Deep Fried Curry Fish Fillet 酥炸咖喱粉鱼片



An aromatic and tasty deep fried fish fillets flavoured with curry powder. Crispy and delicious! 




Ingredients:
材料

230g Fish Slices 无骨鱼肉 230克,切片


(A)

1 + 1/2 tsp Curry Powder 咖喱粉 1 + 1/2 小匙

1 tsp Sesame Oil 麻油 1小匙

1/2 tsp Corn Flour 玉米粉 1/2小匙

1/4 tsp Salt 盐 1/4 小匙

1/2 tsp Onion Powder 1/2 洋葱粉 1/2 小匙


(B)

1/2 cup All Purpose Flour 中筋面粉 1/2 杯

1 tsp Baking Powder 发粉 1 小匙

1 tbsp Potato Flour 薯粉 1 汤匙

1/4 tsp Salt 盐 1/4 小匙

A dash of Turmeric Powder 黄姜粉 少许


(C)

1/2 tbsp Sesame Oil 麻油 1/2 汤匙

1/4 + 1/8 cup Cold Water 冷水 1/4 + 1/8 杯




Some oil for frying 油 适量

Method:
步骤

1. Clean and dry fish fillet, sliced. Add in (A) and mix well. Cover and let marinate for 15 minutes. 
鱼肉抹干,加入 (A)拌均。盖上,放冰箱腌15分钟。




2. Heat up oil to 160'C. In a bowl, sift in (B). Add in (C), mix well.
烧热油至160度。将(B)过筛,加入(C),拌均。


3. Coat fish fillet in batter.
鱼肉沾上面糊。


I cooked this dish using Song Cho stainless steel wok, 
a multiply stainless steel wok without chemical coating, it's safe to use in any cooking including deep-frying.

4. Deep fry until golden brown. Remove and drain the excess oil. Serve right away.
