Easy Peasy Eggless Banana Walnut Muffin 香蕉核桃麦芬,不含鸡蛋

Before today, if you were to ask me whether to make muffins with eggs or without eggs, without second thought, I would tell you 'with eggs of course!',, after this morning 'battle' in the kitchen, yeah I can assured myself, at least, eggless muffin is DELICIOUS!

As I said I was super rush this morning, I have no time to cream butter or whatsoever, just mix everything with a whisk and bake! Thanks to my unplanned baking that had came out with the super fluffy and yummy muffins recipe :) I'll definitely make this again and again, perhaps can add a little 'banana's best friend' ...haha... guess what's that? I bet people who likes banana muffins like me would know the answer.

Packed this for my son to eat during school recess.

Ingredients: (Make 7 small muffins)


100g All Purpose Flour 面粉 100克

1/2 tsp Baking Powder 发粉 半小匙

1/2 tsp Baking Soda 小苏打 半小匙

Pinch of Salt 盐 少许

A dash of ground cinnamon, optional 肉桂粉 少许 (随意,不放也可以)

38g Unsalted Butter (Melted) 无盐牛油 38克,融化

75g Castor Sugar 糖 75克
(can be reduced to 50g if using demerara sugar for toppings)

2 Large Banana (about 230g, very ripe, mashed) 香蕉 2条,大概230克,压成泥

Handful of Raw Walnuts 核桃碎 少许,7粒核桃做装饰
(Chopped or just put in the small ziplock bag and smash, serve 7 pieces for toppings)

Some Demerara Sugar (Optional, for toppings)

1. Preheat oven 190'C.

2. Sift (A) to mix well. Set aside.

3. Mix melted butter and sugar with a folk. When it come together, mix with a whisk.

Note: No beating/ creaming, just roughly mix with whisk. 

4. Add the butter sugar mixture into mashed banana, mix well.

5. Stir in (A) and mix until just well combined (no more lumps).

6. Stir in chopped walnuts. 

7. Pour into 7 small muffin cups evenly. Topped with a walnut and sprinkle with very little Demerara sugar on the walnuts (optional).

8. Bake for 20 minutes or until muffins are golden brown.
