Fluffy Sweet Potato Pancakes 番薯/地瓜松饼


An excellent source of vitamin A, B6 and dietary fibre, sweet potatoes are a serious nutritional powerhouse. This pancake recipe that I'm sharing here is made with nutrient-packed sweet potatoes. 

These sweet potato pancakes taste absolutely delicious and they are very easy to make, cook quickly and reheat well. You can make these using fresh sweet potatoes or sweet potato powder. It's a perfect low-profile way to sneak some root veggies into the kid's breakfast. ;)

These Sweet Potato Pancakes are made using sweet potato powder by mixing the sweet potato powder and water to form a smooth paste before adding it to the pancake batter.

I print the Pooh Bear pictures on the pancake using Hot Stamp Tool.

Ingredients: Yield 8 pancakes

110g Sweet Potato Puree or use 30g Sweet Potato Powder + 
80ml Water

215g Fresh Milk

1 Egg

100g Self Raising Flour or use All Purpose Flour + 2 tsp Baking Powder

1/4 tsp Salt

Optional: You may omit these if making for young children

2 tbsp Castor Sugar 

1/2 tsp Vanilla Extract

1/2 tsp Ground Cinnamon

To prepare the sweet potato puree:  steam & blend or mash the cooked sweet potatoes through a strainer. It can be prepared ahead of time.

Method:

1. In a bowl, lightly whisk together the egg, sweet potato puree,
 fresh milk, and vanilla extract, if using.

2. Sift in the rest of the ingredients and mix well.



3. Lightly grease a nonstick pan with a few drops of oil, use a kitchen towel to wipe off excess oil. Heat the pan over medium heat. Scoop and pour the batter onto the pan, using approximately 1/4 cup for each pancake. 



4. Flip the pancake when starts to bubble. Brown both sides, repeat for the rest and serve warm with your favourite toppings.
Note: the moisture of the sweet potatoes may vary, do adjust the amount of liquid and flour accordingly.
