Rabbit/ Bunny Red Bean Paste Snowskin Mooncake 月兔/玉兔红豆馅冰皮月饼【免烤月饼食谱】


Mid-Autumn Festival is around the corner. This year, I have made two different types of rabbit mooncakes using my new mooncake mold, the baked and non-baked aka snow skin mooncakes. Aren't they cute?

These adorable moon rabbit mooncakes are filled with red bean paste with a soft and chewy layer of snow skin. I like recipes without shortening, premix flour, or Gao Fen (糕粉) because I only make a small quantity, I preferred simple ingredients that I can get in my pantry, no need to buy extra ingredients just for mooncakes. ;)



Ingredients: 材料

2 tbsp Glutinous Rice Flour (for dusting) 糯米粉 2汤匙 (手粉)

1x 50g *Mooncake Mould 50克的月饼模具

6x 25g Red Bean Paste 红豆馅 6x 25克


Snow Skin Dough: 冰皮材料


90g Milk 牛奶 90克

25g Glutinous Rice Flour 糯米粉 25克

20g Rice Flour 粘米粉 20克

10g Wheat Starch 澄面粉 10克

20g Icing Sugar 糖粉 20克

15g Coconut Oil/ Peanut Oil 椰子油/花生油 15克

Method: 步骤

1. Prepare cooked flour for dusting: 准备手粉

Microwave method: Cook 2 tbsp glutinous rice flour in the microwave (800W) for 1 minute. Stir and cook 30 seconds. Stir and cook another 30 seconds. Remove from microwave and set aside. If cooking more flour, increase the cooking time. 
微波炉:微波煮两汤匙糯米粉,搅拌后煮30秒,搅拌后再煮30秒或至没有生粉的味道即可。

Stovetop method: Fry fry the glutinous rice flour in a pan over low heat until slightly yellowish.
平底锅:低温干炒至没有生粉的味道即可。


2. Mix all dough ingredients in a bowl, pour through a sieve. Steam in a hot steamer for 20 minutes. 
把所有冰皮材料混合,过筛。蒸20分钟。




3. Remove from steamer, use a pair of wooden chopstick, stir the cooked dough until smooth. If making a bigger portion, use a stand mixer. Cover with cling wrap, chill for 15 minutes.
蒸好立刻用筷子搅至顺滑。盖上保鲜纸放进冰箱冷藏15分钟。







4. Divide dough into 6 portions (25g each), roll into ball.
分割6份25克冰皮面团,揉成小球状。

5. Assemble mooncake: Wrap in fillings, roll into ball, dust with some cooked flour. Use a mooncake mold, shape and imprint designs. 
包入馅料,撒上少许手粉,用月饼模印上图案。





6. Put in mooncake case/ air-tight container, chill for an hour before serving. Best consumed within 3 days.

SG Hawker-Style BBQ Chicken Wings 新加坡烤鸡翅


There's no need BBQ grill to cook this SG famous hawker-style BBQ chicken wings. Just air-fry in the Ninja Foodi using the Air-Crisp function, it's so quick, easy and mess-free. If you like it more "char", use the Grill function. 


 

The Ninja Foodi multi-cooker that I'm using is a combination of a pressure cooker and air fryer in one pot, it's super-efficient and time-saving. 10 Chicken Wings

Marinade:

1 tsp Cornflour 

2 tsp mashed Garlic

1 tsp grated Ginger

2 tbsp Oyster Sauce

1 tbsp Fish Sauce

1 tbsp Honey

1/2 tbsp Light Soy Sauce

1/2 tsp Salt

1/4 tsp White Pepper

1/2 tbsp Sesame Oil

1/2 tbsp Shao Xing Hua Tiao Cooking Wine

Method:

1. Wash and pat dry chicken wings.



2. Add in all marinade ingredients, cover with cling wrap and marinate overnight.





3. Preheat Ninja Foodi - Set Air Crisp mode 180'C 5mins. Place chicken wings in the Cook & Crisp Basket (lightly grease), Air-Crisp 180'C for 12 minutes or till cooked through. Serve right away. 

Note: If cooking a bigger portion, adjust the cooking time accordingly.

Pressure Cooker Ayam Pongteh/ Nyonya Chicken Stew 娘惹豆酱焖鸡【高压锅食谱】



Nyonya chicken stew with potatoes aka Ayam Pongteh is a Melaka dish cooked in fermented soybean sauce, added gula Melaka for the sweetness and aroma. 

In this blog post, I'm sharing a simplified recipe cooked using Ninja Foodi, which is able to bake the potatoes with minimal oil used compared to pan-frying/ deep-frying, saute ingredients and pressure cook the chicken together with rice. It's so quick and easy to cook everything in a pot that is mess-free, less oily and healthier.




Ingredients:

360g Chicken 

1 tsp Corn Flour

1 tbsp Oyster Sauce 

1/2 tbsp Dark Soy Sauce 

2 Potato (peel and cut into chunks) 

9 cloves Garlic (minced) 

1 Onion (minced) 

25g Soy Bean Paste 

1 small cube of Gula Melaka 

3 large Shiitake Mushroom (cut into chunks) 

Some Water and Cooking Oil

Method:

1. Marinate chicken with corn flour, oyster sauce and dark soy sauce.




2. Lightly coat potatoes with some oil, bake in Ninja Foodi 210'C for 5 minutes. Remove the potatoes from the pot, set aside. 



3. Select Sear/Saute mode, heat oil and fry the onion and garlic till fragrant, add in mushrooms and continue to stir fry for a minute.


4. Add in the rest of the ingredients.


5. If cooking with rice, use the reversible rack and place the rice on top. Rice and water ratio is 2:3.





6. Pressure cook in Ninja Foodi on high for 3 minutes, natural pressure release 10 minutes. Chicken Satay With Peanut Sauce 沙爹鸡肉串【气炸锅食谱】

Ingredient: 
材料

1 Boneless Chicken Leg, cut into chunks 去骨鸡腿肉 1 片,切块

4 tbsp Satay Sauce/ Spicy Peanut Sauce (heat up before use) 沙爹酱 4汤匙


Marinade 腌料:

2 tbsp Satay Sauce/ Spicy Peanut Sauce 沙爹酱 2汤匙
(can use any brand, adjust the seasoning accordingly)

1/4 tsp Curry Powder 咖喱粉 1/4小匙

1/4 tsp Turmeric Powder 黄姜粉 1/4小匙

1 tsp crushed Garlic 蒜茸 1小匙

1 tsp Lemon Juice 柠檬汁 1小匙

1/4 tsp Sugar 细砂糖 1/4小匙

2 tsp Light Soy Sauce 酱油 2小匙

1/2 tsp Sesame Oil 麻油 1/2小匙

Dash of White Pepper 胡椒粉 少许

1/2 tsp Sea Salt 盐 1/2小匙

1 tsp Corn Flour 玉米粉 1小匙

Method:

1. Mix marinade ingredients and chicken meat, let marinate in the refrigerator for 2 hours or overnight.
