Chrysanthemum & Pear Nourishing Sweet Soup 菊花雪梨滋润清热糖水


A refreshing and nourishing sweet soup that helps to relieve dry throat, sore throat and reduce body heat. It also helps to soothe and nourish the lungs. 


功效: 清热泻火,平肝明目

雪梨味甘性寒,有生津润燥,清热化痰润肺的功效。菊花散风清热。两者配合,对咽喉干,痒,痛,音哑等均有疗效。

Ingredients:
材料

130g Rock Sugar 冰糖 130克

1.8 Litre Water 水 1.8 公升

2 Chinese Pear 雪梨 2粒

25g Chrysanthemum 菊花 25克

15g Wolfberries 枸杞 15克

Method: 步骤

1. Add chrysanthemum and water in a pot, bring to boil. Turn off heat and let it sit for 5 minutes. 
菊花和水煮滚,熄火,焖5分钟。





2. Meanwhile, peel and core the pears, cut into chunks.
雪梨去皮核,切块。

3. Add pears, rock sugar and wolfberries into chrysanthemum water. Bring to boil, reduce heat and simmer for 25 minutes. Serve warm or chilled.
将雪梨,冰糖和枸杞放入菊花水里,煮滚后用中小火焖煮25分钟,即可。

Tamago Boro/ Egg Biscuits 小馒头饼干/蛋果子




Tamago Boro also known as Japanese egg biscuits, milk biscuits, mini mantou (旺仔小馒头/ Wang Zai Mini Mantou) are very popular snack well-loved by kids. These small adorable egg balls are very addictive that once you've pop one into your mouth, you don't just stop at one.

mini mantou (旺仔小馒头/ Wang Zai Mini Mantou)





Made of simple ingredients, mainly potato starch and egg, the steps are simple but require lots of patience to roll and shape into mini balls. 


Homemade Tamago Boro Egg Biscuits/ Wang Zai Mini Mantou
After baked, the diameter is about 1cm. 


Ingredients: yield 165pcs
材料

(A)

100g Japanese Potato Starch *日本片粟粉/马铃薯淀粉 100克 
*如果用普通马铃薯淀粉,份量自行调整

1/2 tsp Baking Powder 发粉 1/2小匙

15g Milk Powder 奶粉 15克

~~~~~~~~~~~~~~~~~~~~

25g Castor Sugar 细砂糖 25克
(reduce sugar if you're baking for toddler)

1 small Egg (33g without shell) 蛋液 33克

Method:
步骤

1. Sieve (A) and set aside. In another bowl, stir sugar and egg until sugar dissolved.
材料(A)过筛,蛋液和糖搅拌至溶解。





2. Combine all ingredients, mix to form a soft dough. 
全部材料拌均成软面团。




3. Portion the dough into tiny pieces and roll into small balls, about the size of a chickpea. 
搓成小球状。






4. Arrange the small round dough onto a lined baking tray. Spray some water onto the dough. Bake in a preheated oven 170'C for 12 minutes.

Piggy BBQ Pork Steamed Bun aka Char Siu Pau 可爱小猪叉烧包



Steamed Chinese BBQ Pork Bun aka Char Siu Pau is my family's all times favourite. I shared the recipe a few years back in February 2016. The previous recipe I shared was an old one that yielded soft and fluffy steamed buns that stay soft even after cooled. 

Love these juicy char siu fillings.
This time I reduced dark soy sauce, didn't use oyster sauce.
I added some char siu sauce for a brighter colour.

During busy school weeks, my son requested Char Siu Pau for breakfast again. After trial and tested a few rounds playing with natural colouring in steamed buns, I finally got the colour right with light pink using natural red yeast rice powder. My previous attempt was a little too dark pink...


This was done last year...in July 2018.

Also, I have modified the dough recipe. This method is quicker with just one proofing and without the need to add baking powder. Of course, if you have time, you can try out my old school char siew pau 家乡叉烧包 recipe, click here for the recipe

Ingredients: Yield 6 buns

(A)


150g Plain Flour/ Hong Kong Flour/ Pau Flour 中筋面粉/包粉 150克
(use Pau flour if you're new to making steamed bun, the success rate is higher 新手建议用包粉,面团比较容易操作)

1/2 tsp Instant Dry Yeast 即溶酵母 1/2小匙

20g Sugar 细砂糖 20克

(B)

85g Cold Milk 冷牛奶 85克

1 tsp Cooking Oil 油 1小匙

~~~~~~~~~~~~~~~~~~~~~~~

Red Yeast Rice Powder and Charcoal Powder 红菊粉和黑炭粉,适量

1-2 tbsp Milk, if needed 牛奶,适量

Method: 步骤

1. Mix (A) in a bowl, stir in (B) to form a dough and continue to knead for 15 minutes or until the dough is glossy and smooth.
将所有材料搅拌成团,揉15分钟或至面团光滑有弹性。

2. When the dough is ready, transfer the dough onto the tabletop. Portion out 6 x 40g dough, knead each individual dough into round shape, cover the dough with cling wrap, keep chill in the refrigerator. Use the remaining dough for black and pink dough. 
把揉好的面团先割出6份40克面团,每份搓圆,盖上保鲜纸放进冰箱。剩下的面团分别做粉红色和黑色面团。



3. Prepare the pink colour dough: knead in some red yeast rice powder and milk. Cover with cling wrap and keep chill in the refrigerator. 
粉红色面团:加少许红菊粉和牛奶,揉均。盖好,放进冰箱。

4. Prepare the black colour dough: knead in some charcoal powder and milk. Cover with cling wrap and store in the refrigerator. 
黑色面团:加少许黑炭粉和牛奶,揉均。盖好,放进冰箱。

Tips: While working on each colour dough, keep the remaining dough in the refrigerator. 
小贴士:还没操作的面团先用保鲜纸盖好放进冰箱。



5. Remove plain dough from the refrigerator, wrap in char siu fillings. Repeat for all 6 buns.
取出白面团,包叉烧馅料。





6. Remove pink and black dough from the refrigerator, gently roll the dough and shape pink as piggy ears and nose/ snouts, black for the eyes and mouth. Brush some milk on the bun to attach the facial details. You can refer here for a detailed method.
取出粉红色和黑色面团,分别造型。然后在包子上涂少许牛奶,然后粘上粉红耳朵/鼻子和黑色眼睛等。详细做法可参考这里





7. Let it proof for about 50 minutes or doubled in size and steam on high for 15 minutes. When it's done, turn off the heat, do not open the lid/ cover. Let the steamed buns rest in the steamer for 5 minutes before removing the buns from the steamer.

Homestyle Stir-fry Minced Meat & Sliced Potato 马铃薯炒肉碎/土豆炒肉末



Stir-fry Minced Meat & Sliced Potato 马铃薯炒肉碎/土豆炒肉末, a simple homestyle dish that goes very well with rice and porridge. There were two dishes that my mom used to cook using the combinations of sliced potatoes and minced meat, this was one of them and the other dish was in sweet savoury tomato sauce, both dishes were delicious and would make you want to have more rice! 

 Stir-fry Minced Meat & Potato, paired with prawn fried egg, stir-fry KangKong and rice,
delicious after-school lunch for my boy.

这是一道非常下饭的家常菜,可以配饭或粥,美味又有营养,大人小孩都会喜欢。

Ingredients: 2 servings
材料

1 Large Potato 马铃薯/土豆 1粒(大)或 2粒(小),去皮切片
(or 2 small potatoes, peeled & sliced about 5mm thick)

100g Minced/ Ground Pork 肉碎 100克

2pcs Shallot, sliced thinly 小葱头 2粒,切片

1 clove Garlic, chopped 蒜头 1瓣,剁碎

Water 水 适量

Oil for cooking 菜油 适量

Chopped Spring Onion for garnishing 青葱碎 少许


(A)

1/4 tsp Tapioca Flour 木薯粉 1/4小匙

1/4 tsp Sesame Oil 麻油 1/4小匙

A dash of White Pepper 胡椒粉 少许

1/2 tsp Light Soy Sauce 酱油 1/2小匙

(B)

1 tbsp Oyster Sauce 蚝油 1汤匙

1/4 tsp Dark Soy Sauce 黑酱油 1/4小匙

2pcs Rock Sugar (small) 冰糖 2粒(小)

A dash of White Pepper 胡椒粉 少许


(C) Optional (勾芡材料,不放也可以)

1 tsp Corn Flour 玉米粉/粟粉 1小匙

1 tbsp Water 水 1汤匙

Method: 步骤

1. Add (A) to pork and mix well. Cover with cling wrap and let marinate for 1 hour.
材料(A)加入肉碎拌均,腌制1小时。




2. Add some oil to a wok/ pan and heat the oil over medium heat. Add in potatoes, pan fry both sides until slightly brown, remove from wok and set aside.
锅里加入少许油(冷锅下油),烧热。加入马铃薯,两面煎香,离锅备用。

3. In the same wok, add in shallot and garlic, stir fry until fragrant, add in minced meat, stir fry for a minute.
用剩余的油把蒜头和小葱头爆香,加入肉碎,炒香。







4. Add in potatoes, add water just enough to cover the potatoes and minced meat. Stir in (B) and bring to a boil.
加入马铃薯和水(水的份量:刚盖过马铃薯和肉碎)。加入材料(B),煮滚。




5. Cover the wok and let simmer over medium heat for about 15 minutes or until the potatoes are softened and the sauce is slightly thickened. 
转中火,盖上锅盖,焖煮15分钟或至马铃薯煮软,收汁。




6. Stir in mixture (C), garnish with spring onion and serve warm with rice or porridge.
