Homemade Nando’s Lemon & Herb PERi PERi Roast Chicken 【Nando's 招牌烤鸡 | 家常做法】



Craving Nando's PERi-PERi chicken? You can make it at home with this simple recipe. Preparation is easy, just marinate the chicken and throw them into the air-fryer or oven, let it cook the food to perfection. Add some roasted veggies for a delicious wholesome meal that looks fancy, but is actually really easy peasy!



Ingredients:

2 Chicken Leg


Marinade:


1 tsp Salt


1 tbsp Corn Flour


3 tbsp Lemon & Herb PERi PERi Sauce

Method: 

1. Combine marinade ingredients and chicken, and let marinate overnight. 



2. Layer the bottom of the pot with some veggies (as shown in the picture) and place the chicken on top, bake/ roast 180'C for 30 minutes, baste with sauce, then continue to cook another 8-10 minutes.

Blanched Beansprout With Soy Sauce 香油酱拌豆芽菜


This is a simple side dish that I often cook at home, it's healthy and quick to cook. Briefly blanch the beansprout, drizzle some sauce and top with fried garlic or shallots, it goes well with any meal.

Ingredients:

200g Beansprout 

1 tbsp Fried Garlic/ Shallot (with oil) 

Sauce: 

1 tsp Brown Sugar 

1 tsp Sugar 

1.5 tbsp Light Soy Sauce 

2 tbsp Water

Method:

1. Combine the sauce ingredients, and set aside. 

2. Fill some water in a wok and bring it to a boil. Add in beansprout, and blanch for about 60 seconds. Transfer the beansprout to a serving plate, discard the water.

I cooked this dish using Song Cho stainless steel wok, a multiply stainless steel wok without chemical coating, it's safe to use in any cooking.

3. Add sauce ingredients to the wok, and simmer until the sugar dissolves. Pour the sauce over the beansprout, garnish with fried garlic/ shallots oil and serve right away.

Air-fried Crispy Chicken Karaage aka Japanese Fried Chicken 日式炸鸡块【免油炸唐扬鸡】



Karaage is a Japanese dish typically made with marinated boneless chicken meat and deep-fried. It's extremely popular and well-loved by children and even adults. Here's sharing a simple Japanese Karaage recipe that you can easily make at home without going through the messy deep-frying process. Just marinate the chicken meat, mix it with flour and let them cook in the air-fryer. The chicken turned out absolutely tasty with a crispy exterior and juicy inside, just like the deep-fried version, minus the oil! Same comforting taste, no oily mess:)



Ingredients:

150g Boneless Chicken Thigh, cut into chunks


2 tbsp Crispy Flour


Marinade:


1 tsp Mirin


1 tbsp Corn Flour


1/4 tsp Grated Ginger


1/4 tsp Garlic Powder/ Mashed Garlic


Pinch of Salt & Pepper

1. Combine marinade ingredients and chicken, and let marinate 30 minutes.

I made a small portion for one serving, feel free to increase the amount.


2. Mix in the crispy flour, air-fry for 8-10 minutes or until golden and crisp.
Note: Spray some oil before cooking, flip the meat halfway through cooking.

Coconut Egg White Pudding 椰汁鲜奶炖蛋白



If you're looking for a healthy, yummy and low in calories dessert, here's a simple recipe for you. This smooth and silky coconut egg white pudding is easy to make by combining coconut water and milk with egg white and then steam, chill it and enjoy!

115g Coconut Water

75g Milk

75g Egg White

1-2 tbsp Sugar, add to taste

Easy Potato Pancake aka Rosti Recipe 香煎瑞士马铃薯饼


Rosti aka potato pancake, originating from Switzerland is made of shredded potatoes pan-fried in a skillet until golden and crisp, usually serve as a main or side dish. My son loves Rosti at Marche but after seeing the amount of oil they use to cook the Rosti, it's a NO for us! 

When the boy was younger, I often made Rosti at home for our weekend breakfast. Making it from scratch isn't difficult but it can be tedious if you're grating the potatoes manually. I would highly recommend using a food processor to grate the raw potatoes, it's so much faster and safe! Need not worry about hurting your fingers or fingernails. If you've tried using a box grater, you'll know what I mean :P

Method: 

1. Peel and shred the potatoes.




2. Add in seasonings, and discard excess liquid. Don't worry if your potatoes go brown or reddish, this is a natural reaction of potatoes to air aka oxidation. It does not affect the taste. 
Optional: Divide the shredded potatoes into 4 portions, making smaller rosti shorten the cooking time. 

3. Heat some oil and pan-fry both sides until crisp and cooked through. Honey Butter Baked Salmon 蜜汁奶油三文鱼


This honey butter baked salmon is a simple and quick-to-cook dish that we all love, it's tender, perfectly moist and caramelised with a flakey finish. Made with just a handful of ingredients, easily prep with minimal mess to clean up! 


Ingredients:

1 Salmon Fillet


Seasonings:


1/2 tsp Garlic Salt 


1/8 tsp Onion Powder 


1/8 tsp Paprika


1/8 tsp Black Pepper 


1/2 tsp Sesame Oil


Honey Butter Sauce:


10g Butter, melted


1/8 tsp Parsley 


1 tsp Honey

Method: 

1. Rub the salmon with seasoning, set aside for 15 minutes.


2. Bake 200'C for 6-8 minutes, serve right away. Adjust the baking time according to the thickness of the fillet.

Pear & Fritillaria Soup 川贝雪梨汤【润肺清热、止咳化痰】


This Pear and Fritillaria Drink helps to soothe and nourish the lungs, relieve heat cough (with phlegm) / prolonged cough and reduce body heat. In traditional Chinese medicine, Fritillaria aka Chuan Bei Mu is known for its remarkable efficacy to eliminate and reduce the production of phlegm and mucus by moistening the lungs. 

雪梨味甘性寒,含苹果酸、柠檬酸、维生素B1、B2.C、胡萝卜素等,具生津润燥、清热化痰之功效。有润肺清燥、止咳化痰、养血生肌的作用。因此对急性气管炎和上呼吸道感染的患者出现的咽喉干、痒、痛、音哑、痰稠、便秘等均有良效。

川贝是中药-味苦、甘,食用的时候可以不吃。川贝入肺、心经,有化痰止咳,清热散结的作用。川贝不仅具有良好的止咳化痰功效,而且能养肺阴、润肺而清肺热,是治疗久咳痰喘的良药。

8g Fritillaria aka Chuan Bei Mu 川贝/  川贝母
(wash and soak in water for 10 minutes. Discard water, lightly pounded)


2 Dried Fig


2 Pear


6 Seedless Red Date


Rock Sugar, add to taste


1L Hot Water

1. Place all ingredients (except rock sugar) into Song Cho Claypot Rice Cooker. Cover with double lids set <SOUP> mode, 2 hours. 




2. Add rock sugar after 1 hour of cooking. When the cooker beep, serve warm or chilled.

Pumpkin Melon Pan 南瓜日式菠萝包


Japanese Melon Pan is one of our favourite bread I often bake at home with different flavours such as strawberry melon pan, matcha melon pan, original and melon flavour melon pan. This time, I made pumpkin melon pan with caramel fillings, shaped into pumpkins and a little bear that's too cute to spook! :P Happy Halloween!

Easy Coleslaw Recipe 包菜沙拉【简单美味家常做法】


Coleslaw is a favourite side dish served next to savoury meats, making it at home is pretty easy. Sharing here is my favourite coleslaw recipe, a basic one that's quick to make and calls for simple ingredients, just cabbage and carrots toss in a creamy dressing with a hint of sweetness.




Ingredients:

220g Cabbage, shredded

1/2 Carrot, shredded

Coleslaw Dressing:

40g Mayonnaise

30g Buttermilk

10g Sugar

1/2 tsp Apple Cider Vinegar

Osmanthus Coconut Jelly 椰汁桂花糕



Light and refreshing coconut jelly infused with the fragrance of the osmanthus flower, it's a perfect dessert on a hot scorching day.



Ingredients: 
材料

2 Coconut (640g Coconut Water) 椰子 

125g Konnyaku Premix Jelly Powder 蒟蒻果冻粉 

1 tsp Osmanthus Flower 桂花

Method: 步骤

1. Gently heat coconut water, gradually stir in jelly powder. 
将椰子水
加入锅里加热,慢慢加入果冻粉,不断搅拌。

2. Continue stirring. Bring to a boil and add in osmanthus flower. Turn off the heat and constantly stir until the jelly powder is fully dissolved.
继续搅拌,加热至煮滚/烧开后加入桂花。熄火,继续搅拌至果冻粉完全溶解。




3. Place coconut flesh in the jelly container, and pour in the jelly mixture (optional: pour through a sieve to filter out the osmanthus flowers). Let it cool, cover, and keep in the refrigerator for 4 hours. Serve chilled.
和椰子肉一起加入模里待凉后盖好放进冰箱。四小时后即可享用。
