Easy Chicken Curry 简易咖喱鸡 [Pressure Cook Recipe 高压锅食谱]


This is a very quick and easy way to cook chicken curry using ready-to-use curry paste. Just cook for 5 minutes on high pressure, natural release for 14 minutes and it's ready to serve. The gravy is thick and flavourful, the chicken is succulent and tender, and potatoes are cooked through and soft. 

This dish is versatile, can add other ingredients to cook together with the chicken.
Here's another version that added some Taupok (Fried Beancurd) and carrots. So tasty!

Easy home-cooked chicken curry, paired with fried egg,
sambal, and sweet chilli Poppadoms, so yummy!

Ingredients: Yield 2-3 servings

5-6pcs Chicken Drumsticks 

1 tsp Corn Flour

100g Curry Paste

200g Coconut Milk

250g Water

2 Potatoes, peeled & cut 

1 Large Onion, peeled & cut

Method: 

Rub chicken drumsticks with cornflour (if you like it more flavourful, add a tbsp of meat curry powder), set them aside for 15 minutes. Follow the steps in the video. 

Note:  

- I used 5 chicken drumsticks, weighing about 550g. If you're using smaller chicken chunks/ parts or bigger chicken drumsticks/legs, do adjust the time accordingly (plus or minus the time). 
- Bring the mixture to a boil before adding chicken.
