Salted Egg Yolk Squid/ Sotong 咸蛋黄苏东【免油炸 Ninja Foodi Air Fryer Recipe】



A quick and easy Fried Squid aka Sotong, coated with creamy salted egg yolk sauce. This is a simplified recipe without deep-frying in oil. Steaming, air-frying and stir-frying, all done in one pot. 

~ Use STEAM mode to steam the salted egg yolk.
~ Use AirCrisp mode to air-fry the squid with minimal oil used.
~ Use Saute/ Sear mode to cook the sauce. 

These Air Crisp squids taste as good as the deep-fried version, minus the oil in the food and your kitchen floor ;)



Ingredients:

150g Squid 

3 Salted Egg Yolk

2 tbsp Self Raising Flour

1 tbsp Rice Flour

2 tbsp Egg

10g Butter

Marinade:

1/2 tsp Salt

Dash of White Pepper

1/2 tsp Sesame Oil

Salted Egg Yolk Sauce:

1/2 tsp Sugar

1/2 Red Chili (use 1 Bird's Eye Chili/ Cili Padi if you like it spicy)

1 sprig Curry Leaves

Pinch of Salt

Method:

1. Combine marinade ingredients with the squid. Let it sit for 10mins. Meanwhile, steam salted egg yolk in the Ninja Foodi for 8 mins, and mash.








2. Stir flour and egg into the squid to form a thick paste. Adjust the amount of flour and egg if needed. Preheat Ninja Foodi AirCrisp mode 210'C 3mins. The Ninja Foodi that I'm using is a combination of a pressure cooker and air fryer in one appliance, it's super-efficient and time-saving. Besides pressure cooking and air frying, there are other functions such as steam, slow cook, sear/ saute, bake/ roast, grill, dehydrate, sous vide, yoghurt, and keep warm. 3. Place the squid on the Cook & Crisp Basket, Air-Crisp for 6 mins or until crisp and golden. Remove the Cook & Crisp Basket from the pot. 




4. Switch to Saute/ Sear mode, heat butter and salted egg yolk till foamy. Stir in curry leaves and chilli. 




5. Turn off the heat. Season with sugar and salt, stir in squid quickly and serve right away.

Note: Spray some oil on the Cook & Crisp basket and squid before air-frying. I used slightly chilled squid, crisps-up using high-temperature 210'C. This way, the squids would be tender and nice. If you do not have an air-fryer, you can deep fry the squid.;)
