Pikachu Breakfast Cheese Sandwich 皮卡丘芝士吐司



Bread Based Pokemon Theme Food Art - Pikachu Breakfast Cheese Sandwich made using homemade Japanese soft bread, cheese and seaweed. 








Term 3 school holiday just started, this term break may not be a relaxing one because the semestral assessment 2 is coming up right after the school break. Yeah, sounds like I'm a typical Singaporean mom, but I'm not! :D It's the homework that's bothering me! Believe it or not, I have to spend 3 days 2 nights to get my boy to complete one homework. 

While waiting for the boy to "start" doing his homework, I made this for him. I know this may looks complicated to you, but it wasn't that hard with the help of a cutter.

I baked some bread the day before, a tall and fluffy bread. The bread was so soft that there's no need to reheat or toast, no cooking in the morning and that's allowed me to spend some time in food decorating.

I used Pikachu Cookie Cutter to cut out the "body", used a small knife to trim the shape of the "lightning tail".

Although it wasn't the most perfect one but I am happy with it. The boy was surprised when he saw it and for the first time, he said the Pikachu is too cute to be eaten. :)


That's when the boy said the food is too cute to be eaten LOL..

However, he finished eating everything on his plate (except the greens). Fruity Moist Chocolate Cake Canape


August 5, 2017

I was invited to attend a Canape Party jointly organised by Drool Cook Club and SHC. It was a potluck tea party. All invited guests are required to bring some Canape for tasting, 35 sets this round. 

Preparing food for a party, it is important to make sure that the food are colourful, vibrant, attractive and exciting to eat. Recently I am so in love with this moist chocolate cake filled with blueberry cream.....




....... so I have decided to transform it into Canape and bring to the party.

Cute Bear Onigiri Served In Homemade Japanese Curry




Cute Bear Onigiri served in homemade Japanese curry. Loved by both adults and kids. Looks good, taste delicious!




This was the part 2 of my Panda Onigiri that I made the day before. After my boy happily finished eating his Panda Onigiri lunch, he asked if I can make another one for him. Of course I won't say no, if he's able to tell me what theme or characters he wants. 

And, he told me he wants a bear and curry. Oh well, I knew it! He will sure request for Japanese curry if I ask him "what's for lunch?"

Here are some quick notes of how I prepare this Cute Bear Onigiri served in homemade Japanese Curry:

1. First, cook the curry! Click here for Homemade Japanese Curry recipe. This recipe is simple, quick and best of all, it's non spicy and nutritious. Kids loves this! it's so delicious to pair with rice.


2. Cook the rice and side dishes:


Side dishes: Blanched broccoli, Pan Seared Prawns,
Snow Peas and Tamagoyaki aka Japanese Rolled Omelette. 



Blanched broccoli: Boil some water, seasoned with salt, blanched the broccoli.



Pan seared prawns: Seasoned with salt, pepper, sake and sesame oil, pan seared.

3. Assemble and serve. :)

Cute Panda Onigiri Served With Salmon & Greens




It's been a while I did not make onigiri for my son. Well, as you may know, I only do food art when I am in the mood and most of the time, it's that last minute flashes of inspiration. As you can see in this picture, the rice that I used was Jasmine rice, not the usual short grain rice that I use to make onigiri = unplanned! :)







This was a simple and quick one as I did not prepare anything in advance. Just pan fried the salmon seasoned with salt and pepper, blanched broccoli, saute french beans and ham omelette. You know what, the boy finished eating everything and keep saying "Thank you mommy, I love it. Thanks for your effort". :) <3 




Here are some quick notes of how I made this Cute Panda Onigiri served with Salmon & Greens:

1. Boil a pot of water, season with salt, blanch the broccoli. Set aside.

2. Seasoned salmon with salt, pepper and olive oil, pan fried until just cooked.

3. Saute french beans, season with salt and pepper.

4. Prepare ham omelette and assemble.


I cooked everything (except broccoli) in the same pan.
That's what I mean quick and simple!

Traditional Baked Egg Cake (Cocoa-Vanilla Flavour) 双色鸡蛋糕(巧克力香草)



Ever since I shared my Traditional Baked Egg Cake 老式鸡蛋糕 recipe, it was a hit and many of my readers have tried and succeeded. They love the soft and spongy texture of these cakes, fragrant and delicious. 


I have received some requests asking for "other flavours baked egg cakes". Sharing here, the bicolour version. My son said the cocoa-vanilla flavour smells and taste even better, hope you'll love it too... ;)

Recipe updated on 25 October, 2017, added 1.5 tsp of milk to mix with the cocoa powder, easier to fold in batter and the cake turned out more moist and softer. 

Ingredients: Yield 6-8 servings (depends on the size)
材料

2 Eggs 鸡蛋 2粒

70g Castor Sugar 细砂糖 70克

Pinch of Salt 盐 少许

70g Cake Flour  低粉 70克

1/2 tsp Baking Powder 发粉 1/2 小匙

1 tsp Vanilla Extract 香草精 1小匙

18g Oil 油 18克

1 tbsp Milk 牛奶 1汤匙



Cocoa mixture 可可面糊:

2 tsp Cocoa Powder 可可粉 2小匙
(mix with 1 1/2 tsp milk, 加入1 1/2小匙牛奶拌均)

Method: 步骤

1. In a mixer bowl, add eggs, castor sugar and salt. It is fine to use cold egg.
将鸡蛋,盐和糖放入碗里。鸡蛋可以用冷的。


2. Beat until light, fluffy (start with high speed > medium > low). Add in vanilla extract. Beat with low speed to combined. 
打至泛白,加入香草精,拌均。



3. Sift in flour and baking powder. Use a spatula, fold to combine. Add in oil and milk, mix well with a spatula. Do not over mix the batter. 
Prepare chocolate batter: Scoop out 70g batter, add in cocoa mixture, mix well. 
低粉和发粉过筛加入,用刮刀拌均至无颗粒。加入油和牛奶,拌均。不要过度搅拌。
巧克力面糊:取出70克面糊,加入可可面糊,拌均。



4. Prepare 6 or 8 muffin cups, pour in the plain batter evenly follow by the chocolate batter. Use a chopstick, gently stir to make the swirl. Gently tap the baking tray on the worktop to release any trapped air.
把原味面糊分别倒入杯子里,接着把巧克力面糊加入,用筷子轻轻搅圈。把烤盘轻轻在桌面敲2-3下。







5. Baked in a preheated oven 140'C for 10 minutes. Reset temperature to 150'C, bake for 22-25 minutes or until golden brown. Let it cool on the rack and it's ready.

Lotus Root Black Eyed Pea Pig Tail Soup 莲藕眉豆猪尾汤-补肾壮腰,抗老化,健脾补虚补血,祛湿消肿


Lotus Root Black Eyed Pea Pig Tail Soup - A nutritious and nourishing soup that is naturally sweetened, taste really good and it's suitable for both adults and kids. 

莲藕眉豆猪尾汤-补肾壮腰,抗老化,健脾补虚补血,祛湿消肿。这汤的味道清甜好喝,男女老少都适合。


Ingredients:
材料

370g Pig Tail, cut into chucks 猪尾巴 370克,切块

45g Black Eyed Pea 眉豆 45克

260g Lotus Root, peeled and cut into chunks 莲藕 260克,去皮切块

4 Seedless Red Dates 无籽红枣 4粒

2 litre Hot Water 热水 2 公升


Some sea salt, add to taste 盐 适量

Method: 步骤

1. Rinse pig tails with hot boiling water. Soak in the hot water for 5 minutes. Drain and transfer the pig tail into a pot. Put all ingredients (except salt) in a pot. Bring to a boil.
猪尾巴洗净,用热水烫过,浸泡5分钟,水倒掉。把所有材料(除了盐)放进锅里,煮滚/烧开。








2. Cook with high heat for 30 minutes. Reduce heat and continue to cook for 60 minutes. 
大火煮30分钟,转小火煮60分钟。

3. Add salt to taste. Cook another 30 minutes. Serve warm.

Coconut Milk Jelly 椰奶果冻


A simple and gorgeous Coconut Milk Jelly 椰奶果冻 - sweet, chewy and refreshing. Ideal to serve this on a party dessert table or as anytime snacks on a hot day. ;)





Ingredients: 
材料

135g Thick Coconut Milk 浓椰奶 135克

300g Fresh Milk 鲜奶 300克

530g Water 水 530克

10g (1pkt) Konnyaku Jelly Powder 蒟蒻果冻粉 10克(看下图)

200g Sugar 细砂糖 200克

5 Pandan Leaves 班兰叶 5片

1. In a bowl, mix sugar and Konnyaku jelly powder. 
细砂糖和蒟蒻果冻粉混合均匀。

2. Heat up water, coconut milk, fresh milk and pandan leaves in a pot. Gradually stir in (1).
将水,椰奶,鲜奶和班兰叶加入锅里,加热。慢慢加入(1),不断搅拌。





3. Continue stirring. Bring to a boil, turn off heat and constantly stir till the jelly powder is fully dissolve.
继续搅拌,加热至煮滚/烧开。熄火,继续搅拌至果冻粉完全溶解。

4. Discard pandan leaves. Pour the mixture into jelly mould/ cups/ tray. Let it cool, cover and keep in the refrigerator for 4 hours. Serve chilled.

Minions/ Despicable Me Theme Rainbow Birthday Cake 小黄人彩虹生日蛋糕制作过程




Happy 8th Birthday to my baby Louis!

This year, the boy didn't want to have birthday party with friends, he wanted a quiet and simple celebration at home. I have made 2 birthday cakes for him, one for Lunar birthday and one on the actual day.


This was the Minions Birthday Swiss Roll that I made for his Lunar birthday.

The cake on the actual day, it's definitely a complicated and more time consuming compared to the swiss roll. He wished to have a Minions theme rainbow birthday cake.

Rainbow cake is time consuming because each layer is one cake. Theoretically I have to bake 7 cakes to achieve the 7 rainbow colours. However, accident always happened when I am short of time. Yes, I accidentally broke 3 cakes and no, I'm not going to tell you the details, so don't ask. :D 




To achieve the beautiful 7 colours rainbow cake, I have baked 10 cakes using my limited cake tin and limited oven space. I have baked 4 rounds to complete the baking.




In the past, I only make fondant cake for his birthday. This year, I used fresh cream frosting and fondant figurines. Does it looks plain to you? Well actually, there's no need much exterior decoration on a rainbow cake because the surprise is inside the cake. 






I want it to be simple and nice, just 3 Minions with a Felonious Gru shadow, a plain white frosting rainbow cake with the birthday boy's name on top. I am glad that it turned out fabulously beautiful...
