Homestyle Stir-fry Minced Meat & Sliced Potato 马铃薯炒肉碎/土豆炒肉末



Stir-fry Minced Meat & Sliced Potato 马铃薯炒肉碎/土豆炒肉末, a simple homestyle dish that goes very well with rice and porridge. There were two dishes that my mom used to cook using the combinations of sliced potatoes and minced meat, this was one of them and the other dish was in sweet savoury tomato sauce, both dishes were delicious and would make you want to have more rice!

这是一道非常下饭的家常菜,可以配饭或粥,美味又有营养,大人小孩都会喜欢。

Ingredients: 2 servings
材料

1 Large Potato 马铃薯/土豆 1粒(大)或 2粒(小),去皮切片
(or 2 small potatoes, peeled & sliced about 5mm thick)

100g Minced/ Ground Pork 肉碎 100克

2pcs Shallot, sliced thinly 小葱头 2粒,切片

1 clove Garlic, chopped 蒜头 1瓣,剁碎

Water 水 适量

Oil for cooking 菜油 适量

Chopped Spring Onion for garnishing 青葱碎 少许


(A)

1/4 tsp Tapioca Flour 木薯粉 1/4小匙

1/4 tsp Sesame Oil 麻油 1/4小匙

A dash of White Pepper 胡椒粉 少许

1/2 tsp Light Soy Sauce 酱油 1/2小匙

(B)

1 tbsp Oyster Sauce 蚝油 1汤匙

1/4 tsp Dark Soy Sauce 黑酱油 1/4小匙

2pcs Rock Sugar (small) 冰糖 2粒(小)

A dash of White Pepper 胡椒粉 少许


(C) Optional (勾芡材料,不放也可以)

1 tsp Corn Flour 玉米粉/粟粉 1小匙

1 tbsp Water 水 1汤匙

Method: 步骤

1. Add (A) to pork and mix well. Cover with cling wrap and let marinate for 1 hour.
材料(A)加入肉碎拌均,腌制1小时。




2. Add some oil to a wok/ pan and heat the oil over medium heat. Add in potatoes, pan fry both sides until slightly brown, remove from wok and set aside.
锅里加入少许油(冷锅下油),烧热。加入马铃薯,两面煎香,离锅备用。

3. In the same wok, add in shallot and garlic, stir fry until fragrant, add in minced meat, stir fry for a minute.
用剩余的油把蒜头和小葱头爆香,加入肉碎,炒香。







4. Add in potatoes, add water just enough to cover the potatoes and minced meat. Stir in (B) and bring to a boil.
加入马铃薯和水(水的份量:刚盖过马铃薯和肉碎)。加入材料(B),煮滚。




5. Cover the wok and let simmer over medium heat for about 15 minutes or until the potatoes are softened and the sauce is slightly thickened. 
转中火,盖上锅盖,焖煮15分钟或至马铃薯煮软,收汁。




6. Stir in mixture (C), garnish with spring onion and serve warm with rice or porridge.
