Cute Bunny Milk Pudding | Rabbit Panna Cotta 萌兔牛奶布丁



I really love these adorable, jiggly, and yummy bunny milk puddings. The bottom layer is Milo pudding topped with biscuit crumbs. If you love pudding desserts then you're going to love this. Do try it out and enjoy your bunnies before they hop away! 






Made this Jade Rabbit on the Moon creme brulee on Mid-Autumn Festival, using the same bunny milk pudding recipe. I'll share the Creme Brulee recipe in another post, stay tuned!

Ingredients: 
材料:

30g Water 水 30克

2 tsp Gelatin Powder 吉利丁粉 2小匙

160g Whipping Cream 动物性鲜奶油 160克

140g Fresh Milk 鲜奶 140克

45g Sugar 细砂糖 45克

Method: 步骤:

1. Add water to a bowl, and add the gelatin powder, set aside for 10 minutes.
把水倒进碗里,撒上吉利丁粉,待10分钟。




2. Heat up the remaining ingredients in a saucepan until sugar is dissolved (do not boil). 
把剩下的材料倒进锅里,开小火煮至糖溶化。不要煮沸。

3. Turn off heat, and stir in (1) until gelatin is fully dissolved.
熄火,倒入(1)搅拌至吉利丁溶化。

Note: Mix some charcoal powder and pink food colouring to make the bunny eyes and ears, and let it set before step 4. 
备注:取出少量加少许粉红色素和可可粉兔子耳朵和眼睛造型。放冰箱凝固后再加入原色。

4. Pour into pudding mold and keep in the refrigerator once cooled. Let it chill overnight, unmold and enjoy! 
倒入布丁模具里,待凉后放进冰箱,凝固后即可享用。

Easy 3-ingredients Milo Pudding 美禄布丁/巧克力奶布丁【简单做法, 只需三种材料】



That's one mistake that I often make is showing my kid the freebies with product purchases. A few months back, we bought 4 big packs of 3-in-1 Milo just to get the collectible trucks for the boy. Well, we seldom drink Milo at home, what to do with so much Milo?

Dessert is the answer! I made Milo ice cream and puddings. Many of my readers asked me how to make the Milo pudding, it's actually quite easy, here's the recipe and method. 

Ingredients:

4 tsp Gelatin Powder

60g Water

6 pkts Milo

600g Hot Water

Method:

1. Combine gelatin and water, set aside for 10 minutes. Dissolve the gelatin powder using double boil method. 


2. Mix Milo powder and hot water, stir in gelatin liquid. Pour the mixture into pudding cups, refrigerate overnight, serve chilled.

Easy Kids Friendly Tiramisu - Alcohol-free & Decaffeinated 最简单的提拉米苏-无酒精,无咖啡因



Expensive cake! I called this...even homemade one is not cheap because the main ingredient is pricey - Mascarpone Cheese.



I customised my Tiramisu using decaffeinated coffee and of course I omitted the alcohol. No Rum, No Espresso.. just addictive + yummy! 


This was my first attempt, made this with my 6yo son :) 

Dust with Milo powder. Trying to dust different colour tones, but not so successful >.<



This was my 2nd attempt.
Inner layer dust with Milo powder, outer layer (top) dust with cocoa powder.



hmm... I name this 'Dirty Penguin' lol... I'm really not a pro dusting a cake!
But I like this combination. Inner Milo layer which is sweeter in taste, then topped with cocoa powder.
It's just perfect!  


Ingredients & Method: (yield a 5.5" cake)



(A)

2 tsp Instant Coffee (I used Decaf coffee) 即溶咖啡 2小匙(我用无咖啡因的)

50g Hot Boiling Water 滚水 50克

90g Cold Milk 冷鲜奶 90克


(B)

250g Mascarpone Cheese (softened to room temperature) 马仕卡邦乳酪 250克

2 tsp Vanilla Extract 香草精 2小匙


(C)

150g Whipping Cream 鲜奶油 150克

4 tbsp Icing Sugar 糖粉 4大匙



(D)

8pcs Ladyfingers (sponge biscuit) 手指饼干 8 条

Milo Powder/ Cocoa Powder of your preference 美碌或可可粉适量

Method:


1. Chill the mixing bowl and whisk in the freezer.

把打蛋器冷藏。

2. Prepare (A) - Mix coffee powder and hot water until coffee powder fully dissolved. Add in cold milk. Keep it chill in the fridge.

将咖啡粉和滚水搅拌均匀。加冷奶,放进冰箱。

3. Prepare (B) - In a bowl, use a spoon, mix Mascarpone Cheese, vanilla extract and 50g (A) until smooth and creamy. Cover with cling wrap, keep it chill in the fridge.

用汤匙,把奶酪,香草精和50克的咖啡搅拌均匀。放进冰箱。


4. Remove whisking utensil from the freezer. Whip up (C). 

用冷却了的打蛋器,把(C) 打发。

5. Fold together cheese mixture and (C) until smooth.

将奶酪组合和 (C) 轻轻搅拌均匀。


6. To assemble 

- Apply one thin layer of cheese mixture at the bottom. 

先铺一层奶酪在底。

- Dip the ladyfingers in the remaining coffee. Do not soak it more than 1 second. Just dip, flip and lift! ;) 

把手指饼干沾一层咖啡(用剩余的咖啡),排列一层。切记-别把饼干弄得太湿。


- Layer the ladyfingers on the cheese mixture. Top with another layer of cheese mixture.

再铺上一层奶酪。

- Dust a layer of Milo powder/ cocoa powder. 

撒上一层美碌或可可粉(用美碌小朋友比较爱吃)。




- Repeat the same steps. Then, smooth the top layer with a spatula.

重复以上步骤。把上层铺平。





7. Dust the top layer with Milo/ cocoa powder as desired. Cover and let it chill in the fridge.

Dingoozat Mystery Cake (aka Milo Sponge Cake) 神秘蛋糕 -美禄海绵蛋糕

Baked into cupcakes. Yield 12 servings.
Temperature: 160'C for 20 minutes.

Ingredients & Method:




(A)*

2 tbsp Milo powder

30g Fresh Milk 

*Can be replaced with 3 tbsp Milo powder + 30g water

1. Pour milk in a bowl, use the double boil method, warm the milk. Add Milo powder and stir until the Milo powder is fully dissolved. Set aside to cool.








(B)

3 Egg White

50g Castor Sugar

1/4 tsp Lemon Juice

3 Egg Yolk

65g Cake Flour/ Hong Kong Flour

Pinch of Salt

20g Oil


2. In a stand mixer, beat egg white until bubbling. Add lemon juice, continue to beat until foamy. Add sugar gradually and continue to beat until stiff peak. 





3. Add yolks gradually and continue to beat in low speed until well combined.

4. Sift in flour (and salt) in 3 batches, gently fold until well combined. 





5. In a large bowl, mix together oil and milk mixture. Scoop out 1/3 of the batter and gently fold in the  oil mixture. 



6. Pour the Milo mixture to the yolk mixture. Fold until well combined. Do not over-mix the batter.




7. Pour the batter in a lined baking pan (14cm x 20cm). Tap the pan 2-3 times on the table top. 




8. Bake in a preheated oven 160'C for 45 minutes (Note to myself: Traditional mode, rack 2, transfer to rack 1 for the last 10 minutes.)

Milo Banana Muffin



My boy asked me to make banana bread for him but I made something else.....just want to use up my big tin of Milo. 


Ingredients: Make 6 mini muffins
50g Unsalted Butter (softened)
50g Sugar/ Brown Sugar
1 Egg (room temperature)
75ml Fresh Milk (room temperature)

(A) - sift together and set aside
100g Cake Flour
30g Milo
1tsp Baking Powder

1 Banana (Mashed)

6 Walnut for toppings (optional)

Method:
1. Preheat oven 180'C.
2. Cream butter with a whisk. Add sugar and egg, mix well. 
3. Stir in 1/2 of (A) mixture, mix well. Add in milk, mix well.
4. Stir in the remaining (A) mixture, mix well. Add mashed banana and mix well.
5. Pour evenly in 6 mini muffin cups. Place a walnut on top. Bake 25 minutes.

Mint Pot Plant Dessert- Milo Pudding with Crushed Oreo






I saw this interesting dessert on Facebook before, if I was not mistaken, that was an ice cream pot plant sold in the night market in Malaysia. Today I made it with Milo pudding as based. Sound's weird right? Yeah, I used Milo because I need to use up my big tin of Milo that my hubby brought back all the way from Australia. Still got a lot more in the tin, so I'm going to make more food with Milo this coming school holiday!





Ingredients: (make 2 small pot plants)

1 cup Fresh Milk
1 1/2 tsp Gelatin
10 tbsp Milo or add to taste, my boy cooked this and tasted it, he said '10 tbsp is just nice!' 
Crushed Oreo (cream filling removed)
2 stalks of Fresh Mint for decoration

Method:

1. Sprinkle gelatin in the milk. Wait for 5 minutes.
2. Pour the milk into a saucepan. Simmer in low heat, keep stirring until gelatin dissolved. 
3. Add milo to taste. Do not bring to boil. 
4. Pour into 2 small bowls/ containers. Chill until it is set. 
5. Cover the top with crushed oreo. Gently place the mint stalk in the middle. Serve chilled.
