Japanese Cucumber Salad 日式凉拌青瓜



This Japanese cucumber salad is a healthy, light and refreshing side dish that's incredibly easy to make and simply delicious. 

Ingredients:

2 Japanese Cucumber 


1 tsp Salt


1 tbsp Dried Wakame Seaweed, soak to rehydrate


4pcs Crab Stick


1 tbsp Toasted Sesame Seeds 


Dressing:


3 Tbsp Rice Vinegar 


1 tbsp Dashi Powder


1 & 1/2 tbsp Sugar

Method:

1. Combine the salad dressing ingredients, heat and stir constantly until the sugar is completely dissolved. Remove from heat and set aside to cool.



2. Sprinkle the salt on cucumber slices, let it sit for 5 minutes then squeeze out the liquid.

3. Combine everything together, mix well and serve chilled.

Easy Coleslaw Recipe 包菜沙拉【简单美味家常做法】


Coleslaw is a favourite side dish served next to savoury meats, making it at home is pretty easy. Sharing here is my favourite coleslaw recipe, a basic one that's quick to make and calls for simple ingredients, just cabbage and carrots toss in a creamy dressing with a hint of sweetness.




Ingredients:

220g Cabbage, shredded

1/2 Carrot, shredded

Coleslaw Dressing:

40g Mayonnaise

30g Buttermilk

10g Sugar

1/2 tsp Apple Cider Vinegar

Pinch of Salt & Black Pepper

Easy Pumpkin Salad 南瓜沙拉【简单美味|营养丰富】




Try this Pumpkin Salad with an amazing combination of flavours, terrific as a side or as a light meal on its own. I never truly loved pumpkin salad until I made this! It is sweet, tasty, healthy, and easy to make. I must thank my sis who taught me how to make this :)


Ingredients:

300g Pumpkin


1/4 Onion, thinly sliced


1/4 tsp Salt


25g Dried Cranberries 


40g Corn Kernel (if using raw corn, steam for 5mins)


15pc Toasted Almond (I use honey butter toasted almond, gently crushed)


30g Mayonnaise


1/2 tsp Dijon Mustard


1 tsp Maple Syrup, adjust the sweetness to your preference


1/2 tsp Toasted Sesame Seeds 


Salt & pepper, add to taste

Method: 

1. Slice the pumpkin, and remove the seeds. I usually buy a whole organic Japanese pumpkin, cut and use half for steaming, half of it will be kept frozen for later use.



2. Steam the pumpkin in Ninja Foodi (saute/ sear or steam mode, both are ok!) for 15 minutes or until cooked through, set aside. Alternatively, you can use the steamer or wok.

2. Combine onion and salt, set aside for 10 minutes, and then remove the excess liquid, pat dry the onion with a kitchen towel. 



3. Mash the steamed pumpkin. Combine all ingredients, and mix well. Cover and keep chill for 2 hours/ overnight before serving as a side dish, appetizer, or light meal on its own.

Korean Spicy Cucumber Salad 韩式小菜|凉拌黄瓜



This crunchy cucumber salad is super easy to prepare, it's great to serve as a side dish to add delicious spiciness to any meal.

Serving my homemade spicy cucumber salad with Air-fried Turmeric Chicken and otah-otah


Ingredients:

250g Cucumber 


1 tsp Salt 


Salad Dressing: 


4 tsp Korean Chilli Paste/ Gochujang 


1 tbsp Roasted Sesame Seeds


*1 1/2 tbsp Sugar


3 tsp Apple Cider Vinegar


1 tsp Sesame Oil


*Note: I like my salad to have a tad of sweet taste, do adjust the seasoning to your own preferences.

Grilled King Oyster Mushroom With Spicy & Sweet Korean Sauce 韩式辣酱烤杏鲍菇


Sharing a very simple and delicious Grilled King Oyster Mushrooms recipe, glazed with spicy and sweet Korean Sauce, super tasty and shiok to eat! 

I made this to pair with my salad, a light and healthy meal.




Ingredients:

4-5pcs King Oyster Mushrooms, sliced

Some Cooking Oil/ Oil Spray

Sauce:

20g Ketchup/ Tomato Sauce

20g Corn Syrup

20g Gochujang/ Spicy & Sweet Korean Hot Sauce 

1/2 tsp Apple Cider Vinegar

Clearing my fridge, just grill whatever is left in the fridge, using the same grill setting.

I really enjoyed using this grill in my daily cooking, especially during the weekends when I have lesser time to prepare food in the kitchen. It's smoke-free and super easy to use that I could just throw everything into the grill and let it do the magic!  👍🏻



2. Brush/ spray some oil on the mushrooms. Grill for 6 mins. Brush the sauce on both sides of the mushrooms, continue to grill for 4 mins or until slightly charred, and serve as a side dish or a light meal on its own. Crispy Prawn & Fruits Salad 沙拉虾球 【免油炸/Air-fryer recipe】



Delicious prawn salad made using fresh prawns, marinate with simple ingredients and cooked using Ninja Foodi Air-Crisp mode with minimal oil. The cooker heats up really fast, just 8 mins to get these crispy prawn balls.

15 Prawns

1 Egg White

Some Potato Starch

Some fruits - fresh/ canned, diced

3-4 tbsp Japanese Mayonaise 

Marinade:

1/4 tsp Sesame Oil

1/2 tsp Shao Xing Hua Tiao Wine

Dash of White Pepper

1/2 tsp Salt

Method:

1. Pat dry the prawns with kitchen towels. Add in marinade ingredients, mix well and let marinate for 15 minutes.

3. Coat the prawns with egg white and potato starch. Air Crisp mode 210'C for 8 minutes or till golden and crisp. Mix with mayonnaise and fruits, serve right away. 

Note: Spray some oil on the Cook & Crisp basket and prawns before air-frying. Flip once halfway cooking. If you do not have an air-fryer, you can deep fry the prawns.

Homemade Achar/ Nyonya Acar 娘惹阿杂菜


Achar/ Acar is a mixture of pickled vegetables commonly served in Asian cuisine. It's generally made with different types of vegetables and fruits such as cucumber, carrots, pineapple, long beans, and cabbage, pickled in a well-seasoned vinegar concoction. It's an excellent side dish to increase appetite and goes well with greasy food such as nasi lemak and deep-fried food, it even tastes good on its own. During Chinese New Year, we serve Achar with prawn crackers and that's my top favorite pairing! ;)



The Achar recipe that I'm sharing here is a simplified version of Peranakan/ Nyonya Achar. 

Ingredients:

2 Cucumber

1-2 Carrot

1/2 Pineapple

1/2 tsp Turmeric Powder

100g Rice Vinegar

100g Water

100g Sugar

1/2 tsp Salt (additional 2 tsp to dehydrate cucumber and carrots)

80g or more Gound Peanuts

2-3 tbsp Toasted Sesame Seeds

Some oil for cooking



(A)

3 Shallot

1 Onion

5 Dried Chili

3 cloves Garlic

2 Candle Nuts

1/2 thumb size Galangal

2-3 Red Chili

1 Lemongrass

Method:

1. Cut cucumber and carrot into strips, mix with 2 tsp salt, let it sit for an hour, squeeze out the liquid, set aside.

2. Add ingredients (A) and some water (optional) into a blender, blend till smooth. I'm using Ninja blender which is very effective and quick, take only seconds to blend the ingredients into a paste.  Ninja blender can be purchased from Ninja Kitchen Official Website. 3. Heat some oil in a pan/ wok, add in the paste and turmeric powder. Stir fry till the oil seeps through. Add in vinegar, water, salt, and sugar. Bring the mixture to a boil, you may adjust the taste to your own preferences.







4. Let it cooled for a while. 





5. Combine all ingredients together, leave it to cool completely. Store in airtight jar/ glass containers. Keep refrigerated and serve the next day. Best consumed within 1-2 weeks.
