Pandan Coconut Swiss Roll 斑斓椰香蛋糕卷


Our favorite cake goes to Pandan Chiffon Cake. I never like to make swiss roll after my first attempt on my 'half - failed' Giraffe Swiss Roll. The cake cracked while rolling up.

After many months, I tried another recipe that I modified from Ogura cake recipe. Succeeded! And then, I gained my experience by making swiss roll again and again. 


This was my 2nd attempt making swiss roll.

And now, after so many attempts, I finally mastered the skill and know how to make a presentable swiss rolls. No more crack!

3 Egg Yolk

25g Oil




14 g Pandan Extract (from fresh pandan leaves)




20g Coconut Milk (fresh/ packet)

50g Cake Flour



(B)

3 Egg White

55g Castor Sugar


(C)

Whipped Cream (click here for recipe)


Method:

Preheat oven 160'C.

1. In a bowl, mix together egg yolk, oil, pandan extract and coconut milk. Mix in flour to form a thick green paste.


Mix with a hand whisk, do not beat or over-mix.

2. Beat egg white until foamy, add in sugar gradually. Beat until stiff peak but not dry.



3. Add the green paste to egg white in 2 batches. 


Mix with hand whisk in one direction, scrape the side and bottom with a spatula.

4. Pour the batter onto a lined baking tray (23cm x 32cm). Gently tap 2-3 times on the worktop. 



5. Bake in a preheated oven for 20-25 minutes. 

6. Remove from oven, let it cool for 5 minutes. 




7. Carefully remove the baking sheet. Roll up the cake while it's still warm.




8. Let it cool completely.




9. When it's completely cooled, unfold the cake. Add whipped cream and roll up again. Keep in the fridge for at least 1-2 hours before cut to serve.



This photo was taken on the next day. It's still moist and soft even on the 3rd day.
Not sure how it would turn out after day 3 ;)

Here's the simplest swiss roll fillings.... Just Whipped Cream :)


Ingredients:

100ml Whipping Cream (chilled)





1 tbsp Castor Sugar



Method:

1. Combine whipping cream and castor sugar in a mixing bowl.

2. Whisk the cream till fluffy and stiff. Do not over beat the cream.



3. Can be used in swiss roll or other cakes fillings.

Strawberry Lemonade Smoothie - AntiOxidants & Vitamin C Booster! 鲜草莓柠檬冰沙 - 含丰富维他命C的抗氧化饮料


Strawberries are nutrient-rich and packed with anti oxidants like vitamin C. I bought some very cheap but fresh and juicy strawberries, made this heavenly delicious drinks for my boy and myself. On a hot day like this....the temperature this afternoon was at least 30'C, this drink did help to cool us down and get rid of my headache! 


Ingredients: (Yield 1 serving)

1 Cup Fresh Strawberries


I'm a fruit lover....strawberry is one that I couldn't resist! 

1 Cup Ice 

3 tbsp Honey/ Agave

Juice of 1/2 Large Lemon

Steamed Cod Fish (Easy Method) 简易清蒸鳕鱼



Snow cod is a pricey, nutritious, and delicious fish. This is a quick and easy steam fish recipe that I'd highly recommend to busy parents. Prepare the marinated fish in advance, steam this together with rice. No mess at all and of course, most importantly, it's tasty! I personally love the sweetness of the wolfberries. :)




Ingredients: 材料

1 Snow Cod Steak (about 1" thick/ 280g. Cleaned, dry with kitchen towel) 鳕鱼 1 片

2 slices Ginger (julienned) 姜 两片,切丝

1 tbsp Wolfberries 枸杞 1 汤匙

Some Chinese coriander/ spring onion (for garnishing) 芫荽 /青葱 适量



Seasoning: 调味料

Pinch of Salt, rub over the cod steak 盐 适量,涂在鳕鱼上 

1/2 tbsp Soy Sauce 酱油 1/2 汤匙

1/2 tbsp Sesame Oil 麻油 1/2 汤匙

1 tbsp Shao Xing Wine 绍兴花雕酒 1 汤匙

2 tsp Abalone Sauce (optional, I don't add this when I cook for toddler or young children.)
鲍鱼汁 2小匙,喜欢清淡的,可以不放

Steamed Cod Fish, without abalone sauce.
Suitable for young children and elderly.

The gravy is more flavourful.

My boy finished eating all the mushrooms and gravy! :P

1. Add seasoning to cod steak. Marinate for at least 15 minutes.

Winter Melon & Barley Pork Ribs Soup 冬瓜薏米排骨汤 - 清热解毒,利水消炎、降脂降压,清肠胃


A nourishing soup that not only warms your soul but also offers remarkable health benefits. This heartwarming soup is known for its ability to clear away body heat and detoxify, while also strengthening the spleen and removing dampness.

My mom normally cook this with rock sugar instead of pork ribs. My little picky eater does not like the sweet version, so I customised this savoury version for him and he likes it! :)


Ingredients: (Yield 2-3 servings)

250g Pork Ribs

1 Thick Slice Winter Melon (cut into big chunks)

Handful of Barley 

1 Dried Fig (large US fig)

5-6 Seedless Red Dates

2 Dried Scallops

Handful of Wolfberries (optional)

Some salt to taste

Method:

1. Rinse the ribs with hot water. Transfer the ribs into a pot.


2. Add in all the ingredients except salt and wolfberries. Add 2 litres of hot water. Bring to a boil. Cook with med-high heat for 30 minutes.


3. Reduce heat to medium-low, simmer for 60 minutes. Add salt to taste, cook another 20 minutes. Add wolfberries (if using), cook another 10 minutes. Serve warm.

How To Prepare Cold Soba & Dipping Sauce (aka Men-Tsuyu Sauce) 如何准备日式冷面和酱料




With a Japanese food lover at home, this isn't something new to me. When my boy was younger, he loves hot soba, but when he turn 5, he loves both hot and cold soba. 

I don't use store bought dipping sauce as the homemade version is so easy. I really don't see the needs to buy a ready-to-use sauce :)





Ingredients:

To prepare Kaeshi:

130ml Soy Sauce

2 tbsp Mirin

3 tbsp Sugar

Method:

1. Heat mirin in a saucepan to remove alcohol. When air bubbles appeared, stir in sugar until fully dissolves. 

2. Stir in soy sauce. Warm the mixture till it form a thin layer on top of the liquid (85'C). Remove from heat. Do not bring to boil.

3. It's ready!




The ratio of the dipping sauce is 3 part of Dashi : 1 part of Kaeshi. 




To prepare cold soba,

1. Cook the soba noodle as directed on the packaging. 



2. Rinse with cold water running water. End the process with some ice water. Drain and transfer to a tray or dish. Serve with the dipping sauce and some chopped spring onion.

Steamed Egg Bean Curd With Minced Meat & Dried Shrimp 香炒耗油虾米肉碎配自制蛋豆腐



This was one of my childhood favorite dish. But mom used to cook this with store bought egg bean curd, pan fried it then topped with minced meat and gravy. I used to cook like her method too until I found the way to make egg bean curd at home. 

You may not believe how simple it is to make egg bean curd at home. I can assured you, it is as simple as ABC. Just 2 main ingredients - Eggs and Soy Milk. Made with fresh and natural ingredients, clean, no preservative and no added coloring. Click here for simple homemade egg bean curd recipe. 

However, I always ended up with ugly looking egg bean curd on the final product because I failed to remove it from the dish and couldn't slice it nicely. So I thought of a smarter way to do it lol...Just leave it in the dish after steamed, add minced meat toppings! I omit the pan frying with oil spattering in my kitchen, it's actually a healthier version too.

In this blog, I only include the ratio of minced meat and dried shrimps. There's no exact measurement for the seasoning because I actually didn't measure each of the ingredients. I never cook the same amount each time. For any of you who want to try this recipe, keep every ingredients in minimal amount as the dried shrimp itself is already quite flavorful. Otherwise, your minced meat toppings may turn out too salty. 




Ingredients: 材料

100g Minced Meat 肉碎 100克 



 I'm not using lean minced meat. In fact, I used very little oil in frying the minced meat.
This would bring out the 'Wok Hei' of this dish.


25g Dried Shrimp 虾米 25克,洗干净后浸泡水里5分钟,剁碎
(washed and soaked for 5 mins, drained, chopped)






由于虾米的味道/咸度有分别,所以调味料和酱料的份量须自己拿捏

Minced Meat Seasoning: 
调味料
Soy Sauce 酱油

Sesame Oil 麻油

Ginger Juice 姜汁

White Pepper 胡椒粉



Sauce: 酱料

Oyster Sauce 蚝油

Soy Sauce 酱油

Sugar 糖

Sesame Oil 麻油

Corn Flour 玉米粉

Water 水



Some chopped spring onion. 葱碎

Method:

1. Add minced meat seasoning to minced meat. Mix well and let marinate for 20 minutes. 
把调味料和肉碎搅拌混合均匀。盖好,腌20分钟。

2. Heat oil in a skillet, add dried shrimps. Fry until fragrant and turning to brown.
烧热少许油,炒香虾米碎。




3. Add in minced meat. Stir fry (breaking it into small pieces) until cooked through or until no more sizzling sound. Stir in sauce.
加入肉碎,炒熟,加入酱料。



4. When the sauce is thicken, remove from heat. Transfer onto the steamed egg bean curd. Garnish with chopped spring onion. Serve warm with steamed rice.
