Cottage Cheese Pancakes with Ham & Corn 火腿玉米茅屋芝士松饼

These Cottage Cheese Pancakes with Ham & Corn are just what you need! Made with creamy cottage cheese, savoury ham and sweet corn kernels, these pancakes are crispy on the outside and soft, fluffy and cheesy on the inside. Every bite is packed with delicious flavours and a lovely contrast of textures.

They're simple to prepare, family-friendly and perfect for breakfast, brunch or even a light lunch. Serve them warm, straight from the pan, for the best taste!

Ingredients | For 2 servings

2 Eggs

200g Cottage Cheese (I used Onion & Chives Cottage Cheese. Optional: reserve 2 tbsp for toppings)

1/4 tsp Salt

1/8 tsp Pepper

65g Self-Raising Flour

45g Ham

70g Corn Kernels

Method:

1. Combine the first 4 ingredients, add flour and mix well. 

2. Add ham and corn kernels, pan-fry both sides until golden and crisp.
