A nourishing soup that not only warms your soul but also offers remarkable health benefits. This heartwarming soup is known for its ability to clear away body heat and detoxify, while also strengthening the spleen and removing dampness.
My mom normally cook this with rock sugar instead of pork ribs. My little picky eater does not like the sweet version, so I customised this savoury version for him and he likes it! :)
Ingredients: (Yield 2-3 servings)
250g Pork Ribs
1 Thick Slice Winter Melon (cut into big chunks)
Handful of Barley
1 Dried Fig (large US fig)
5-6 Seedless Red Dates
2 Dried Scallops
Handful of Wolfberries (optional)
Some salt to taste

Method:
1. Rinse the ribs with hot water. Transfer the ribs into a pot.
2. Add in all the ingredients except salt and wolfberries. Add 2 litres of hot water. Bring to a boil. Cook with med-high heat for 30 minutes.
3. Reduce heat to medium-low, simmer for 60 minutes. Add salt to taste, cook another 20 minutes. Add wolfberries (if using), cook another 10 minutes. Serve warm.
