautiful memories. 210g All Purpose Flour 

2 tbsp Beetroot Powder

3 tsp Natural Cocoa Powder (not Dutch-processed)

1 tsp Baking Powder

1/2 tsp Baking Soda

1/4 tsp Salt

115g Butter, softened

180g Castor Sugar

2 Large Eggs

1 tbsp Pure Vanilla Extract

185g Buttermilk

1 tsp Vinegar

Method:

1. Preheat the oven to 180°C. 

2. Sift together the flour, beetroot powder, cocoa powder, baking powder, baking soda and salt.



3. In a mixing bowl, beat the softened butter and sugar on medium-high speed until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract. Reduce the mixer speed to low. Add one-third of the dry ingredients, followed by half of the buttermilk mixed with the vinegar. Repeat the process, finishing with the remaining dry ingredients. Mix only until just combined to ensure a soft, tender crumb.

4. Line the bottoms of two 6-inch round cake pans with parchment paper. Cute & Auspicious Horse-Shaped German Cookies 可爱小马造型德国酥饼【年饼系列】


 
German Butter Cookies for Chinese New Year ~ Light, buttery, melt-in-your-mouth and not overly sweet. The last time I made them was years ago, in the Year of the Sheep, when I shaped them into little sheep just for fun 🐑


This year, instead of sheep, I shaped them into adorable little horses for Chinese New Year (it's the Year of the Horse 2026). And not just any horses… Each one is holding an auspicious character: 发 (prosperity), 福 (blessings), 旺 (thriving), 财 (wealth)✨






Four little horses, carrying all the good luck and good vibes into the new year. Still the same old-school German cookie texture - crumbly, buttery and light, but now extra festive and meaningful.

Crispy Seaweed Popiah Crackers 紫菜脆片


Once you start… it’s really hard to stop! These crispy seaweed popiah crackers are one of those dangerously addictive CNY snacks, light, airy and shatteringly crisp. Made with just a few simple ingredients, they fry up beautifully golden and are perfect for nibbling during Chinese New Year or gifting in jars. 



Ingredients:

1 small Egg (or ½ large egg)

1 tsp Oyster Sauce

A pinch of Salt

Spring Roll Wrappers / Popiah Skin

Seaweed Sheets

Oil, for deep frying

Method:

1. 
Beat the egg with oyster sauce and a pinch of salt until well combined. 

2. Brush a thin layer of egg onto one popiah skin, and place a sheet of seaweed on top. Lightly brush egg over the seaweed, then cover with another popiah skin.

I'm using Song Cho stainless steel wok for deep-drying. It's a multi-ply stainless steel wok without chemical coating, it's safe to use for any cooking.

3. Press gently so the layers stick together. Cut into desired shapes using scissors or a knife.

Matcha Christmas Tree Bread With Red Bean Filling 圣诞树造型红豆抹茶面包

Every year, I love baking something a little extra festive to welcome the Christmas season, and this year I made Matcha Christmas Tree Bread. Soft, fluffy and shaped like a cute Christmas tree, it’s filled generously with smooth red bean paste that pairs beautifully with the subtle flavour of matcha. The classic matcha and red bean pairing that never fails!

The moment you make these little bread trees, you can already feel the festive mood settling in. Sprinkle of flour and some cranberries on top to mimic winter snow and ornaments. It turns each piece into an edible Christmas decoration!

300g Bread Flour

1 tsp Matcha/ Green Tea Powder 

225g Milk


50g Castor Sugar


15g Milk Powder 


1 tsp Yeast


5g Salt 


30g Butter


~~~~~~~~~


Red Bean Paste (I used homemade red bean paste, made by my dad💕)


Dried Cranberries

Method:


1. Mix all ingredients (except butter), knead to form a dough. Gradually knead in the butter and continue kneading until the dough passes the windowpane test.



2. Proof for 1 hour or double in size. Transfer the dough onto the worktop, shape and let it proof for 1 hour or double in size.

Shaping: Roll it out, spread an even layer of red bean paste, then fold. Shape it into a Christmas tree, a few slits and twists go a long way! Add cranberries as little "ornaments". Dust with flour for that snowy Christmas touch.

3. Bake in a preheated oven 170'C for 15 minutes. Draw the facial expression with an edible marker.

[Halloween Themed Food Art] Pumpkin-Shaped Bun, Jack-O'-Lantern Sunny Side Up Egg Healthy Breakfast Plate 万圣节早餐盘系列 - 南瓜造型面包+煎蛋


I planned to prep a simple breakfast but I couldn’t resist the Halloween theme since I have pumpkin-shaped bread at home. 



I turned my sunny side up egg into a cheerful jack-o'-lantern and added two tiny bats crafted from black olives to complete the spooky scene🎃🦇

Peanut Butter Cream Cake 奶油花生酱夹心蛋糕


Yummy old-school cakes layered with peanut butter cream, decorated with ghostly toppings, a perfect treat for Halloween. Boo! 👻


Ingredients:

35g Salted Butter


50g Cake Flour 


4 Eggs


50g Peanut Butter 


3tbsp Milk


50g Castor Sugar


1/4 tsp Lemon Juice or Cream Of Tartar 


Frosting Cream:


200g Whipping Cream


50g Peanut Butter


Optional for deco: Peanut Butter and whipped cream

Method:

1.  
Mix peanut butter + 1 egg + milk until well combined, continue with cooked dough method. Click here for cooked dough method. 

2. Bake in a preheated oven 160’c 50mins.


3. Prepare the frosting cream: Beat 150g whipping cream + 50g peanut butter until well combined, whisk in 50g whipped cream.



4. When the cake is completely cooled, slice it into half. Spread some peanut butter frosting cream and peanut butter on the cake, place another layer of the cake on top. Smiley Boba Milk Tea Birthday Cake [Gula Melaka Earl Grey Cake] 黑糖珍珠奶茶生日蛋糕


I made this delightful Boba Milk Tea Cake for my son’s 16th birthday, and he absolutely loved it! I could see the joy on his face when he saw it.


The same smile on his face when I made bubble tea for him back in year 2020.
Rolling the boba/ tapioca pearls and made everything from scratch was fun!

The cake features a soft, fluffy sponge that is not only moist but also infused with aromatic Gula Melaka (palm sugar) and Earl Grey tea.

To make it visually appealing, I topped it with luscious brown sugar boba pearls and Earl Grey whipped cream, giving it the look of a giant cup of milk tea. 




To add an extra touch of fun, I decorated it with a cute smiley face! It was the perfect treat to celebrate this special milestone!

90g Gula Melaka/ Palm Sugar + Earl Grey infused Milk 


75g Cake Flour


Meringue:


5 Egg Whites


1 tsp Lemon Juice


40g Castor Sugar
