Old Cucumber Black Eyed Peas Pork Ribs Soup 老黄瓜眉豆排骨汤【味道鲜甜,有化湿消暑、滋阴润燥等功效】


Old cucumbers are commonly used in cooking soup. Mature cucumbers are highly favoured for their nutritional values and the YIN or cooling properties that helps to reduce body heat. It's a popular home remedy in Cantonese culture to detoxify the digestive tract, nourish the body, soothe coughs/ sore throats, and contribute anti-ageing benefits. Adding black-eyed peas to the soup elevates the nutritional value and taste.

You can cook the soup in a slow cooker, pressure cooker or just boil it over the stovetop. I cooked mine using the most time-saving method which is my trusty Ninja Foodi multi-cooker. Ingredients: 


350g Pork Ribs/ Soup Bones (blanched)


30g Black Eyed Peas aka Black Eyed Beans


1 Dried Octopus, soak to rehydrate


1 Old Cucumber (about 500g)


5 Seedless Red Dates


1 tbsp Sweet Almond Kernel (南杏)


Hot Water (8 cups level Ninja Foodi Pot or 1.5L if using stove-top)


Some Salt (add to taste)

Method:

1. Place all ingredients (except salt) into Ninja Foodi inner pot or your soup pot.

2. Close the pressure lid, and SEAL. Pressure cook for 20 minutes (NPR). Switch to Sear/ Saute mode, add salt to taste, and simmer for 10 minutes. If you do not have a pressure cooker, you can boil the soup over the stovetop (med-low heat) for 2 hours, slow cooker - 4 hours.
