A delicious and appetising Crispy Chicken Cutlets in sweet and sour sauce go great with rice. This is a simplified recipe cooked without deep-frying to achieve crispiness with minimal oil used.
Ingredients:

3 Boneless Chicken Thigh/ Drumstick
1 Egg
5-6 Soda Cream Cracker, crushed
1/2 Red Onion, sliced
1 Tomato or 5 Cherry Tomatoes
2 cloves Garlic, chopped
2 tbsp Green Peas
Some Pineapples
Some Cooking Oil/ Oil Spray
Marinade:
1 tsp Corn Flour
1/2 tsp Salt, reduce the amount if using table salt.
1/8 tsp White Pepper
1/4 tsp Garlic Powder
1/2 tsp Chicken Powder
1/2 tsp Sesame Oil
Sauce:
3 tbsp Ketchup
1 tbsp Plum Sauce
1-2 tsp Vinegar, add to taste
1/2 tsp Maggi Seasoning
1 tbsp Oyster Sauce
1-2 tsp Sugar, add to taste
1.5 tsp Corn Flour
4-5 tbsp Water

Method:
1. Coat the chicken meat with the marinade ingredients, let marinate for 1 hour or overnight.
2. Coat the meat with egg and soda cream cracker crumbs. Preheat air-fryer 180'C 3mins (or you can deep-fry the chicken cutlets)
3. Spray/ brush some oil on the cooking basket, place chicken cutlets on the basket, spray/ brush some oil on the chicken cutlets, air-fry 180'C 15mins. Set aside.
4. Heat some oil in the pot, stir fry onion and garlic until fragrant. Stir in green peas, stir fry for a minute.
