Hong Kong Polo Bear Bun 可爱小熊菠萝包

Cute Polo Bear Bun ~ created on 24 April 2016.


Traditional Hong Kong Polo Bun aka pineapple bun is a kind of sweet bun topped with a streusel-like crust shaped like pineapple, a very popular snack in Hong Kong and Macau. You can find this in almost every 'char chan teng' / cafe in Hong Kong.




Traditional Polo Bun 


My latest creation - Polo Bear Bun, created on 24 April 2016.

My first batch of Polo Bun was made before I buy my first oven back in year 2014. Baked using an air fryer, made using Tangzhong method. Get the TangZhong (water roux) Polo Bun recipe here.


My maiden attempt making Polo Bun ~ June 2014, baked in an air fryer.

This time, I use the Flour Gelatinised method because I'm making this to pack in my son's recess snack box, I need soft bread that will never turn hard. This method yields the soft bread that I want, so I do not need to reheat the bread in the morning. 

Ingredients:

Basic Sweet Bread recipe using Alex Goh's flour gelatinised method:

Day 1:

(A)

100g Bread Flour 高筋面粉 100克

70g Hot Boiling Water 滚水 70克

~ Mix (A) with a wooden spoon, form a rough dough. Cover with cling wrap, let it cool and keep in the fridge overnight or at least 12 hours. ~ 
用木汤匙将(A)搅拌成团,用保鲜纸盖好。待凉后放进冰箱收隔夜或至少12小时。


Packed this cute polo bear bun in my son's snack box. 
The bear head and body are individually filled with cheese and raisin. 
My boy is so looking forward to see what he will eat first!

Day 2:

(B)

300g Bread Flour 高筋面粉 300克

100g Plain Flour 中筋面粉 100克

80g Sugar 细砂糖 80克

6g Salt 盐 6克

20g Milk Powder 奶粉 20克

9g Instant Yeast 即溶酵母 9克

(C) 

175g Cold Water 冷水 175克

1 large Cold Egg (60g without shell) 冷鸡蛋 1粒

(D)

60g Unsalted Butter (softened) 無盐牛油 60克


1. Mix all (B) ingredients in a mixing bowl, add in (C), mix until well combined. Add in (A), knead until well combined. Gradually knead in (D). 
将(B)搅拌均匀,加入(C),搅拌均匀。加入(A),揉成团,分次加入(D)。

2. Continue to knead until the dough pass the windowpane test. Watch the video if you're unsure what is windowpane test.
继续揉至面筋扩展,表面光滑,有弹性,能拉出薄膜。可以参考以下视频。






3. Transfer the dough to a lightly greased bowl. Cover with cling wrap and let it proof for 1 hour or double in size.
将面团放入已涂油的碗里,盖上保鲜纸,发酵1小时或至双倍大。

4. Meanwhile, prepare the polo crust dough: 准备菠萝皮

Polo Crust Dough Recipe(This recipe yield 6 polo bun topping):

30g Butter (Cold, cut into small cubes) 冷牛油 30克,切成小块

35g Icing Sugar 糖粉 35克

60g Cake Flour 低筋面粉 60克

2 tsp Milk Powder 奶粉 2小匙

12g Egg (Lightly Beaten) 鸡蛋 12克,打散

~ Sift icing sugar, cake flour and milk powder into a bowl. Add in cold butter cubes, mix with hand. Add in egg, form a dough. DO NOT over-knead the dough. Shape into a flattened ball, wrap with cling wrap, chill in the fridge for at least 30 minutes. The weight of the dough is about 125g-130g~
将糖粉,低粉和奶粉过筛。加入牛油,用手搓成碎粒状。加入鸡蛋,搅拌成团(不要过度搅拌)。用保鲜纸包好,轻轻压平,放进冰箱30分钟。

5. When the bread dough is ready, transfer the dough to a floured worktop. Deflate and divide the dough into your desired size. Roll into balls, cover and let it sit for 15 minutes.

将已发酵好的面团排气,分割,揉成小球形状,盖上保鲜纸,休面15分钟。

造型。步骤/图示/参考。






7. Cover with cling wrap and let it proof for 1 hour or double in size.
盖上保鲜纸,发酵1小时或双倍大。

8. Egg wash and bake in a preheated oven 180'C for 15-20 minutes or until cooked.
涂蛋液,放进已预热的烤箱,以180度烘烤15-20 分钟或至熟。

9. When it's ready, remove from the oven and transfer to a cooling rack. Keep in an airtight container when it's completely cooled.

2 Ingredients Lemongrass Drink - helps to reduce body heat/ fever, fight flu and colds ~ Pressure Cooker Recipe


Lemongrass is widely use as a culinary herb in Asian Cuisine. It is commonly used in cooking savoury dishes, dessert and as a remedy to reduce body heat/ fever/ fight flu and colds.

I use lemongrass in many of my daily cooking and brewing drinks to cool down body heats.   One of our regular drink is the Refreshing Honey Lemon + Lemongrass Drink , that I usually cook once a week for my family.


The 2 ingredients recipe that I'm sharing here is actually a simplified version, cooked in a pressure cooker. This is a quick and easy-to-prepare remedy that I made for my son when he's having fever.

2 Ingredients Lemongrass Drink


Ingredients:


12 stalks Lemongrass 
(washed, peeled and discard the outer layer, pound/ smashed with the back of a knife and cut)

Honey Rock Sugar, add to taste

Hot Water

Method: if using conventional pot, click here to read the method.

1. Place lemongrass in the WMF Perfect Pro pressure cooker (I use 3L pot).

2. Add hot water to 1/3 (refer pic 1). 

3. Close with the cover and set the knob to 1. 



4. Use medium heat until the cooking indicator rises to the first orange ring.



5. Reduce heat to low and let it cook for 7 minutes. 

6. When the cooking is over, turn off heat. Turn the knob to 'unlock/lock', do not open the cover. Wait until the orange ring go back down. When there's no more pressure, open the cover,  add honey rock sugar to taste. Repeat step 3 to step 5, cook for 2 minutes. And, it's ready!

7. Discard the lemongrass, serve warm or chilled. It taste better when it's chilled.

Mum's Special Pork Ribs, by Tammy Tng



" Liked both pages and the ans is b) Stainless Steel.

When we were young, my mum would prepare this pork ribs dish. It's one of our favourite. To me, this is my mum's signature dish as I have never come across a dish with similar taste outside. This is the dish that brings back lots of memories and holds a special place in my heart.
Never have a name for this dish and I shall name it Mum's Special Pork Ribs here.

Ingredients for 2-3pax:
500gm pork ribs

Marinate - 1/2 tbspn light soy, 1/2tbspn dark soy & 1tbspn meat curry powder.

To fry, coat the marinated ribs with 2 tbspn of cornstarch. Drain the ribs and oil after frying and set aside.

Sugar coating - 1 1/2 tbspn of fine sugar & 1/2 tbspn light soy sauce. Melt the sugar with the light soy sauce in the wok. Toss in the ribs after all the sugar mixture has melted. Mix thoroughly and evenly. Dish and sprinkle with chopped spring onions.

When my mum told me the recipe last night, well, she don't give measurements so I kind of figure out myself. Taste is pretty close to hers I must say....cheers to my very 1st attempt!

Bacon Wrapped Pork Roulade, by Audrey Ong




"Answer B stainless steel

Bacon wrapped pork roulade 


Ingredients
Minced fatty pork
Purple sweet potato (chopped)
1pkt streaky bacon
1 pkt button mushrooms
Assorted veggies to garnish
50g butter
Salt and pepper to season

Method
1. Boil and mash sweet potatoes
2. Fry and finely chop mushrooms
3. Line up bacon neatly overlapping each other vertically on a piece of grease proof paper.
4. Season minced pork with salt, sugar, pepper, mixed herbs and butter, and stir in one direction till sticky
5. Lay out pork on bacon in a thin even layer, leaving a 1 inch margin at the top/bottom.
6. Add one layer of sweet potato, and one layer of chopped mushrooms.
7. Using the grease proof paper as an aid, roll up the roulade in a direction away from you, ensuring that the bacon margin overlaps.
8. Twist the ends to secure like a large sweet wrapper, then wrap again in clingfilm, knotting the ends to secure.
9. Place the roulade in a simmering pan of water to cook and set for 10 mins.
10. Unroll roulade into a sheet pan lined with grease proof paper, and brush with melted butter.
11. Roast at 180 degrees Celsius for 30 mins until bacon is brown and crispy.
12. Remove from oven and let sit for 15 mins.
13. Slice into 2 inch thick slices and serve with garnish.
14. You can vary this recipe by being Creative with your choice of filler meat (as long as it's minced) and other fillings (as long as the flavours go together).

Cheshire Cat Bread



'Can you stand on your head?' ...... The Cheshire Cat is a fictional cat in the Alice in Wonderland story. While most people like Alice, my 7yo son who read the story, especially likes the cat. Probably it's because of its colour and its distinguishing features ~ its iconic grin and its ability to STAND ON ITS HEAD!

My boy used it as colouring sheet.
He never likes colouring sheet but mommy's drawing, it's exception!

Bakery Style Soft Bread (Easy Poolish Starter recipe)



Why are we baking bread at home? ....... Well, I would say, freshly baked bread is one of life's greatest simple pleasures. When your bread turned out to be a success ~ Soft, spongy, tasty ~ that is an accomplishment! 







This recipe is definitely a keeper. Using poolish starter, I would say this is a foolproof recipe to make soft bread and the bread stay soft for days. The texture of this bread is exactly like those that we bought from the bakery BUT these are made with NO added bread enhancer/ improver.


There is an important step that you must achieve in order to produce soft bread. Just like any other bread recipes that I shared in my blog, the windowpane test. After kneading for about 12-15 minutes, try to stretch out the dough to see if you can get the soft membrane-like texture. Watch this video if you're unsure what's the windowpane test.





This dough is easy to handle, just need to dust some flour on the dough. Here are some of my creative bread made with this recipe:

Ingredients:

Day 1: I normally get this prepared the night before, says 10pm. Start making bread at 8am the next morning. If you are working, you can prepare this in the morning and make the bread in the evening.

Poolish Starter:

125g Bread Flour

125g Water (room temperature)

1/4 tsp Instant Yeast

~ Mix all the poolish starter ingredients in a container with a wooden spoon to form a thick paste. Cover and leave it at room temperature for about 10 hours. Make sure to use a tall container for this as the poolish will rise.~


Main Dough: 

All of the poolish starter




(A)

280g Bread Flour

80g Cake Flour

25g Milk Powder

60g Sugar

8g Salt

1 3/4 tsp Instant Yeast


(B)

1 Egg

140g Milk


(C)

60g Unsalted Butter

Baked a plain loaf using this recipe using half portion of the dough.
Pan size: 11cm x 21cm

Method:

1. In a mixing bowl, mix together all (A) ingredients.

2. In a separate bowl, mix together all (B) ingredients. Pour (B) mixture into (A), add in all the poolish starter. Knead to form a dough.

3. Gradually knead in (C). 

4. When the dough passes the windowpane test, transfer to a lightly greased bowl, cover with cling wrap and let it proof until doubled in size, which takes about an hour.

5. When it's ready, transfer the dough onto a floured worktop. Gently deflate the dough, divide the dough into 12 portions. Roll into a ball, cover with cling wrap and let it sit for 15 minutes.

6. You can roll it up to bake a loaf or shape as desired. Get some bread-shaping ideas here.

7. Cover and let it proof for 45 minutes or doubled in size. Egg wash and bake in a preheated oven 180'C for 12-15 minutes. 

8. When it's ready, transfer to a cooling rack. Store in an airtight container when it's completely cooled.
