Everyone in my family loves chicken rice! In the past, I have tried different ways to cook chicken rice from scratch using the saucepan, rice cooker, steamer, claypot, and this is the quickest way using pressure cook function. Well, basically just add in the ingredients into the pot, set the pressure cook timer 3mins. When the pressure is released, it's time to eat! The chicken meat turned out succulent and the rice texture is perfect! You can serve the whole chicken drumsticks or tear out the meat with your hand/ scrape with a knife (like I did). The latter is suitable for families with young children or the elderly, boneless chicken meat is easier for them to eat. ;)
Ingredients:

1 & 1/2 cup Rice, rinsed
2 cups Chicken Broth, add some salt to taste
1 Lemongrass, pounded
1 Pandan Leaf
1 thumbs size Ginger, pounded
1/2 Garlic
5 chilled Chicken Drumstick
Seasoning:
1 tsp Sesame Oil
1/4 tsp Salt
1 tsp Corn Flour
1 tsp Shao Xing Hua Tiao Wine
A dash of White Pepper
Garnish:
Some hot oil/ shallot oil, crispy fried garlic/ shallots, spring onion/ coriander, steamed fish soy sauce
Method:
1. Add seasoning to the chicken drumstick, mix well and set aside. This can be done a day before if you're preparing for the next day's "after work" meal.
2. Pressure cook for 3 minutes. When the cooking is done, natural pressure release and it's ready to serve. Video tutorial available on my Instagram: mfa_dingoozatfood
