Michelin One-Star Restaurant - Famous Dish - Culinary Workshop - Photos Archive




31 March 2018 - Spent an afternoon at a Culinary Workshop, so happy that I get to learn the Michelin One-Star Restaurant famous dishes - Bian Rou and Fried Heng Hwa Bee Hoon. Actually I don't really like to eat Bian Rou, my objective to join this workshop is to reveal the secret recipe of Fried Heng Hwa Bee Hoon that I have tried cooking it at home but the taste is not 100% same like the one we had at the restaurant. 

Now, I think I know why... Thank you Chef Guang Lin for sharing some really useful tips with us.

It's nearly impossible to cook Bian Rou at home because there's no way we can pound the meat into paper thin wrapper at home. However, I will try to replicate the Heng Hwa Bee Hoon, when the recipe is ready, I'll share the details. Fluffy Sweet Potato Pancakes 番薯/地瓜松饼


An excellent source of vitamin A, B6 and dietary fibre, sweet potatoes are a serious nutritional powerhouse. This pancake recipe that I'm sharing here is made with nutrient-packed sweet potatoes. 

These sweet potato pancakes taste absolutely delicious and they are very easy to make, cook quickly and reheat well. You can make these using fresh sweet potatoes or sweet potato powder. It's a perfect low-profile way to sneak some root veggies into the kid's breakfast. ;)

These Sweet Potato Pancakes are made using sweet potato powder by mixing the sweet potato powder and water to form a smooth paste before adding it to the pancake batter.

I print the Pooh Bear pictures on the pancake using Hot Stamp Tool.
Hot Stamp Tool can be purchased from DGZ SHOP.
Choose standard designs from the templates HERE or make your own customised designs/ logo.


Ingredients: Yield 8 pancakes

110g Sweet Potato Puree or use 30g Sweet Potato Powder + 
80ml Water

215g Fresh Milk

1 Egg

100g Self Raising Flour or use All Purpose Flour + 2 tsp Baking Powder

1/4 tsp Salt

Optional: You may omit these if making for young children

2 tbsp Castor Sugar 

1/2 tsp Vanilla Extract

1/2 tsp Ground Cinnamon 

Sweet Potato Pancakes made using fresh sweet potatoes (without ground cinnamon)

To prepare the sweet potato puree:  steam & blend or mash the cooked sweet potatoes through a strainer. It can be prepared ahead of time.

Method:

1. In a bowl, lightly whisk together the egg, sweet potato puree,
 fresh milk, and vanilla extract, if using.

2. Sift in the rest of the ingredients and mix well.



3. Lightly grease a nonstick pan with a few drops of oil, use a kitchen towel to wipe off excess oil. Heat the pan over medium heat. Scoop and pour the batter onto the pan, using approximately 1/4 cup for each pancake. 



4. Flip the pancake when starts to bubble. Brown both sides, repeat for the rest and serve warm with your favourite toppings.
Note: the moisture of the sweet potatoes may vary, do adjust the amount of liquid and flour accordingly.

This is my family's all times favourite noodles, stir-fry minced meat served with egg noodles added homemade shallot oil, sesame oil and some sauces that made it so fragrant and delicious. For toppings, I made cute little kitty cats from quail eggs, just to make it more appealing for the little one to eat at school.

这是我家人常年都喜欢吃的肉碎干捞面。鸡蛋面配上香炒肉碎再加入自制的葱油,麻油和酱油,使它香味浓郁。 我用鹌鹑蛋制作了可爱的小猫咪,希望孩子在学校用餐愉快。





How I make it: 

1. Cook and shape the quail eggs into kitty cats. Add facial details using seaweed. 




2. Cook minced meat.

3. Cook the noodles as per package instruction. When the noodles is ready, toss with some sesame oil, shallot oil, sugar/ sweet soy sauce, soy sauce, dark soy sauce and white pepper, add to taste.




4. Assemble - add some spinach and fish cake slices, topped with fried shallot.

Buddy's Best Day Ever - Cute & Delicious Teddy Bear Kung Bo Chicken Sandwich for KidZania KIDZ & FOOD Family Cook-Off Event



I'm honoured to be invited by KidZania Singapore to make a special guest appearance at their first ever Family Cook-Off event. The event took place at the Main Square at the City. It was a fun-filled and exciting event and it's great to see how family bonded together to create delicious and lovely meals.

My boy named this Buddy's Best Day Ever.

New recipe, taste test done before the event. 


We have created a simple meal specially for this event, the dish is Buddy's Best Day Ever aka Kung Bo Chicken Sandwich, decorated with adorable teddy bears made of hard boiled egg. We prepared this meal alongside with the Family Cook-Off contestants at KidZania, a place where kids play so something cute, extremely kid-friendly and delicious would be perfect for this event. 




My boy and I had a wonderful experience and play time at the Kidz & Food Event. Here are some of the photographs taken during the event.

KIDZ & FOOD event 1 March - 25 March 2018

Happening right now at KidZania Singapore ~ Improve your mood with delicious foods when you head down to KidZ & Food event! From now till 25 March, the City transforms into a fun, food hub filled with tons of activities where kids can play real life "masak-masak". Kids can learn all about how different ingredients complement each other to make a dish or drink and even prepare it themselves.
