Braised Pork Ribs With Red Fermented Beancurd/ Nam Yu Pork Ribs 南乳焖排骨 【Ninja Foodi - Pressure Cooker Recipe】


Nam Yu aka Red Fermented Beancurd pair well with meat and vegan dishes. I like the taste and aroma of this fermented beancurd as I've grown up eating the traditional Chinese dishes cooked with this condiment. This is a simple recipe that promises tender pork ribs with a rich savoury taste and it's easy to make if you have a Ninja Foodi/ pressure cooker at home so there's no need to cook for hours to tenderise the meat. Well, just throw the ingredients into the Ninja Foodi and let it cook!

Ingredients:

600g Pork Ribs

150ml Water

Handful of Black Fungus

6 Cloves Garlic 

Some spring onion for garnishing


Marinade:

2 tsp Grated Ginger 

2 tsp Grated Shallot

1-2 cube Red Fermented Beancurd 南乳

2 tbsp Oyster Sauce

1/2 tbsp Soy Sauce

1 tbsp ShaoXing Wine

1/2 tbsp Sesame Oil

1 tsp Dark Soy Sauce

1 tbsp Sugar

1tbsp Tapioca Flour

Method:

1. Combine marinade ingredients and pork ribs, let marinate overnight in the refrigerator. 





2. Add marinated pork ribs, garlic and water into Ninja Foodi inner pot.

Black Sesame Walnut Cream Dessert 黑芝麻核桃糊【养生保健甜点】


This is a popular dessert aka sweet soup/ Tong Shui in Hong Kong, China, Singapore and Malaysia. A healthy dessert that nourishes your body, and tastes good with a rich nutty flavour. 

Black sesame seeds and walnuts are nutritious, rich in iron, protein, fatty acids and water-soluble antioxidants. Eating them regularly may help to stabilise blood pressure, lower the risk of cancer, relieve constipation and indigestion, promote healthy hair and skin and improve brain function. 




Here's a super easy way to prepare Black Sesame Seeds & Walnut Cream Dessert, made using Ninja Foodi Cold & Hot Blender HB150. Easy Potato Salad 马铃薯沙拉



It's extremely easy to make this Potato Salad at home, serve it as a side dish, or as a light meal on its own.

Potato salad shaped into a Christmas tree,
this time I added canned pork shoulder meat to elevate the taste.

1-2 Potato

1/2 Sweet Corn or few tbsp Canned Corn Kernel

5 Japanese Crabstick (ready-to-use)

Some Japanese Mayonaise

Method:

1. Pressure cook the potato and corn (if using) in Ninja Foodi for 5 minutes or steam until cooked. Leave it to cool completely. 
Note: I use frozen corn. If using canned corn kernel, no need to cook.

Grilled Creamy Cheese Prawn 芝士焗虾 【免烤箱】



Prawn is our all times favourite! Especially love it when paired with cheese. This is a super easy recipe, quick to pull together under 10 minutes. Just spread the cheese and mayo over the prawns and let it grill in the Ninja Foodi for 6 minutes! You don't need an oven or a grill to make this. ;)




The Ninja Foodi multi-cooker that I'm using is a combination of a pressure cooker and air fryer in one pot, it's super-efficient and time-saving. Besides pressure cooking and air frying, there are other functions such as steam, slow cook, sear/ saute, bake/ roast, grill, and keep warm. I also use it for stir-frying dishes with 5 adjustable heat levels. 

It is a good all-in-one product, just like a portable kitchen with a rice cooker, pressure cooker, air fryer, oven, and stovetop functions, reasonable price, and highly versatile. The heat distribution is even and it heats up real fast compared to my other air fryer. The deep pot could prevent oil/ residues from splattering all over the crisping lid making it easy to maintain and clean. 


The one in front is my Ninja Foodi OP300 after 6 months of heavy usage, the crisping lid still as good. The one simple step is to wipe it clean with a damp cloth after use. Easy?

Method:

1. Preheat Ninja Foodi for 3 minutes. While waiting for the cooker to heat up, place the prawns on the reversible rack, stuff the slit-back with mayonnaise and cheese.





2. Place the rack on the inner pot, close the crisping lid. Select GRILL , set cooking time to 6 minutes. When the cooking is done, serve right away.

Tamarind aka Assam Prawns With Pineapple 甜酸凤梨亚参虾



This tangy Tamarind aka Assam Prawns is a very appetising dish, added pineapples for a hint of sweetness. Easily cook at home with simple ingredients. This is a non-spicy kid-friendly recipe, if you like it hot and spicy, use bird's eye chili/ chili padi as stated in the recipe. 




Ingredients:

8 Large Prawns
(Season with 1/2 tsp Salt + 1/8 tsp White Pepper)

3 cloves Garlic

1 Red Chili/ Chili Padi

1 Onion

5 Pineapple Rings

1 Sprig Coriander 
(chop the stem for cooking, leaves for garnishing)

Sauce:

1 tbsp Tamarind Paste/ Assam Jawa Extra

1 tbsp Palm Sugar

1 tbsp Fish Sauce

1 tbsp Sweet Soy Sauce

1/2 tbsp Light Soy Sauce

2-3 tbsp Water

1 tsp Corn Flour

Method:

1. Heat some oil in the wok, fry the prawns in 2 batches until half-cooked. Set aside.


I cooked this dish using Song Cho stainless steel wok, 
a multiply stainless steel wok without chemical coating, it's safe to use in any cooking.

2. Add more oil in the same wok, stir fry garlic and onion till aromatic, add in pineapple and chili padi (if using), stir fry until caramelised. Add in sauce, bring to a boil. 








3. Add in prawns, simmer for a minute. When the sauce has thickened, stir in coriander stem and chili. Garnish with coriander leaves, serve right away.
