Fragrant Oil Mushroom Chicken Rice 电饭锅香菇葱油焖鸡饭【Rice Cooker Recipe】


This fragrant oil mushroom chicken rice is comforting, tasty, and easy to cook using simple ingredients in a rice cooker. 


Ingredients: 2 servings

1/2 small Kampong Chicken (or 2 legs + 2 wings)


Handful of Spring Onion


6-8pcs Shiitake Mushrooms 


1 tbsp Shao Xing Hua Tiao Wine


1/4 tsp Salt 


A dash of White Pepper 


1 cup Rice


1 cup Chicken Broth 


Some oil for cooking 


Marinade:


1/2 tbsp Corn Flour


1 tbsp Shao Xing Hua Tiao Wine


1 tsp Salt


1/8 tsp White Pepper


1/2 tbsp Sesame Oil

Method:

1. Marinate the chicken for 30 minutes or overnight. Heat some oil and stir-fry the spring onions until aromatic. 

2. Add mushrooms and stir fry for a minute or so, add salt, pepper and drizzle the wine. Add the remaining ingredients.

3. Select <RICE> <STANDARD>. 



4. When the cooking has completed, garnish with chopped spring onions and serve warm.

Chinese Pumpkin Rice With Minced Pork 肉碎南瓜焖饭


This Chinese Pumpkin Rice is an easy-to-cook and flavourful rice cooker recipe. The naturally sweet pumpkin cubes blend well with the rice flavoured with umami seasonings. 

Ingredients: 2 servings

150g Minced Pork 

(Marinate with 1 tsp Light Soy Sauce, Sesame Oil & Tapioca Flour)


100g Pumpkin


25g Dried Shrimp


2 tbsp Garlic


1 tbsp shredded Black Fungus/ Wood Ear


1 cup Rice


1 cup Water


1 tbsp Mirin/ Rice Wine


1 tbsp Light Soy Sauce 


1 tbsp Oyster Sauce 


1/8 tsp White Pepper 


~~~~~~~~~~


1 tbsp Oil for cooking 


Spring Onions for garnishing

Method:

1. Heat the oil, stir fry garlic and dried shrimp until aromatic. Add marinated pork and stir fry with black fungus and white pepper until aromatic. Add rice and stir to mix well. 



2. Place all ingredients into the inner pot of the rice cooker. Cover with double lids set <RICE> mode. I'm using Song Cho Claypot Rice Cooker.



3. When the cooking has completed, garnish with chopped spring onion and serve warm.

Rice Cooker Honey BBQ Pork Ribs aka Char Siu Pork Ribs 蜜汁叉烧排骨【电饭锅食谱|做法】


Here's another easy method to make Honey Char Siu Pork Ribs at home using a rice cooker.  


Ingredients:

1 slab Baby Pork Ribs

Honey 

Spring Onion

Marinade: 


2 tbsp Shao Xing Hua Tiao Cooking Wine 


1 tbsp Sugar 


2 Cloves Garlic (Mashed)

1 tbsp Hoisin Sauce 

1 tbsp Char Siu Sauce

2 tbsp Ketchup/ Tomato Sauce 

2 tbsp Light Soy Sauce

1/4 tsp Chinese Five Spice Powder

Method:

1. Combine the marinade ingredients. Coat the pork ribs with half of the marinade (reserve the remaining sauce).

2. Poke the meat with a fork (all over), cover and let marinate overnight in the fridge.


3. Layer the rice cooker pot with spring onion. Place the marinated pork ribs on top, add all the marinade and pour the reserved sauce on the pork ribs. Cover with double lids set <RICE> mode. 


I'm using Song Cho Claypot Rice Cooker.

3. When the cooking has completed, remove the pot from the rice cooker immediately and coat the pork ribs with the caramelised sauce. Brush the pork ribs with a thin layer of honey and serve. Optional: You may garnish the honey pork ribs with some chopped spring onion and toasted sesame seeds.

Barley Ginkgo Nut Bean Curd Dessert 白果腐竹薏米糖水【有助清热去湿、润肺美白等功效】


This barley ginkgo nut bean curd dessert is a Cantonese sweet soup aka Bak Koh Fu Chuk Yi Mai Tong Sui. It's been one of my favourite desserts since childhood day, always feels good to have a bowl of nourishing sweet soup to finish off a meal. It also helps to reduce body heat and promote better skin complexion. 


Preparation is simple, it can be cooked using a pressure cooker, rice cooker or over the stove. Sharing here is the rice cooker recipe.


Ingredients:

(5-6 servings) 


40g Dried Beancurd Skin/ Sheets


70g Ginkgo Nuts 


25g Barley 


2pcs Pandan Leaves 


1.5L Hot Water


Sugar or Rock Sugar, add to taste

Method:

1. Rinse and soak the bean curd skin for 15 minutes. 

2. Place all ingredients into Song Cho Claypot Rice Cooker. Cover with double lids, set <SOUP> mode. Note: add the sugar halfway through cooking.


3. When the cooker beeps, serve warm or chilled.

Peach Gum Dessert With Snow Fungus 桃胶雪耳糖水【排毒养颜、清热降火、滋阴润肺】


Peach Gum is well-known for its nutritional value similar to bird's nest, rich in collagen and beneficial for maintaining youthful skin. It's tasteless, so we usually cook peach gum in sweet soup with snow fungus. This dessert soup tastes good, refreshing and helps reduce body heat. 

Ingredients:

50g Peach Gum


1 Snow Fungus


20g Dried Longan


8 Red Dates 


Rock Sugar or Honey Rock Sugar, add to taste


1.5 litre Water


10g Wolfberries

Method:

1. Rinse and soak the peach gums in clean water overnight. Discard the water and dirt/ specks.

2. Soak the snow fungus, remove the yellow hard core at the bottom and then cut it into smaller pieces.

3. Add water, snow fungus and red dates to the rice cooker pot. Select <SOUP> <1 HOUR>.



4. When the cooking has completed, add the remaining ingredients and cook for another 30 minutes. Serve warm or chilled.

Rice Cooker Pork Ribs & Pumpkin Rice 南瓜排骨焖饭【电饭锅食谱】


An easy and delicious one-pot rice with tender pork ribs and sweet pumpkin. Simple and enjoyable!

Ingredients: 2  servings

330g Pork Ribs


1 cup Rice


1 + 1/4 cup Water


1 tbsp Light Soy Sauce


100g Pumpkin 


Marinade:


1 tbsp Tapioca Flour 


1 tbsp Chu Hou Sauce


1/2 tbsp Light Soy Sauce


1 tbsp Mirin


1 tsp Sesame Oil
