Lotus Root & Black Beans Pork Ribs Soup 莲藕黑豆排骨汤-营养丰富,有益心血管,降血压,降胆固醇



This is how I introduced black turtle beans to my son. Added handful of black beans in lotus soup. The taste is superb, soup is sweet and most important is the health benefit of this magic beans! Love it!



I use this...


Ingredients: (Yield 2-3 servings)



250g Pork Ribs

2 sections Lotus Roots (peeled and cut into chunks)

Handful of Black Turtle Beans (soaked and drain)




2 Dried Fig (US)

5 Seedless Red Dates

2-3 Yu Zhu 玉竹

Some salt to taste

Method:

1. Rinse the ribs with hot boiling water. Transfer to a pot. Add in the rest of the ingredients except salt.





2. Add 2L hot water, bring to boil. Cook with high heat for 30 minutes. Reduce heat and simmer for 60 minutes.

3. Add salt to taste, cook another 30 minutes. Serve warm.
