What I love about this breakfast is that it looks pretty awesome but doesn't take all day to make. In less than 15 minutes, you can bring a tasty, wholesome breakfast to the table.
Ingredients I used for a single serving:

2 Eggs
1 tbsp Mayonnaise
2pcs Smoked Salmon
1 slice Cheese
2 slices of Sourdough Bread/ Artisan Bread, click here for easy no-knead Artisan bread recipe
Seasonings: Salt & Pepper
Butter or Oil for cooking
Method:
1. In a bowl, beat the eggs with salt, pepper and mayonnaise until fluffy.
2. Heat butter/ oil in a non-stick pan, cook the egg and set aside.
3. Toast both sides of the bread in the same pan. Add cheese, cooked egg and smoked salmon on the toasted bread. Top it with another toasted bread and serve right away.
