This savoury umami-packed miso pork rice is easy to cook, added mushrooms, potatoes, and Edamame to make a complete meal in one pot!
Ingredients:

140g Pork
1 tbsp Garlic
4-5pcs Button Mushroom
1 cup Rice
1 +1/2 cup Chicken Broth
1 tsp Dashi Powder
1 Potato
Handful of Edamame
1 tbsp Sweet Soy Sauce
1 tbsp Sesame oil
Marinade:
1 tsp Tapioca Flour
1/2 tsp Sesame Oil
1 tbsp Light Soy Sauce
A dash of White Pepper
1 tbsp Miso Paste
2 tsp Mirin
2 tsp Sake

Method:
1. Combine marinade and pork, and let marinate for an hour. Heat some oil in the rice cooker's inner pot, stir fry garlic until fragrant, add in mushrooms, season with a pinch of salt and pepper, stir fry for a minute, and set aside.

I'm using Song Cho IH rice cooker which comes with a stainless steel inner pot that can be used on an Induction cooker. Alternatively, you can stir fry the ingredients using the rice cooker <STEAM> mode. |
2. Add chicken broth and dashi powder into the pot, and mix well. Add in rice and top with marinated pork, mushrooms, and potatoes.
3. Select <RICE> <STANDARD>, let it cook until the cooker's timer starts to count down, add edamame.
4. When the cooking has completed, stir in the mixture of sesame oil and sweet soy sauce, and serve warm.
