Long Bean & Bacon Claypot Rice 培根豆角瓦煲饭




A simple and delicious long bean rice, added bacon instead of using dried shrimps and pork that we've been eating quite often. This is our new favourite rice dish cooked using Song Cho Claypot Rice Cooker.


Ingredients:
Yield 2-3 servings

4pcs Streaky Bacon, sliced

4 tbsp Shallot, chopped

120g Long Beans

1/4 tsp Salt

1/8 tsp White Pepper 

1 + 1/4 cup Rice

2 cup Water

1 tsp Dashi Powder

1 tsp Light Soy Sauce

Optional: Sweet Dark Soy Sauce, add to taste

Garnish:

Fried Shallot

Coriander

Method:

1. Fry the bacon till crisp and brown, set aside. Use the bacon oil, saute shallots till fragrant, add in long bean, salt and white pepper, stir fry for a minute. Remove from heat, set aside. 




2. Add rice, water, dashi powder and light soy sauce into Song Cho Claypot Rice Cooker. Cover with double lids set <CRUST> mode. 

3. When the cooker beep after about 28mins, add in long bean and bacon, let it continue to cook. This will take about 25 minutes to complete.




4. When the cooking has completed,  stir in some sweet dark soy sauce, if using. Garnish with fried shallots and coriander, serve warm. 


Psst... The Song Cho Claypot Rice Cooker CRUST function will create a crispy crust on the claypot, that's the most delicious part of the claypot rice, use a wooden spoon to scrape off the rice and enjoy, don' t just soak and wash away ya.... ;)
