Winter Melon Dried Scallops Chicken Soup - Helps to detoxify and promotes digestion 冬瓜瑶柱鸡汤 - 养胃生津、清降胃火,抗衰老

Simple ingredients, good for health. This makes a perfect nourishing soup on a hot day. 


Ingredients: (yield 2-3 servings)

1 Kampung Chicken Bones 甘榜鸡壳 1 个

3 Dried Scallops (Soaked and drain) 干瑶柱  3 粒, 稍微浸泡软化,滤干

1 Dried Figs from US 无花果(美国的)1粒

1 slice of 2" thick Winter Melon (Peeled and cut into big chunks) 冬瓜 1 片,大概两寸厚,去皮,切块

5 Seedless Red Dates 红枣 5粒

1 slice Ginger 姜 1片

Some Sea Salt to taste 海盐 适量

Method: 步骤

1. Rinse the chicken bones with hot boiling water. Transfer to a pot.
用热水把鸡壳烫过,水倒掉,鸡壳放进汤锅里。

2. Add in all the ingredients, except salt. Add 2 litre of hot water. Bring to boil. Cook with med-high heat for 30 minutes.
把所有材料(除了盐)放进汤锅里。加入2 公升热水,煮滚。大火煲30分钟。

3. Reduce heat to low, simmer for 60 minutes. Add salt to taste, cook another 30 minutes. Serve warm.
