3-4 Asian Pear (peeled and cut into large chunks)
Handful of Snow Fungus, about 133g after soaking
8 Seedless Red Dates
Handful of Chinese Almond (南杏/ sweet apricot kernel)
2 Large Dried Figs
1 Litre Hot Water
Rock Sugar, to taste

Method:
1. Soak the snow fungus in water for 30–60 minutes, or until fully expanded. Remove the tough yellow core and tear into small pieces. Peel and cut the Asian pears into large chunks. Rinse the red dates, Chinese almonds, and dried figs.
2. Add the pears, snow fungus, red dates, Chinese almonds, dried figs, and hot water to a soup pot. Bring to a boil over medium-high heat. Reduce to low heat and simmer for 45–60 minutes, until the pears become tender and the snow fungus turns soft and gelatinous.
3. Add rock sugar according to your preferred sweetness and stir until dissolved.
