Auspicious Sheep-Shaped German Cookies 喜气洋洋绵羊德国酥饼

If you like 'melt-in-the-mouth' cookies, you will definitely like this! Mild in flavour and not so sweet, it's solid when you hold it in your hand, but it'll melt when you put it into your mouth. That's how I describe these German Cookies. This is my first attempt at making German Cookies and also my first attempt at EATING them! Lol.... Don't be surprised, seriously, I hardly eat plain cookies made with butter. I like cookies with lots of nuts, chocolate chips, raisins, cranberries or anything chewy. Just don't like the plain one. :)

When I first started to shape the cookies, I made this.... look like COW? Lol... Thanks to my fellow followers who had contributed their precious opinion  ;)

I can use this design for the next COW year Lol...

The second one was this....mini baa baa sheep...

Don't try this.... really, you will go mad if you continue making this more than 10 times!
Very time-consuming!
When it's baked, it looks like this.

The third and final...much easier than the 2nd one.

I swear I'll only make 1 tray of sheep cookies because I started quite late at night, and by the time I finalised the sheep design, it was already 10pm+. So, after I finished making the sheep cookies, I used the remaining pink and plain dough to make rainbow cookies, something much easier!

Click here for Rainbow Cookies method. These are effortless compared to those sheep!

Ingredients:

250g Unsalted Butter (softened)

80g Icing Sugar

250g Potato Flour

160g Cake Flour

2 tsp Milk Powder

For decoration: Some red colouring / cocoa powder / Black Sesame Seeds

Method:

1. Cream butter and icing sugar.

2. Sift in flour and milk powder.

3. Form a dough. Cover with cling wrap and keep in the fridge for at least 1 hour. I prepared the dough in the morning and made the cookies at night.

4. Remove from the fridge, let it sit at room temperature for about 5 minutes. When it's pliable, take a small portion, divide into 2. Add food colouring and cocoa powder accordingly.

5. Shape as desired. If you want to make my sheep design, here are some pictures for your reference.

10g plain dough for the sheep body.

Use the chocolate dough to make the head, about 2g. I didn't weigh one by one, just roughly shape the dough. Add the pink dough to make sheep's ears.

Add plain dough on top to make a woolly head. Need not be neat, sheep don't comb their wool! Lol...
Add black sesame seeds to make the eyes, and finally, make a big SMILE.

For the big SMILE, if you have tools, use your tool to make it. If you do not have one, you can cut a straw to make the 'U' shape. This is easy and eco!

Then, place the head on the body. Done!

6. Place the sheep on the lined baking tray. Bake in a preheated oven 120'C 45-50 minutes, with fan.

7. Remove from oven, carefully transfer to a rack to cool.

Happy Mehh Mehhh Year, everyone!! 恭喜发财!新年快乐!喜气洋洋!

Water Cress & Honey Dates Sweet Soup - Cleanse & Nourish The Lungs 西洋菜蜜枣甜汤 - 清肺润燥, 化痰止咳

My mom cook soup everyday, just like I do... And this is my childhood favorite soup... Water Cress & Honey Dates Sweet Soup.

Simply because it's without OIL and it's SWEET. No meat, no soup bones, just 2 simple ingredients. Mom also cooked the salty version, water cress with soup bones but I hate that. Haha.... her soup always taste good, but I just don't like the taste of the water cress when it's not sweet. Lol... I'm also a picky eater...just like my boy hahaha...

But there is one thing that I don't understand...This soup taste like herbal tea, why mom serve this soup in a soup bowl on dining table, with rice?! The soup don't taste good with rice, but it's very nice to drink while it's cold, no need to chill, just room temperature. It soothe the throat, especially when I have sore throat, I can drink 3-4 glasses of this and it really makes my throat feel better.

I had swollen tonsil few days back so I bought 2 large bunches of water cress to cook this soup. Day 1, was my first time introduced this soup to my boy. Hmm... he didn't like it. So the next day when I cook this again (for myself), I got to cook another pot of soup for him.

Ingredients:

200g Fresh Water Cress

8 Honey Dates

1.5 Litre Water

Method:

1. In a pot, bring water to boil. The first step to cook this soup is crucial! If you add water cress into cold water, the soup would turn out bitter.

2. Add water cress and honey dates. Reduce heat. Cover and simmer for 2 hours.

I prefer to drink this soup before or after meal, not with the rice please... Lol.. Mom will scold me if she sees this!

Easy-To-Shape Butter Cookies 超容易造型的牛油饼干

Easy-to-shape Butter Cookies, a simple recipe that you can bake with kids and nurture their creativity.

Photo updated: October 2019

Year 2015.... The little bear will melt your heart but the cookies will not melt in your mouth. They are crunchy! I don't like plain butter cookies, these were for my little boy.

I added a tsp of cocoa powder to part of the dough (240g) to get this color.

This recipe only calls for egg yolk. So this is a good way to make use of the leftover yolk from baking Crispy Almond Bread, Roasted Almond and etc... which only calls for egg whites. They are perfect match!
