Pumpkin Chicken Rice 咸香南瓜鸡肉饭 【Rice Cooker Recipe 电饭锅食谱】



We usually cook pumpkin rice with ground pork or chicken. This version that I'm sharing here, I added some "Mui Heong" salted fish to elevate the taste. It's not too salty or pungent, just to give it a nice aroma. However, if you're not a fan of salted fish, just omit and add some salt to taste. 




This recipe is simple enough for home cooks at all levels. Just gather all the ingredients and cook in a rice cooker, so easy and mess-free!

This is the rice cooker that I'm using.

which is safe to use in all kind of cooking.

简单又有营养的南瓜鸡肉饭,加了梅香咸鱼味道香浓。用电饭锅煮非常方便,不需要顾火也不怕烧焦。适合忙碌的现代人,尤其是上班族和烹饪新手。 


Ingredients: Yield 2-3 servings

150g Boneless Chicken Leg 去骨鸡腿肉 150克

50g Pumpkin 南瓜 50克 

40g Shimeji Mushroom 鸿喜菇 40克

200g Rice 香米 200克

280g Water 水 280克

4 clove Garlic, chopped 蒜头 4瓣,剁碎

3-4 slices Ginger 姜 3-4片

3 Shallot, chopped 小葱头 3粒,剁碎

1 tbsp Salted Fish  梅香咸鱼 1汤匙 
(if you don't have salted fish, add some salt/ soy sauce to taste. 如果不放咸鱼,可以加盐/酱油调味)

Marinade: 腌料

1/4 tsp Dark Soy Sauce 黑酱油 1/4 小匙

1/2 tsp Corn Flour 玉米粉/粟粉 1/2小匙

1/4 tsp Garlic Salt 蒜盐 1/4 小匙

A dash of White Pepper 胡椒粉 少许

1/2 tsp Sesame Oil 麻油 1/2小匙


Garnish 点缀: 

Chopped spring onion/ coriander 青葱碎或芫荽 适量

Method:  步骤

1. Add all marinade ingredients into chicken, mix well and let marinate 30 minutes. 
将所有腌料加入鸡肉,拌均后腌制30分钟。





2. To cook: Plug in Song Cho rice cooker. Press <MENU> function button, select <STEAM> function, press and hold the <START> button for 2 seconds.
先把松厨电饭锅插电开启。按《MENU 功能》 键,选择《STEAM 蒸煮》功能。长按2秒《START 开始》键。






3. Add oil into the inner pot, when the oil is heated, add in garlic, ginger and shallot. Stir fry until fragrant. Add in salted fish, mix well.
内锅加入少许油,烧热后加入蒜头,姜和小葱头,爆香。加入咸鱼,炒香。




4. Add in rice, stir to mix well. Add in water, mix well. Add in the rest of the ingredients. Close the lid.
加入香米,炒香。加入水,拌均。加入其余材料,盖上。







5. Press and hold <CANCEL> for 2 seconds. Press <MENU> function button, select <FAST COOK> , press and hold <START>. Let it cook. 
长按2秒《CANCEL 取消》键,按《MENU 功能》 键,选择《FAST COOK 快煮》功能。长按2秒《START 开始》键。



6. Upon completion, a 'beep beep' sound will alert you that the cooking process is completed. Wait for 10-15 minutes, open the lid, add in spring onion/ coriander, stir well and serve warm.
设定功能完成后,饭锅会发出 “啲”“啲” 的声音,提示工作完成,自动进入保温状态。10-15 分钟后,加入青葱碎或芫荽,拌均。即可享用美味又有营养的南瓜鸡肉饭。若喜欢我的食谱,可以LIKE和追随我的面书专页,不要错过最新食谱发布。
