Cute Bear Chocolate Bread 小熊造型可可软面包



Revisiting an old chocolate bread recipe that I previously made back in December 2014 during Christmas season that I shaped the bread into small Rudolph bun. This time, I made cute little bear buns. Guess which one is my boy's favourite bear? .....as usual, the odd one out! :D 







Ingredients: 材料

(A)

220g *Bread Flour 高筋面粉 220克

40g *Cake Flour 低筋面粉 40克

10g Cocoa Powder 可可粉 10克

1 tsp Instant Yeast 即溶酵母 1小匙

70g Castor Sugar 细砂糖 70克

Pinch of Salt 盐 少许

(B)

180ml Fresh Milk 鲜奶 180毫升

30g Unsalted Butter 牛油 30克


(C)-Optional - Fillings 馅料

Hazelnut Chocolate Spread 巧克力酱

Method:
步骤

1. In a mixer bowl, mix (A) ingredients. Make a well, add in (B) except butter. 
把材料(A)放进搅拌机,拌均后加入材料(B)。




2. Mix all ingredients. When all ingredients come together, knead in butter. Continue kneading until the dough passes the membrane test.
搅拌成团,加入牛油,继续搅拌至有弹性并能拉出薄膜。

3. Cover with cling wrap and let it proof doubled in size. About an hour.
盖上保鲜纸,发酵至双倍大。

4. Deflate and divide dough. Let it rest for 15 minutes. Add fillings and shape as desired. Sprinkle some water and let it proof about 1 hour. 
排气,分割面团。休面15分钟。包入馅料,造型后发酵大约1小时。





5. Bake in a preheated oven 170'C for 15 minutes. Remove from oven and let it cool on the rack. When it's completely cooled, decorate with melted chocolate.

Cute Bear Mooncake Festival Onigiri (with Marmite Roast Chicken) 小熊中秋节赏月饭团


Rice Based Food Art - Cute Bear Mooncake Festival Onigiri 小熊中秋节赏月饭团. Mid Autumn Festival is all about celebration with the family, colourful lanterns and yummy mooncake. This is a lovely and hearty lunch that I have prepared for my 9yo son. Teddy bears are made of rice, paired with some veggies and yummylicious Honey Glazed Marmite Roast Chicken Drumsticks. 


Last year, I have made a single bear eating mooncake alone.

This year, little bear found a companion. Two little bears sitting side by side, holding a lantern... 赏花,赏月。。how lovely!

2. Portion out some rice, 1 part mix with dark soy sauce and leave the remaining plain. Mould into bear shapes as shown in the picture below. Blanch the broccoli in chicken broth while shaping the rice.





3. Line some lettuce on the lower part of the serving plate. Place one roasted drumstick on the left side. Place broccoli on top to make the tree.







4. Place the rice as shown in the picture below. Decorate with some flowers made of crabsticks and lantern made of cherry tomato.






5. Place a home baked cookie as the moon. I have baked some cookies this morning using my mooncake mould. 





That's the 4 in 1 mooncake mould that I used to make mooncake, well actually it works very well for cookies!

Totoro Seaweed Congee 龙猫紫菜粥


Rice Based Food Art ~ Cute Totoro made of toasted seaweed layered on home cooked congee. Side dishes are Steamed Cod Fish 清蒸鳕鱼 and stir-fry assorted vegetables with egg in thick broth. This was specially made for my kid who loves Totoro. 




My boy had ulcer and he wanted to have congee with seaweed for quick lunch before heading to classes. I cooked the congee in the morning and keep warm in the Thermos Shuttle Chef to serve for lunch and dinner later. 


How I made it:

1. To cook congee: 

Rinse and pre-soak the rice for 30 minutes. Add water and boil on high for 30-40 minutes. If using Thermos Shuttle Chef, boil on high for 10-15 minutes, transfer the inner pot to the outer Shuttle Chef, let the remaining heat continue to cook the congee.

Ingredients: 

100g Rice + Water, yield 2 servings. This is the basic measurement for reference. x2 for 4 servings ...etc..

4. Prepare Totoro seaweed congee:

When the congee is ready, scoop into a bowl.


Place some toasted seaweed into a ziplock bag, smash into smaller pieces.

Layer the seaweed onto congee.

Make 3 holes using chopsticks. Carefully fill the holes with some congee.

Add other details using seaweed.

Cute Totoro congee is ready, serve warm with the side dishes.

Taiwanese Braised Minced Pork With Rice 台式香菇肉燥饭 [Rice Cooker Recipe 电饭锅食谱]




This is a Taiwanese style rice dish commonly seen throughout Taiwan. The flavor may vary from one region to another but the basic ingredients remain the same, stir fried marinated ground pork and braised in flavourful gravy, served with braised egg on top of steamed rice.


Delicious meal cooked in a rice cooker.


While waiting for the kid to take shower, I made the braised eggs into little chicks.
Aren't they cute? ;)


I usually cooked this dish over the stove top, thicken the sauce with corn starch solution to make it glossy. The recipe that I'm sharing here is a simpler version cooked in a rice cooker together with steamed rice. 2 in 1 dish ready at the same time, I used this cooking method when I was away from home and need to serve lunch immediately after I fetch my hungry kid from school. When I used this method, I usually don't add corn starch solution, so it'll taste as good when I serve the leftover for dinner later. 


Served with noodles for dinner.

This is the rice cooker that I used to cook this easy 2 in 1 meal. Besides using the steam rack to cook rice, it can be used to steamed other dishes (steamed chicken, steamed ribs etc...)  while cooking rice using the rice cooker inner pot.

Ingredients: 材料
(yield 3- 4 servings)

* 380g Minced Pork 肉碎 380克

4 cloves Garlic, minced. 蒜头 4瓣,剁碎

8 Shiitake Mushroom, diced. 香菇 8颗,切粒

4 Hard Boiled Egg 鸡蛋 4粒,煮熟去壳


(A)

15g Ginger, grated 姜茸 15克

2 tsp Light Soy Sauce 酱油 2小匙

2 tsp Sesame Oil 麻油 2小匙

* If using lean meat, add 1 heap tsp Tapioca Flour 木薯粉 1小匙满


(B)

55g Rice Wine 米酒 55克

50g Light Soy Sauce 酱油 50克

25g Dark Soy Sauce 黑酱油 25克

30g Rock Sugar 冰糖 30克

1/2 tsp Chinese Five Spice Powder 五香粉 半小匙

1/2 tsp White Pepper 胡椒粉 半小匙

1 Bay Leave 月桂叶 1片

1 Cinnamon Stick 肉桂棒 1条

15g Fried Shallot 炸葱头 15克
(I used homemade fried shallot. Alternatively, you can slice 6 shallots, fry in hot oil, remove the fried shallot and use the oil to start cooking in step 1)

400ml Hot Water 热水 400毫升


(C) - optional (steamed rice for 2 servings.) 两人份的白饭

150g Uncooked Rice, washed and rinsed + some water (water level about 1cm above the rice.)  香米 150克,洗净后加入适量的水

Method: 步骤

1. Add ingredients (A) into minced meat, mix well. Cover and let marinate for 2 hours. 
肉碎加入材料(A),拌均,盖上保鲜纸腌两小时。




2. To cook: Plug in Song Cho rice cooker. Press <MENU> function button, select <STEAM> function, press and hold the <START> button for 2 seconds.
先把松厨电饭锅插电开启。按《MENU 功能》 键,选择《STEAM 蒸煮》功能。长按2秒《START 开始》键。

3. Add oil into the inner pot, when the oil is heated, add in garlic, stir fry until fragrant and slightly brown. 
电饭锅内锅加入油,烧热后加入蒜头,爆香至少许上色。




4. Add in minced meat, break into smaller pieces, stir fry until half-cooked, add in mushrooms, stir fry for a minute.
加入肉碎,拌炒至半熟,加入香菇,拌炒一分钟。




5. Add in ingredients (B), mix well. Add in eggs.
加入材料(B),拌均。加入鸡蛋。





6. Optional: Put the steaming basket on the inner pot, place the bowl of the uncooked rice (C)  onto the steaming basket. Close the lid.
放入电饭锅的蒸架,放入米饭,盖上。





7. Press and hold <CANCEL> for 2 seconds. Press <MENU> function button, select <FAST COOK> , press and hold <START>. Let it cook. 
长按2秒《CANCEL 取消》键,按《MENU 功能》 键,选择《FAST COOK 快煮》功能。长按2秒《START 开始》键。





8. Upon completion, a "beep beep" sound will alert you that the cooking process is completed. If you're cooking rice with the minced meat, wait for 10 minutes before opening the lid. 
设定功能完成后,饭锅会发出 “啲”“啲” 的声音,提示工作完成,自动进入保温状态。

9. At this point, the rice and the minced meat are ready to serve. If you would like to have more gravy, add some hot water to the minced meat, press and hold <CANCEL> for 2 seconds. Press <MENU> function button, select <STEAM> function, press and hold the <START> button for 2 seconds. Bring to a boil, the gravy would thicken and it's ready to serve with rice. Note: Stir in corn starch solution for glossy and thick gravy.

Cute Bear Shortbread Cookies 可爱小熊牛油酥饼



A simple shortbread recipe that is very popular and well loved by my readers. This time, I made into cute little bears for my son to bring to school for afternoon snacks.

Ingredients:
材料

200g Salted Butter (softened) 牛油 200克 (有盐的,软化)

100g Icing Sugar 糖粉 100克

1/4 tsp Vanilla Extract 香草精 1/4 小匙

300g All Purpose Flour 中筋面粉 300克

Method: 步骤

1. Cream butter and icing sugar. Beat in vanilla extract. Gradually beat in flour (low speed, KitchenAid speed 1) until all ingredients comes together. 
把牛油和糖粉打至奶白色,加入香草精,慢慢加入面粉,混合均匀。


2. Cover the dough with cling wrap, keep in the fridge for 30 minutes.
用保鲜纸把面团包好,放冰箱冷藏半小时。






3. Remove the dough from the fridge, roll out the dough and cut out with a bear shape cookie cutters.

Transfer the shaped dough onto a lined baking tray. 
取出面团,造型后摆放在烤盘上。(烤盘必须铺上油纸)







4. Bake in a preheated oven 160'C for 15 minutes.
