Peanut & Lotus Root Pork Ribs Soup 莲藕花生排骨汤-增强免疫力,补血养颜


This is the soup I have been drinking since I was a small girl, it's one of my childhood favourite soups. The combination of lotus root with pork ribs and peanuts is a classic Cantonese-style soup that is nutritious and nourishing which helps boost the body's immunity.

Ingredients: (Yield 2-3 servings)

250g Pork Ribs

2 sections Lotus Roots (peeled and cut into chunks)

Handful of Peanuts (soaked and drained)

1 Dried Fig (US)

5 Seedless Red Dates

3-4 Yu Zhu 玉竹

1 Dried Cuttlefish/ Squid (Optional)

Some salt to taste

Method:

1. Rinse the ribs with hot boiling water. Transfer to a pot. Add in the rest of the ingredients except salt.



2. Add 2L hot water and bring to boil. Cook with high heat for 30 minutes. Reduce heat and simmer for 60 minutes.

3. Add salt to taste, cook another 30 minutes. Serve warm. Note: This soup can be cooked on the stove or using a pressure cooker.
