Pandan Waffle 斑斓格子松饼




Since I bought my waffle maker, I love making waffles on weekends. These Pandan waffles are fragrant and taste really good, easy to make, although not so quick. My son and I enjoy having it for breakfast!

Ingredients:

(A)

125g All Purpose Flour/ Plain Flour 

1.5 tsp Corn Flour

60g Sugar

1/4 tsp Salt

1/2 tsp Baking Soda

1 tsp Baking Powder


(B)

1 Egg Yolk

40g Coconut Milk (canned/ fresh)

82g Pandan Juice (blend some pandan leaves with water, extract the juice)

60g Milk

30ml Organic Coconut Oil or any neutral flavour cooking oil 

(C)

1 Egg White
I made 2-flavour waffles for breakfast, plain and Pandan waffles using this recipe.

Method:

1. Sift (A). 

2. Mix together (B).

3. Use a whisk, beat (C) until stiff peak.


4. Gradually add (B) to (A), stir to mix until there's no more lumps. Do not over-mix the batter.

5. Fold in (C) in 2 batches until well combined.

6.
