Brown Sugar Boba Pearls/ Tapioca Pearls Bubble Tea 波霸/黑糖珍珠奶茶做法/食谱



Few days back, the boy told me he won a cup of bubble tea from an online quiz but he can only redeem when school re-open after 1 June (if Circuit Breaker ended by then...). 

He has been talking about the bubble tea since then and said he really wish he could have it now. Lucky him, I have bought a packet of Okinawa brown sugar few weeks back. So I told him to make his own and he did it!....well, actually WE did it :D ... The texture and taste is perfect, except the shape is not perfectly round.



It's totally fine if it's not in perfect round shapes...
DIY with kid, what do you expect ?! :D

School reopened but bubble tea shop remain closed :D
The boy insisted to make another batch of boba pearls LOL..
This was for me, he made his own with just brown sugar boba pearls and milk.

Ingredients: yield 3-4 servings, depends on how much you served in each cup ;)
材料

Tapioca Pearl Ingredients:
珍珠材料

90g Water 水 90克

65g Dark Brown Sugar 黑糖65克

130g Tapioca Starch 木薯粉 130克
(more for coating)


Brown Sugar Syrup Ingredients:
黑糖浆材料

75g Dark Brown Sugar 黑糖 75克

100g Water 水 100克

I used this brown sugar from Japan. It has deep and rich flavour.

Method:
步骤

Prepare Tapioca Pearls:
准备黑糖珍珠

1. Heat water and sugar in a saucepan, cover with a lid and bring to boil. Stir in half of the flour to form a soft dough. Remove the saucepan from heat, add in the remaining flour, stir to combine. Transfer the soft and sticky dough onto worktop, dust with some flour and knead to form a pliable dough.
水和糖煮滚,加入一半的粉,拌均后离火,加入剩余的粉,揉成面团。

2. Roll out the dough, cut into small pieces and roll into small balls. 
把面团切小,搓圆。沾上粉。


This rolling part is quite tedious, let the kid do it with you! :D 
Make sure to coat each pearl with flour to avoid sticking.
To do this, just sprinkle some flour into the bowl and gently shake the bowl.

3. Bring a large pot of water to boil, add in tapioca pearls and cook for  about 12-15 minutes. When it's done, transfer the pearls into cold water.
煮滚一锅水,加入黑糖珍珠,中火煮大概12-15分钟,捞起浸泡冰水。





4. Meanwhile, prepare the syrup. Heat sugar and water, bring to boil. Add in cooked pearls and simmer for 5 minutes or till slightly thicken. When it's cooled, serve with cold milk, ice milk tea, ice coffee etc... Enjoy!
另一个锅里把黑糖和水煮滚,然后加入黑糖珍珠,小火焖煮5分钟或至浓稠。待凉后即可加入鲜奶/奶茶/咖啡等等,一起享用。若喜欢我的食谱,可以LIKE和追随我的面书专页,不要错过最新食谱发布。
