Garlicious Crispy Cheddar Cheese Crackers 松脆车打芝士饼干(蒜香口味)



It's school holiday now, thus I don't have much time to do baking in the kitchen. My son is going to sit for his first exam soon. It's pretty hard to explain to a 6yo what is EXAM and why he should take it seriously or at least not-so-playful during the 15 minutes exam. I tried not to give him more pressure, so the way to make me feel better besides stressing him to do more practice is to make some food with blessing. Wish him good luck and hopefully everything goes well in his exam. 

Initially, I planned to quickly make some cheddar crackers. Mix the ingredients, pipe out and bake! Sounds very simple and indeed it's simple. However, my 10 minutes of preparation + 15 minutes of baking time has turned out to be 2 hours after my boy joined me in the making. While I was piping the batter, he came to the kitchen and took over the job. Then, he extended his 'playtime' in my kitchen by baking another batch of cheddar crackers with shaping. 

The 2nd batch of Crunchy Cheddar Cheese Crackers was made by my 6yo son.

Sounds like I'm going to get mad? No, I'm not! We had fun in the kitchen and enjoyed every moment of working together to make these super tasty snacks that were filled with love and joy! :)





Ingredients:

110g Cheddar Cheese (Blend in a food processor)





1 cup Flour 

1/2 tsp Salt

1/4 tsp Curry Powder

1/2 tsp Garlic Powder 

85g Unsalted Butter (cold, cubes)

Method:

1. In a bowl, combine all ingredients (except butter). Add in cold butter.



2. The dough is very sticky and a little runny at this point. Transfer to a piping bag.




3. Pipe out the batter on a lined baking tray. 






4. Gently press to flatten for crispier crackers.




5. Bake in a preheated oven 180'C for 15 minutes.




These crackers are very crispy. Keep in an air-tight container for up to 5 days.

Homemade Rainbow Popcorn Bars - Stove Top Popcorn, No Bake, No machine needed



My sister in law makes very nice popcorns with her popcorn machine at home. Yeah, the huge one that we usually sees at the fun fair or special events. I love popcorn but not my son, the little one only like Garrett Popcorn which is too sweet for me. 



I used stove top method which is rather easy and quick. Mess-free and all done in less than 15 minutes. And the taste, trust me....it's super tasty and addictive! 



Ingredients:


3 tbsp Oil

1/3 cup Corn Kernel/ Maize Seeds





30g Salted Butter

150g Marshmallow





Some Sprinkles (optional)

Method:

1. Heat oil in a pot (medium heat), add in 2 pcs of corn kernel. Cover and wait.

2. When it pop, remove from heat. Add in the rest of the corn kernel. Cover and wait for 10 seconds. Return to heat. Gently shake the pot until all the corn kernel popped.




Here's a video show how the corn kernel pop.






3. Remove from heat. Transfer to a baking tray. Set aside.




4. Brown butter in a pot, add marshmallow. Remove from heat once melted. 





5. Stir in popcorns. 



6. Transfer to a lined baking tray. Add sprinkles (if using), press down and let it set. 



7. Once it's set, cut into small square cubes.




8. Store in airtight container or best store in refrigerator. Best serve chilled.

Curry Pork Ribs, Kid's Friendly-Non Spicy 咖喱排骨 - 小朋友都爱的, 免辣



My son loves curry but can't take any spicy food. So contradicting right? This is another of my home cooked curry specially customised for him. Non Spicy Curry Ribs.

330g Pork Ribs

1 Large Potato (cut into big chunks)







(A)

2 tsp Tapioca Flour

1/2 tbsp Soy Sauce

1/2 tbsp Sugar

1 tbsp Flour





(B)

15g Garlic (chopped)

25g Small Onion (chopped)

1 small Cinnamon Stick (about 4cm)

3 Lemongrass (chopped)

1 small Star Anise

Handful of Curry Leaves 





(C)

1/2 tsp Balacan Powder

2.5 tsp Curry Powder

Soy Sauce (add to taste)

Garlic Salt (add to taste)



(D)

3 tbsp Coconut Milk








Method:

1. In a bowl, add (A,except flour) to the ribs. Let marinate at least an hour. Stir in flour.





2. Heat oil in a skillet or pot, pan fry the ribs and potatoes separately. Or alternatively can be deep fried. Drain, set aside.






3. Heat oil in a pot, add (B). Stir fry until fragrant.




4. Stir in ribs and potatoes. Add (C) and some hot water. Bring to boil. Lower the heat and simmer until the ribs are tender.

Winnie The Pooh Macaron 维尼熊马克伦





Macarons had been listed on the first row of my 'to bake list' for so long. I bought a pack of ground almond last year, can't remember exactly which month, wanted to make macaron but never have the 'umphh' to start off.  

Until 2 days back when I saw someone posted on Facebook, a very nice Hello Kitty macaron baked by the lovely couple that gave me the motivation to start my first batch of macarons. 


I followed the recipe and method of a Youtube video shared by Ochikeron. I bookmarked this link since the day I 'thought' of making macarons. Her method looks pretty easy and indeed it's easy to follow. Below is the video if you wish to try it out! Once again, thank you Ochikeron for the great recipe ;) 



Note to myself:

1. Use cold eggs
I used cold eggs straight from the refrigerator. 

2. Dry the macaron under the fan. 

3. Baked with low temperature.

Easy Homemade Granola | Omega Mix Granola 椰香烤燕麦脆




An easy and healthy homemade granola made with a delicious mix of oats, seeds, nuts and dried fruits. Naturally sweetened with honey and makes the perfect crunchy breakfast or snack (I love eating it with yoghurt!). Preparation is pretty simple and straightforward, just gather the ingredients and bake!

Ingredients:

1 & 1/2 cups Rolled Oats

1 cup Omega Mix Seeds or use a mixture of nuts/ seeds

1/4 cup Coconut Oil (adjust the amount accordingly, if the mixture is too dry, add a little more)

1/4 cup Honey

Easy homemade granola with a mixture of oats, almonds, pecan and cranberries.

Method:

1. Preheat oven to 180'C.

2. In a bowl, mix together coconut oil and honey. Mix in the rest of the ingredients.





3.  Spread it on a lined baking tray. 




4. Bake for 10 minutes. Stir with a kitchen tong, reset the temperature to 130'C and bake until golden brown and crisp.




5. Remove from the oven and let it cool completely. Store in an airtight container. This is one of my favourite snacks! You can add any nuts or dried fruits of your preference. Eat with yoghurt or just this, very addictive and yummy!

Tooth Fairy Jelly



April 27, 2015,

My 6yo son lost his first milk tooth and he asked 'Mommy, I got to put my tooth under my pillow right? what will I get from tooth fairy?'. Hmm... Actually I don't know much about tooth fairy, then hubby told him that tooth fairy will give a coin. 

Little boy immediately thought of something else. He wants jelly instead. Then I told him I'll be his tooth fairy, give me that tooth and I'll make jelly for him. 


I made the jelly on the next day. Something new to him because this time I used Jello! For readers who are following my blog will know, I don't usually add food colouring in my son's food. Natural colours are always my first choice. This time, it's exceptional because I don't have time to prepare. It's so last minute and that's what I can thought of....Hopefully when the next tooth drop, I could have ample time to make a nicer jelly for him. The texture of this jelly is springy. Too sweet for me tho but my boy likes it.

Butter Garlic Croutons 牛油香蒜烤面包丁





~ Butter Garlic Croutons 牛油香蒜烤面包丁 ~ Crunchy, fragrant and tasty. This easy recipe is a great way to use up leftover bread in your pantry, make delicious croutons at home for soup, salad or serve this on its own as snack. 家里有吃不完的面包不要丢掉,把它切丁,加调味料,然后烘烤至香脆。可以配汤,沙拉或给小朋友当健康零食。





Crouton is on higher demand than bread in my house. It's so fragrant, crunchy and tasty! The combination of butter, garlic and parsley....Wow... it's a perfect snack for my kid at home! Need not eat with soup or salad, just these, so addictive! 

Most people made crouton using leftover bread, but we hardly have leftover bread. I have to bake extra big loaves just to make sure I have extra bread to make these crunchy snack the kid.


Ingredients: 
材料


5 slices (about 150g) Bread, cut into small cubes 150克 面包 ,切小块


Seasoning 调味料:

45g Salted Butter 牛油

1 tsp Garlic Powder 蒜粉

1 tsp Dried Parsley 香菜/ 巴西利

Method:

1. Mix all seasoning in a bowl. 

将所有调味料搅拌均匀。


2. Toss seasoning mixture with bread, place on a lined baking tray. 

将调味料和面包块搅匀,放在烤盘上。






3. Bake in a preheated oven 150'C for 15 minutes. Toss the bread, continue to bake until crispy and golden brown. Store in an airtight container once cooled.
