Seafood Spaghetti/ Pasta In Tomato Sauce 海鲜番茄酱意大利面


This is another easy and quick way to cook pasta with homemade Tomato Sauce.

Ingredients: 2 servings

2 cloves Garlic, chopped

1 tbsp Butter plus some oil for cooking

Handful of Mushroom 

60g Ham/ Bacon, diced

8 Scallops

6 Prawns

1/2 Squid, sliced

Some Salt & Pepper, add to taste

Water

120g Pasta - Spaghetti

Method:

1. Heat some oil, sear the scallops, prawns, and squid, season with salt and pepper, set aside. Add in butter and garlic, stir fry until fragrant. Add in mushroom and ham/ bacon, stir fry to soften the mushrooms. Season with some salt and pepper, set aside.



2. Add some warm water into the pot - 2 cups level. Add a pinch of salt and the raw pasta (break-half as shown in the pic below). Close the pressure lid, set PRESSURE COOK (HI) - 1 minute.




3. When the cooking has completed, quick-release pressure. Discard the water. Add in all ingredients. Simmer and toss to combine the ingredients, serve right away. Note: The pasta is al dente after 1 min pressure cook. If you're not cooking for young children or the elderly (who usually preferred softer texture pasta), just toss in sauce and serve. Easy Homemade Tomato Sauce for pasta, pizza, baked rice and many more! 自制西式番茄酱


We love tomato-based pasta, pizza, and baked rice! Here's a super easy and yummy Tomato Pasta Sauce recipe, so appetizing and yummy, it's perfect to toss with pasta, use as pizza topping/ spread, serve along with roasted chicken/ grilled meat, and everything else that you'd like to pair with this all-purpose sauce.

Ingredients:

1 Onion


3 cloves Garlic


1 tbsp Cooking Oil


2 tsp Salt 


1200g Peeled Plum Tomato (canned)


1 tsp Sugar


1/4 tsp Black Pepper


1 tsp Italian Seasoning

Method: 

1. Add onion, garlic, and oil into the blender. Turn on the unit, select <SAUTE>. This will takes about 5 minutes. 



2. When it's done, add in the remaining ingredients. Select <SAUCE/DIP>.  


The leftover sauce can be kept frozen in a zip-lock bag/ container.
This sauce came in handy when I need to prepare a quick meal for the kid. 


3. The program will run for 30mins.

Strawberry Moist Sponge Cake 草莓海绵蛋糕



A moist and super-soft sponge cake recipe, this cake has a pleasant strawberry aroma, tastes good on its own, also can be used as a base for fresh cream frosting. 




Ingredients:

20g Cooking Oil

100g Homemade Strawberry Syrup

70g Plain Flour 

3 Eggs

20g Castor Sugar

1/4 tsp Lemon Juice

Optional: 1-2 drops of pink food colouring if you preferred the colour to be brighter.

Method:

1. Gently heat the oil, milk and strawberry syrup, sift in the flour and mix well. 
Gradually stir in egg yolk, set aside.

2. In a mixing bowl, beat egg white and lemon juice until foamy, beat in sugar gradually, beat until stiff and glossy. Fold the meringue into the yolk mixture in 3 batches. 




3. Pour the batter into a baking pan. Spread the batter evenly. Gently tap 2-3 times on the worktop.  



4. Bake 150'C for 30mins. When it's ready, remove the cake and gently tap 1-2 times on the worktop. Invert to cool completely. Un-mould the cake, slice and enjoy!
Note: Place a damp cloth below the cake pan (optional).

Rice Cooker Sous Vide Eggs 电饭锅低温半熟蛋烹调法



This was my first attempt cooking eggs using Song Cho rice cooker Sous Vide function. It's quite easy and kind of fool-proof to make these perfect half-cooked eggs with runny yolks.

Method:

1. Add water into the inner pot (about 1/3 pot full or enough to cover the eggs).

I used Song Cho IH Sous Vide Rice Cooker


2. Close the lid, select Sous Vide function 70'C. The rice cooker will starts heating up the water and "beep" when it reaches the temperature (it takes about 20 minutes). Add in the eggs, close the lid. Remove the eggs after 10 minutes, let it sit for 5 minutes, crack the eggs and enjoy!

Homemade Strawberry Syrup/ Sauce 自制草莓果酱




Homemade Strawberry Syrup pairs perfectly with pancakes, ice cream, milk, cakes, waffles, frozen drinks and many more!

Strawberry Sponge Cake,
added homemade strawberry syrup gives it a pleasant aroma and fruity flavour. 




You only need 3 ingredients for this recipe and it's as easy as throwing the 3 ingredients into the blender and let it do the rest of the work! You can cook this over the stove-top but it doesn't get any easier than this!

370g Strawberries

160g Sugar

1 tbsp Lemon Juice

Note: You may need more or less sugar depending on your personal preference and how sweet your strawberries are, so do adjust the amount accordingly.

Tender-Crisp Char Siu aka BBQ Pork 肉嫩多汁叉烧做法



I've made Char Siu countless times and this is the best so far.  The meat is nicely caramelised and slightly charred on the outside, tender and succulent inside. 




Ingredients:

1 slab Pork Belly, cut into 4


1 tbsp Sugar 


2 tbsp Oyster Sauce 


1 tsp Garlic Pepper 


3 tbsp Char Siu Sauce 


2 tbsp Shao Xing Hua Tiao Wine 


1/2 tsp Salt 


1 tbsp Tapioca Flour

Method:

1. Combine all ingredients, let marinate overnight in the fridge. 
Tips for better flavour - use a fork, poke some holes all over the meat 




2. Heat some oil and sear the pork belly (fat side down). Add in the marinade and 150ml water, pressure cook for 10mins, quick pressure release. 


3. Simmer and slightly thicken the sauce, set aside. 
Optional: add some Char Siu Sauce to taste.

Grilled Honey Garlic Chicken Drumette 蒜香蜜汁烤鸡



This delicious chargrilled honey garlic chicken drumette is sweet, moist, and tender. It's a super easy recipe, just marinate and grill for a quick meal.





Ingredients:

6pcs Chicken Drumettes

1 tsp Honey 

Marinade: 

1 tsp Garlic Powder/ Mashed Garlic

1 tsp Sugar 

1 tbsp Oyster Sauce

1 tbsp Char Siu Sauce

1 tbsp Shao Xing Hua Tiao Wine 

1/2 tsp Salt 

1 tsp Corn Flour

Method:

1. Wash and dry the chicken drumettes with kitchen towels. Mix all marinades in a bowl, pour the marinade over the chicken drumettes. Mix well and cover with cling wrap, let marinate for 1 hour or overnight.
 




2.  Grill 8-10 minutes or until cooked through, brush a thin layer of honey, serve right away.

Walnut Cream Dessert 核桃糊




This is a popular dessert aka sweet soup/ Tong Shui in Hong Kong, China, Singapore and Malaysia. A tasty dessert that helps to improve our brain health and reduce the risk of heart disease and cancer. Walnuts are rich in heart-healthy fats and high in antioxidants, they also contain good fats, biotin, vitamin E and B6. These nuts are easily incorporated into our diet, making desserts is a delicious way to consume walnuts.  



Easy Recipe - Homemade Walnut Cream Dessert 



Here's a super-easy way to prepare Walnut Cream Dessert. This walnut cream dessert consistency is just right, so smooth, and creamy! 

核桃糊属于养生保健甜点,核桃含有丰富的蛋白质、脂肪,矿物质和维生素。可防止细胞老化、增强记忆力及抗衰老、止咳化痰,润肺补肾补血等功效。经常食用有润肌肤、乌发,及防治头发过早变白和脱落的功效。

10g Rice 

300g Water

A pinch of Salt

25g Brown Sugar

Note: My kid is not a fan of Chinese dessert, I usually cook a portion for myself. If you're cooking for your family, feel free to adjust the recipe. This soup can be used as a soup base for desserts such as glutinous rice ball aka Tang Yuan, yam paste etc.

Black Sesame Paste Mixed Nuts Traditional Mooncake 黑芝麻五仁传统广式月饼



Mixed nuts mooncake is my favourite among all the traditional mooncakes since my childhood days. These sweet and savoury mooncakes are filled with crunchy nuts, dried fruits, and the fragrance of Chinese Jin Hua ham 金华火腿. The recipe for making mixed nuts mooncakes is versatile, you can mix and tweak as many types of nuts and dried fruits combinations as you desired. 

For this recipe, I have added some black sesame paste in the fillings to replace the use of oil. This is a guilt-free and healthier alternative to mooncakes that uses oil, lard, and sweetened bean paste fillings. I've shared a traditional mooncake recipe in the previous year, therefore I'd just archive the mooncake fillings in this blog post. 



Mixed Nuts Mooncake Fillings Ingredients:

90g Toasted Almond


70g Toasted Walnut


1 Candied Tangerine


70g Candied Winter Melon


20g Cranberry 


50g Toasted Pumpkin Seeds 


20g Toasted Black Sesame Seeds


20g Toasted White Sesame Seeds


60g Cooked Glutinous Rice Flour


1 tbsp Jin Hua Ham 


1 tsp Sesame Oil


1 tbsp Wine


45g Sugar 


30g Water 


50g Cooked Glutinous Rice Flour


60g Black Sesame Paste


1/8 tsp Chinese Five Spice (optional)


1/4 tsp Salt


1 & 1/2 tbsp Light Soy Sauce


1/8 tsp White Pepper
