How To Make Cute Animal Printing Steamed Tofu



I cook steamed tofu at least once a week but I always served it as it is...the square/ rectangle tofu topped with crispy fried onion and sauce. 

Until the day I saw someone posted a picture of the Daiso Tofu mould, yes, a mould specially designed to print on tofu, then my mind 'BLING' - why not I try with my cookie mould?


And, I tried. And, I did it successfully! Don't they looks cute? or at least cuter than the ordinary square/ rectangle tofu? 


It's simple, just stamp on the tofu, then steamed and add sauce (sauce recipe - scroll down).


This is the type of mould that I used (as shown in the picture below). I have plenty of it with different designs. However, not all design works on tofu. Only certain designs came out nicely.

Sauce Recipe:

I didn't measure each of the ingredients, do adjust accordingly/ add to taste.



1 part of Soy Sauce

3 part of Oyster Sauce

2 part of Water


Some oil used to fry small onion.


Method:

1. After fried the onion, pour all the sauce in the hot pan. Let it sizzle and bubble for about 15 seconds or when it's slightly thicken. Remove from heat, pour it on the steamed tofu. Serve warm.

5 Minutes Miso Tofu Soup 五分钟简易日式味增豆腐汤




This isn't an authentic miso soup, this is my quick-fix soup for a last-minute meal. Yeah, just 5 minutes, can be done in 5 minutes!

Ingredients:

About 2 cups Organic Chicken Broth

1 tbsp Miso Paste

1 block Tofu 
(cut into cubes, my soup is loaded with tofu, if you like it less, halve the amount)

Wakame (seaweed), soaked and drained.

Toasted Sesame Seeds (ground)

Soy Sauce

Sesame Oil

5-mins Miso Tofu Soup along with homemade sushi and grilled Unagi.

Method:

1. Add chicken broth in a saucepan, bring to boil. Meanwhile, mix ground sesame seeds, soy sauce and sesame oil in a serving bowl. Set aside.

2. Add tofu to the chicken broth. Bring to boil. Reset to low heat. Add miso paste (in a small sieve). Refer here for the method. Do not bring to boil.

3. Remove from heat. Transfer the soup into the serving bowl. 

4. Topped with wakame, serve warm. Alternatively, you can also add some meat/ seafood/ fish cakes/ etc to the soup.

Bacon Steamed Tofu 熏肉蒸豆腐



The common ways of serving steamed Tofu is pairing with crispy shallot or minced meat toppings. This time, I ran out of both ingredients. Last cooking day of the week before the long weekend, just cooked whatever ingredients that I have in the fridge. 


Well, as I always said, anything goes with bacon won't taste bad. This one, it's good and the best thing is 'hassle-free and mess-free'. It's so easy and yummy!


We, everyone here in Singapore are in the mood of celebrating SG50!

Ingredients:




Tofu (steamed, drain and set aside) 豆腐 (蒸好,水倒掉)

Some good quality back bacon (I trimmed off the fat, chopped) 熏肉,切小





*Sauce: 酱料

Oyster Sauce 蚝油

Soy Sauce 酱油

Sugar 糖

Some Water 少许水

*Mix all in a bowl, set aside. 全部混合

Method:

1. Heat oil in a skillet. If you didn't trim the fat, skip this step.

热锅,把油烧热。如果熏肉很肥就不用下油。

2. Cook the bacon until sizzling and a little crisp on the edges. 

把熏肉煎好。

3. Pour in the seasoning. It will sizzle and bubble. When the sauce is thicken, turn off heat and pour the sauce on the steamed Tofu.

倒入酱料。酱料浓后熄火。

4. Serve warm with steamed rice.

把酱料倒在蒸好的豆腐上,完成 ✅

Steamed Egg Bean Curd With Minced Meat & Dried Shrimp 香炒耗油虾米肉碎配自制蛋豆腐



This was one of my childhood favorite dish. But mom used to cook this with store bought egg bean curd, pan fried it then topped with minced meat and gravy. I used to cook like her method too until I found the way to make egg bean curd at home. 

You may not believe how simple it is to make egg bean curd at home. I can assured you, it is as simple as ABC. Just 2 main ingredients - Eggs and Soy Milk. Made with fresh and natural ingredients, clean, no preservative and no added coloring. Click here for simple homemade egg bean curd recipe. 

However, I always ended up with ugly looking egg bean curd on the final product because I failed to remove it from the dish and couldn't slice it nicely. So I thought of a smarter way to do it lol...Just leave it in the dish after steamed, add minced meat toppings! I omit the pan frying with oil spattering in my kitchen, it's actually a healthier version too.

In this blog, I only include the ratio of minced meat and dried shrimps. There's no exact measurement for the seasoning because I actually didn't measure each of the ingredients. I never cook the same amount each time. For any of you who want to try this recipe, keep every ingredients in minimal amount as the dried shrimp itself is already quite flavorful. Otherwise, your minced meat toppings may turn out too salty. 




Ingredients: 材料

100g Minced Meat 肉碎 100克 



 I'm not using lean minced meat. In fact, I used very little oil in frying the minced meat.
This would bring out the 'Wok Hei' of this dish.


25g Dried Shrimp 虾米 25克,洗干净后浸泡水里5分钟,剁碎
(washed and soaked for 5 mins, drained, chopped)






由于虾米的味道/咸度有分别,所以调味料和酱料的份量须自己拿捏

Minced Meat Seasoning: 
调味料
Soy Sauce 酱油

Sesame Oil 麻油

Ginger Juice 姜汁

White Pepper 胡椒粉



Sauce: 酱料

Oyster Sauce 蚝油

Soy Sauce 酱油

Sugar 糖

Sesame Oil 麻油

Corn Flour 玉米粉

Water 水



Some chopped spring onion. 葱碎

Method:

1. Add minced meat seasoning to minced meat. Mix well and let marinate for 20 minutes. 
把调味料和肉碎搅拌混合均匀。盖好,腌20分钟。

2. Heat oil in a skillet, add dried shrimps. Fry until fragrant and turning to brown.
烧热少许油,炒香虾米碎。




3. Add in minced meat. Stir fry (breaking it into small pieces) until cooked through or until no more sizzling sound. Stir in sauce.
加入肉碎,炒熟,加入酱料。



4. When the sauce is thicken, remove from heat. Transfer onto the steamed egg bean curd. Garnish with chopped spring onion. Serve warm with steamed rice.

Homemade Soy Milk/ Soya Milk 自制豆奶 [原味]


Soy milk is dairy-free plant-based milk that you can easily make at home. Starts with soaking the soybeans, then blends along with water, filter out the remaining particulates, and boil before consuming. This preservative-free and additive-free homemade soy milk is great for drinking, making egg tofu/ beancurd,  soy milk pudding and many more...


Easy Homemade Soy Milk
Healthy plant-based milk that is suitable for kids.

Ingredients:

140g Soybean, soaked

Water

Optional: 

Rock Sugar, add to taste

Method:

1. Add the 
soaked soybeans into the Ninja blender, add water to 600ml level. Ninja blender can be purchased from Ninja Kitchen Official Website. Cart out with Promo Code: MIKISNSG to get a 10% discount for any Ninja - Shark products via their website.


2. Select <EXTRACT>. The program will run for 1 minute. 


3. When it's ready, pour through a strainer. 


Note: do not add sugar and pandan leaf if using soy milk to make tofu/ beancurd.

4. Transfer the soy milk into a pot, boil with pandan leaves and sugar, if using. Serve warm or chilled.

Homemade Egg Bean Curd/ Tofu - Made with soy milk and egg, nutritious and delicious. 

Serving idea: To create a homely meal (without deep frying), add oyster sauce minced meat toppings to pair with rice. Love this! 




Ingredients: 材料

275ml Fresh Soy Milk (no sugar) 无糖豆奶 275克
(homemade soy milk or buy from market, not those tetra pak packed soy milk)

3 Egg (lightly beaten) 鸡蛋 3粒



1/8 tsp Salt 盐 1/8小匙

1 tsp sugar 糖 1小匙

Method: 步骤

1. Add salt and sugar to soy milk, mix well.
把盐,糖和豆奶混合均匀。



2. Use a pair of chopsticks, mix soy milk and beaten egg until combined. 
用筷子,把鸡蛋稍微大撒,加入步骤1的豆奶,搅拌均匀。



3. Strain the egg mixture.
把豆奶蛋液过筛。



4. Steam for 5 minutes. 蒸5分钟即可。该怎么配搭才好吃呢?下面有个提议。。

Photo updated 1 April 2015, I'm not good in handling/ slicing bean curd.
So, leave the bean curd alone in the dish and topped with minced meat is the best way for me, instead of slicing and frying. 

Updated 1 April 2015, Healthier and tastier!
This time, I used slightly sweet soy bean milk, omit the sugar.
Sweet in taste to pair with the savory minced meat toppings. Superb!

Pan Fried Seafood Tofu 香煎海鲜豆腐, 非油炸



This is another version of my homemade Seafood Tofu... Steamed + Pan Fried. Although most people cook seafood tofu this way, but I personally prefer the Pan Fried Crispy Tofu . For those who don't like bread crumbs, do try out this recipe.


Ingredients: 
2 Tube Egg Tofu



100g Fresh Prawn (shelled and deveined, finely chopped)
140g Fish Paste (click here for homemade fish paste recipe)



25g Peas 
25g Shredded Carrot 
(or any chopped vegetables)



Seasoning:
Garlic Salt
White Pepper
Sesame Oil




Method:
1. Mix all the ingredients and seasoning in a bowl. Add a pinch garlic salt, white pepper and some sesame oil.




2. Transfer to a heat proof container. Level top.



3. Cover with aluminium foil. Steam for 10-15 minutes.



4. Cut tofu into squares, pan fried until golden brown.
