Lotus Root & Black Beans Pork Ribs Soup 莲藕黑豆排骨汤-营养丰富,具有补肾益气、健脾养胃、活血补血等功效


This is how I introduced black beans to my son - added a handful of black beans in lotus soup. Not only is it delicious, but this soup is also revered for its health benefits; it’s known to nourish the kidneys and qi, strengthen the spleen and stomach, and promote blood circulation while replenishing vital energy. Perfect for a cozy family meal or a nourishing treat, this soup is sure to warm both your body and soul!

Black Bean Lotus Root Pork Rib Soup
I started cooking this soup for my boy in year 2015 when he was 6yo.


Ingredients: (Yield 2-3 servings)

250g Pork Ribs

2 sections Lotus Roots (peeled and cut into chunks)

Handful of Black Beans (soaked)




2 Large Dried Fig (US)

6 Seedless Red Dates

6pcs Yu Zhu 玉竹 (optional)

Salt, add to taste

Method:

1. Rinse the ribs with hot boiling water. Transfer to a pot. Add in the rest of the ingredients except salt.



2. Add 2L hot water, bring to a boil. Cook over high heat for 30 minutes. Reduce heat and simmer for 60 minutes.

3. Add salt to taste, and cook another 30 minutes. Serve warm.
