Easy Pumpkin Salad 南瓜沙拉【简单美味|营养丰富】




Try this Pumpkin Salad with an amazing combination of flavours, terrific as a side or as a light meal on its own. I never truly loved pumpkin salad until I made this! It is sweet, tasty, healthy, and easy to make. I must thank my sis who taught me how to make this :)


Ingredients:

300g Pumpkin


1/4 Onion, thinly sliced


1/4 tsp Salt


25g Dried Cranberries 


40g Corn Kernel (if using raw corn, steam for 5mins)


15pc Toasted Almond (I use honey butter toasted almond, gently crushed)


30g Mayonnaise


1/2 tsp Dijon Mustard


1 tsp Maple Syrup, adjust the sweetness to your preference


1/2 tsp Toasted Sesame Seeds 


Salt & pepper, add to taste

Method: 

1. Slice the pumpkin, and remove the seeds. I usually buy a whole organic Japanese pumpkin, cut and use half for steaming, half of it will be kept frozen for later use.



2. Steam the pumpkin for 15 minutes or until cooked through, set aside. 

3. Combine onion and salt, set aside for 10 minutes, and then remove the excess liquid, pat dry the onion with a kitchen towel. 



4. Mash the steamed pumpkin. Combine all ingredients, and mix well. Cover and keep chill for 2 hours/ overnight before serving as a side dish, appetizer, or light meal on its own.

Old Cucumber Black Eyed Peas Pork Ribs Soup 老黄瓜眉豆排骨汤【味道鲜甜,有化湿消暑、滋阴润燥等功效】


Old cucumbers are commonly used in cooking soup. Mature cucumbers are highly favoured for their nutritional values and the YIN or cooling properties that helps to reduce body heat. It's a popular home remedy in Cantonese culture to detoxify the digestive tract, nourish the body, soothe coughs/ sore throats, and contribute anti-ageing benefits. Adding black-eyed peas to the soup elevates the nutritional value and taste. You can cook the soup in a slow cooker, pressure cooker or just boil it over the stovetop.

Ingredients: 


350g Pork Ribs/ Soup Bones (blanched)


30g Black Eyed Peas aka Black Eyed Beans


1 Dried Octopus, soak to rehydrate


1 Old Cucumber (about 500g)


5 Seedless Red Dates


1 tbsp Sweet Almond Kernel (南杏)


Hot Water (8 cups level Ninja Foodi Pot or 1.5L if using stove-top)


Some Salt (add to taste)

Method:

1. Place all ingredients (except salt) into your soup pot.





2. Pressure cook for 20 minutes (NPR). Add salt to taste, and simmer for 10 minutes. 
If you do not have a pressure cooker, you can boil the soup over the stovetop (med-low heat) for 2 hours, slow cooker - 4 hours.

Cute Lion Decorated Toasted Baguettes With Parma Ham & Rock Melon [SG57 National Day Theme Food]



Singapore turns 57 this year... Happy Birthday Singapore! 




Patriotism spirit kicks in!  I made this National Day theme brunch using my homemade baguettes, toasted and topped with cheese and jam spread, decorated with a cute Singa (lion), along with Parma Ham and rock melon. It's easy to prep the toasts, just spray some water and toast it or bake for few minutes until crisp, then topped with your favourite spread ;)

Tried making flower pattern this time, glad that they turned out ok but there's still room for improvement. Well, I have to admit that bread scoring isn’t my forte! :P

I'll try harder next time LOL




I've been living in Singapore for 17 years, and I recently got converted to Singaporean. It's a big decision that I had made, I hope I did the right thing for my child.:) Feeling grateful to be here, may this Lion City prosper even more in the years to come!

Grilled Sweet & Spicy Pork Jowl | Char Siu [Korean-style Marinades] 韩式甜辣酱烧烤猪颈肉




Pork jowl is a cut that is flat and grilled-friendly because of its fat layer through the meat, it's tender and cooks really fast. This simple and quick grilled pork jowl with Korean Gochujang sauce is rich in savoury-spicy and sweet caramelised flavours, great to pair with rice, salad, sandwich etc.




The preparation is quite straightforward, simply marinate the meat then grill, and you'll get these tasty, flavourful and juicy pork jowl.

Ingredients:

2 Pork Jowl


1 tsp Tapioca Flour


1 tsp Light Soy Sauce


Marinade: Mix and reserve some sauce for basting the meat 


25g Ketchup 


35g Corn Syrup


25g Gochujang aka Korean Hot Pepper Paste


1 tsp Apple Cider Vinegar


1 tsp Sugar

Method: 

1. Combine pork jowl with light soy sauce, tapioca flour and marinade ingredients, let marinate for an hour or overnight.


2. Grill the marinated pork jowl  for 10 minutes, flip and baste with the reserved sauce halfway grilling. Slice and enjoy! Note: This recipe is mildly spicy and kid-friendly, you may add some hot chilli powder if you like it spicier.

Pork Ribs Rice With Chestnuts 栗子排骨焖饭 【Rice Cooker Recipe 电饭锅食谱】




This simple yet delicious chestnuts and pork ribs rice recipe is super easy to cook in a rice cooker. If you run out of ideas on what to cook, you can give it a try! 

Ingredients:

300g Pork Ribs


1 & 1/2 cup Rice


2 cups Water (+ water used to soak scallops)


100g Roasted Chestnut 


3 Dried Scallops (rehydrate & break into smaller pieces)


Marinade:


2 tbsp Oyster Sauce


1 tbsp Mirin


2 tbsp Light Soy Sauce 


1 tbsp Tapioca Flour 


1/2 tbsp Sesame Oil


1/2 tsp Dark Soy Sauce 


Optional: 1 tbsp Shallot Oil, 1 tsp sweet soy sauce, and some coriander for garnishing

Method:

1. Combine pork ribs and marinade ingredients, let marinate for 30 minutes.

I'm using Song Cho IH rice cooker

2. Add all ingredients into the rice cooker pot.


3. Select <RICE> <STANDARD>.



4. When the cooking has completed, stir in shallot oil and sweet soy sauce, garnish with coriander and serve warm.
