Banana Butter Cake 香蕉奶油蛋糕

When I have leftover/ brown-spotted bananas on the counter, I'd transform them into banana desserts or snacks. This buttery, moist and soft Banana Butter Cake is quite easy to make at home.

Method:

1. In a mixer, beat the eggs until foamy. Gradually beat in sugar, beat in banana, and continue to beat until the ribbon stage.

2. Sift in (B) in 3 batches. Use a spatula to mix well. Stir in (C) and mix well. Scrape the bottom to make sure the mixture is well combined.

3. Pour the mixture into a greased 6" baking tin. Gently tap the baking tin on the worktop 2-3 times.

5. Bake 160'C 30 mins, *cover with aluminium foil and continue to bake for 15-20 mins. Don't be upset with the crack on top, that's totally normal.  ;)

* This step is optional. Cover with foil if bake using an air-fryer, the top/ surface may browns too fast.
