This tender and delicious pork rib curry is absolutely to die for! A comforting dish that goes well with steamed rice, You Tiao, noodles, bread or anything that you like.
This isn't a new dish in my home cooking menu, I've started cooking non-spicy pork rib curry for my kid since 2015. Just that now I have advance gadget, I stop using conventional method that took longer cooking time, slow-simmering to tenderise the meat. Sharing on this blog post is a simplified recipe, cooked in a much shorter time that yield flavourful and thick gravy with tender meat that fall-off-the-bones! (Watch the video below)
600g Pork Ribs
70g Curry Paste
200g Water
1 Onion
1 Potato
100ml Coconut Milk
Marinade:
1 tbsp Tapioca Flour
1 tbsp Meat Curry Powder
1 + 1/2 tbsp Curry Paste
1 tbsp Light Soy Sauce

Method:
1. Combine the pork ribs with the marinade ingredients, let marinate for an hour or overnight. Place marinated pork ribs, curry paste and water into the cooking pot, pressure cook for 30 minutes (Quick Pressure Release).

2. Add onion, potato and coconut milk. If cooking with rice, use the reversible rack and place the rice on top. Rice and water ratio is 2:3. Pressure cook for 10 minutes, natural pressure release.
