This is the soup that I learnt from a Hong Kong TV show few years back. The original recipe uses chicken wings but I prefer to use chicken bones because no one in my house likes the meat from soup. I added some carrot to enhance the sweetness of the soup. Yummy yum yum!

Bones from 1 small Kampong Chicken/ or any part of the chicken of your preference
2 Chayote (peel and cut into chunks)
2 Medium Size Carrot (peel and cut into chunks)
Some Ginger Slices
After I watched the TV show, I did some research from internet before I cook this soup for my boy. Chayote is a very nutritious food. Click here if you do not know what's chayote. :) |
Seasoning: Add to taste
Shao Xing Wine
Soy Sauce
Sea Salt
Some oil for cooking
White Pepper (optional)
Method:
1. Heat oil in a cooking pot. Add in ginger and cook until fragrant.
3. Drizzle some Shao Xing wine. Add 1.5 litre of hot boiling water and some soy sauce (very little, about 1/4 tsp). Bring to boil. Simmer for 30 minutes.
4. Add in carrot and chayote. Cook until the chayote is soft. About 30 minutes.
5. Add some sea salt to taste. Add a dash of white pepper. Serve warm.
