Banana Butter Cake 香蕉奶油蛋糕


When I have leftover/ brown-spotted bananas on the counter, I'd transform them into banana desserts or snacks. This buttery, moist and soft Banana Butter Cake is quite easy to make at home. 



Ingredients:

(A)

3 Eggs 

100g Castor Sugar 

200g Banana (mashed) 

(B)

150g Cake Flour 

1/2 tsp Baking Powder 

1/4 tsp Baking Soda 

(C)

100g Salted Butter (melted)

Method: 

1. In a mixer, beat the eggs until foamy. Gradually beat in sugar, beat in banana, and continue to beat until the ribbon stage. 


2. Sift in (B) in 3 batches. Use a spatula to mix well. Stir in (C) and mix well. Scrape the bottom to make sure the mixture is well combined.


3. Pour the mixture into a greased 6" baking tin. Gently tap the baking tin on the worktop 2-3 times. 

4. Preheat Ninja Foodi Bake/Roast mode 160'C 3mins or you can use an oven. I baked this cake using Ninja Foodi multi-cooker, it can be purchased from Ninja Kitchen Official Website. 5. Bake 160'C 30 mins, *cover with aluminium foil and continue to bake for 15-20 mins. Don't be upset with the crack on top, that's totally normal.  ;)

* This step is optional. Cover with foil if the top/ surface browns too fast.
