Steamed Chinese Rice Rolls (aka Chee Cheung Fun) 自制蒸肠粉



Homemade Plain Chee Cheung Fun / Chinese Rice Roll

Hong Kong/ Cantonese Dim Sum restaurant is one of our family favourite dining place. I don't cook during the weekends and we usually dine out. I have a list of dim sum that I wanted to try to cook at home. Scallop Cheung Fun (aka scallops rice rolls) is one of it. That's my son's favourite! 

Today, I finally made it! Scallops Cheung Fun, Spring Onion Cheung Fun and plain ones. Let me tell you, it's really not easy to roll the Cheung Fun. I don't have a large steamer like the one used in the Dim Sum restaurant, I used my humble steamer with a small rectangle baking tin to steam it. 


These are plain Cheung Fun.
They're still soft and moist after 2 hours
(or more, I'm not sure because we finished all 8 Cheung Fun in the morning, just 2 of us!)

I failed on the first roll. Yes, all crumbled into pieces. While I'm thinking whether to continue with the 2nd roll, my son ate it and he tells me 'Mommy, it's yummy you know, I like it!' 


My first Cheung Fun, that failed...but my boy said it's yummy!
You are my sweet baby!  

Thanks to my little boy who gave me the courage to continue with the 2nd, 3rd, 4th......8th rolls. I then managed to roll it up without breaking it into pieces. And again, practice makes perfect, but my Cheung Fun, yet to be perfect! I need more practice :) 





Ingredients: (Yield 8 Cheung Fun/ rice rolls)


Dry Ingredients:

100g Rice Flour 粘米粉

10g Tapioca Flour 木薯粉

10g Corn Flour 玉米粉

1/2 tsp Salt 盐



350ml Water 水

3 tbsp Oil 油


Fillings:

Scallops/ Spring Onion/ Char Siew or any filling of your preference. Or you can omit these if you like it plain 
自己喜欢的馅料-带子,葱,叉烧等



1 stalk of Spring Onion (chopped) for garnishing 葱


Sauce: Mix all ingredients, bring to boil. Remove from heat, set aside.
酱料 :全部拌均后煮滚,离火备用。

2 tbsp Warm Water 水 2汤匙

1.5 tbsp Soy Sauce  酱油 1.5汤匙

1/2 tsp Sesame Oil 麻油 1/2小匙

1/2 tbsp Sugar 细砂糖 1/2汤匙
(can be increased to 1tbsp if you like it sweeter. 喜欢较甜的可以放1汤匙糖)

Method:


1. In a bowl, mix together all dry ingredients, water and oil until no lumps. 

将所有材料混合,搅拌均匀




2. Lightly grease a baking tin/ tray (only grease once). Preferably rectangle/ square. 

在蒸盘上涂些食油


3. Pour a thin layer of batter just enough to cover the base. Steam in a hot steamer for 1 minute.

铺一层薄薄的面糊在蒸盘。蒸1 分钟。



4. Add fillings if using. 

加馅料

5. Cover and continue to steam for 2 minutes. Remove from the steamer, roll up and transfer to a serving dish.

蒸2 分钟。取出蒸盘,卷起。

6. Repeat step 3-5 to use up all the batter.

重复步骤 3-5 直到用完面糊。

Note: 

1. For plain Cheung Fun, steam 3 minutes.没馅料的肠粉,蒸3分钟。


2. To yield smooth rice roll, scrape the rice roll in one movement without lifting up the scraper. 

7. Garnish with sauce and spring onion. Serve warm or you can keep the left over for at least 2 hours (or longer, depends on the room temperature). We made 8 rolls today, finished 6 rolls at one go, we ate the leftover after 2 hours, still remain soft and moist.)

Oven Grilled Marmite Ribs 烤妈蜜排骨




I used my good old Marmite Pork Ribs recipe today. I normally cook this with my Tefal Actifry but today is still school holiday, I have to minimise my time spent in the kitchen, thus minimise washing, so I grilled it in the oven.

Oven grilled method: 

For 350g Back Ribs

1. Transfer the marinated ribs to a deep baking dish, reserved sauce. Bake in a preheated oven 200'C for 20 minutes (Note to myself: Rack 2, Traditional Mode)

将排骨放在烤盘,放在烘炉的下层,200度烤20分钟。酱汁留着备用。

2. Baste with the reserved sauce. Flip over, bake another 10 minutes. 
(Note to myself: Rack 2, Gratin Mode)

涂上酱汁,把排骨翻过来。烤10 分钟。



3. Reset oven temperature to 220'C, flip over the ribs, transfer to rack 4, grill for 5 minutes (Grilled mode).

把排骨放在上层,220 度烤 5 分钟。

4. Remove from oven, serve warm with steamed rice.

Hokkaido Swirl Bun Filled With Chicken Floss 北海道鸡肉丝面包



Made these lovely swirl some times back.....





Filled with chicken floss, my son's favourite!

Here's some pictures to show how I made these lovely swirl.





Roll out the dough. Slit and add chicken floss as shown in the picture.






Lift and roll from the edge with chicken floss, all the way to the end.
Place on a lined baking tray for final proof.

Mystery Strawberry Yoghurt Smoothie 草莓酸奶冰沙



Sounds mysterious? My fellow readers following my Miki's Food Archives Facebook page would know who named this lol.... 

This smoothie is light and refreshing using non-fat yoghurt and frozen strawberries. A healthy, delicious and cooling drink, best to drink on a hot day! Ohh, don't forget the anti-oxidant agent! ;)


Ingredients:



8 Frozen Strawberry 

1/2 tsp Vanilla Extract

2 tbsp Honey

140g Non-Fat Plain Yoghurt (1 small cup)

Method:

1. Put all ingredients in a blender or food processor, blend it! Pour in a cup, serve right away!

Wife Biscuit 老婆饼




Wife Biscuit - A traditional Cantonese pastry with flaky crust and sweet winter melon fillings. Commonly found in Hong Kong, Singapore and Malaysia. Making this at home is possible with this simplified recipe with step by step tutorial.

This is the food that I never missed when I travel to Hong Kong. Trust me, the Yuen Long, Kei Wah and Wing Wah wife biscuit are so good that I couldn't find any similar one in Singapore. 




Today I finally made it because I wanted to bring back to my hometown to share with my sisters. Tomorrow is her birthday. I'm not making cake for her because I know she would loves this more than any other cakes ;) And, indeed this is a very special present that I bet no one would make this for birthday lol...










Ingredients & Method:

1 Egg Yolk for egg wash

Some Sesame Seeds


Filling:

120g Candied Winter Melon (blend in a blender to form paste)




1 heap tsp Oil

20g Castor Sugar

40g Cooked Glutinous Rice Flour

50g Water

1. In a bowl, add sugar + candied winter melon paste + oil + water.

2. Mix in flour and form a dough. Divide to 8 equal portions.





Water Pastry:

100g Cake Flour

Pinch of Salt

40g Shortening/ Lard

50g Water


1. In a bowl, mix together salt and flour. Add shortening to flour. Mix and form crumbs with fingers. Add water and form a dough. Divide to 8 equal portions.





Oil Pastry:

80g Cake Flour

60g Shortening


1. In a bowl, mix together all ingredients. Divide to 8 equal portions. If the dough is too soft and sticky, cover with cling wrap and place in the refrigerator to harden. 










To prepare the wife biscuit:

1. Roll out the water pastry (flat and round). Place an oil pastry in the middle. Wrap up and seal.




2. Roll it out long and flat.




3. Roll up.




4. Rotate the dough 90', roll out again (long and flat).



5. Roll up.



6. Hold up 2 sides, seal and roll it round and flat. Place the winter melon filling in the middle. Seal.




7. Sealed side face down. Gently flatten the dough with your palm. Place on a lined baking tray. Repeat for the rest.




8. Egg wash. Slit the top with a knife. Sprinkle with some sesame seeds. 



9. Crunchy Mini Cheddar Cheese Crackers 迷你车打芝士饼干(原味)



Are they cute? These mini crackers were made by my 6yo son. It's pretty easy, the only step that takes longer time is moulding/ shaping the dough. We made this right after we made the Garlicious Crispy Cheddar Cheese Crackers. If you preferred an easier cheddar cheese crackers recipe (without shaping), click here for recipe.














Ingredients: 
材料

100g Flour 面粉 100克

100g Cheddar Cheese (blend in a food processor) 车打芝士碎100克

25g Salted Butter (cold, cubes) 冷牛油 25克(含盐,切块)

1 tsp Water 水 1小匙

Method: 步骤

1. In a bowl, mix together flour and cheddar cheese with fingers. Mix in cold butter. 
将面粉和车打芝士碎混合。加入冷牛油,用手搓均。



2. Add water and form a pliable dough.
加水,揉成面团。如果太干,可以多加少许水。



If too dry, add a more water.


3. Shape as desired. Transfer to a lined baking tray.
把面团擀平,用饼干模切出自己喜欢的造型。放在已铺好油纸的烤盘上。


I didn't take photo of the mini doggie crackers.
This was another batch made with my son favourite animal cookie cutters.

4. Bake in a preheated oven 180'C for about 15 minutes, the baking time depends on the thickness and size of the crackers. 
放进已预热的烤箱,以180度烘烤15分钟或至香脆。




5. Remove from oven, let it cool on the tray. Keep in air tight container once completely cooled. Can be kept for up to a week or more.
