Winter Melon + Barley, my mom normally cook this with rock sugar instead of pork ribs. My little picky eater does not like the sweet version, so I customised the savoury version for him. Cook with pork ribs and this is the soup that he likes. :)
Ingredients: (Yield 2-3 servings)
250g Pork Ribs
1 Thick Slice Winter Melon (Peeled, cut into big chunks)
Handful of Barley
1 Dried Fig (US large)
4-5 Seedless Red Dates
2 Dried Scallops
Handful of Wolfberries (optional)
Some salt to taste

Method:
1. Rinse the ribs with hot boiling water. Transfer the ribs into a pot.
2. Add in all the ingredients except salt and wolfberries. Add 2 litre of hot water. Bring to boil. Cook with med-high heat for 30 minutes.
3. Reduce heat to med-low, simmer for 60 minutes. Add salt to taste, cook another 20 minutes. Add wolfberries (if using), cook another 10 minutes. Serve warm.
