Blueberry Toppings

Pandan Blueberry Cake using this topping. This cake was cut on the same day it was made.
The cake with this blueberry topping is best to chill overnight to set before cut the cake.

Blueberry Toppings:

1 cup Frozen Blueberries

2 tbsp Sugar

1 tbsp Water


Method: 

1. Put all ingredients in a saucepan, simmer with low heat. 

2. When the sugar is fully dissolved and blueberries are softened, remove from heat and strain the mixture. 




3. Return the mixture to the saucepan, simmer with low heat. Mix (1/2 tbsp water + 1 tsp corn flour) in a bowl, stir in and when the mixture is thicken, remove from heat. Let it cool and keep in the fridge for later use.
