Honey Walnut Loaf 核桃蜜糖面包


I seldom bake loaf because I prefer small buns that I can shaped in cute animal buns or flowery buns. This time, I baked this by my boy's special request, he said 'Mommy, I just want a slice of bread, egg and milk for breakfast tomorrow'. I knew why, he wants to eat just the same food as the boy in the book that he read. Alright, A SLICE OF BREAD got to SLICE from a big loaf. So I made this with the yoghurt bread recipe, added some walnut in it. By the look in the picture above, need I say more on the texture of the loaf? :)

(A)
280g Bread Flour
30g Sugar (optional)
4g Instant Yeast
2g Salt 

(B)
55g Plain Yoghurt
25g Honey
38g Egg (lightly beaten, some extra for egg wash)
125ml Milk

28g Butter 
Handful of Walnuts (chopped)

Method:
1. In a mixer bowl, mix (A) ingredients. Make a well, add in (B) except butter. 
2. Mix all ingredients. When all ingredients come together, knead in butter. Continue kneading until the dough passes the membrane test.


The dough is 'elastic' at this stage
3. Cover with cling wrap and let it proof doubled in size. About an hour.



4. Deflate and divide dough into 3. Let it rest for 15 minutes. Add some walnuts, roll up and place on the baking tin. Sprinkle some water and let it proof about 1 hour. 
5. Bake in a preheated oven 180'C for 25 minutes. (on lower rack)
