Eggs are one of those simple, everyday ingredients that are both nutritious and delicious. If you know how to cook them well, there are so many ways to turn a humble egg into a satisfying meal. That’s why eggs are a regular part of my home-cooked dishes. Even a simple fried egg is enough to make my boy happy! For this recipe, I added long beans to the eggs for a little extra crunch, texture, and flavour. It’s such a simple combination, but sometimes the simplest dishes are the ones we enjoy the most... especially when they’re made at home, the comforting dish we grew up eating.
Ingredients:

4 Long beans (chopped into thin pieces)
2 Eggs
2 Cloves Garlic (chopped)
Oil for cooking
Pinch of Salt
1/2 tsp Light Soy Sauce

Method:
1. In a bowl, add soy sauce and egg, lightly beat the egg and set aside.
2. Heat oil in a skillet, add garlic, and fry until fragrant. Add in long beans and salt.
3. Stir-fry until the long beans are cooked.
4. Pour the egg mixture over the long beans or alternatively, you can add the cooked long beans into the egg mixture, mix well and pour the egg mixture back into the pan. Cook until the edges are set, flip over and let it cook through.
5.
